In climates where the ground freezes, prepare elephant ears before a hard freeze. For plants growing in the ground, cut back the foliage, dig the underground corm or tuberous structure, dry it briefly, and store it in a dark, frost-free, ventilated place. Container-grown elephant ears can usually be moved indoors or stored in their pots with very little water.

The name “elephant ear” covers several genera, including Colocasia, Alocasia, and Xanthosoma. Their cold tolerance varies, so identify the genus or cultivar if possible rather than assuming every elephant ear will survive outdoors.

When should you prepare elephant ears for winter?

Use the weather forecast for your specific planting location rather than relying on a fixed calendar date. Plan to act before a hard freeze is expected.

In many gardens, the best timing is after a light frost has wilted or killed the leaves but before temperatures drop low enough to freeze the underground storage structure. If a damaging freeze is imminent, prepare the plant before the first frost instead of waiting for the foliage to die back naturally.

A light frost may damage the leaves without immediately destroying the corm or tuberous roots. A hard freeze, however, can turn the underground structure soft and mushy, making winter storage—and spring recovery—unlikely.

Some elephant ears may survive outdoors in warm regions or in a particularly protected site, but this is dependent on the plant, cultivar, soil drainage, and local winter temperatures. In a freezing climate, indoor protection or storage is the safer choice.

Choose the right winter method

Where the plant is growing Recommended method What to know
In the ground Dig and store the underground structure This is usually the most reliable option in regions with freezing winters.
In a container Move the entire pot indoors or to a frost-free storage area You can avoid digging, but dormant plants must not remain constantly wet.
Warm, frost-free climate Potentially leave outdoors Success depends on the genus, cultivar, exposure, and local winter conditions; do not assume all elephant ears are hardy.

Method 1: Dig and store elephant ears from the garden

1. Cut back the foliage

After the leaves have wilted from cold or have been killed by a light frost, cut away most of the leaves and stems. Leave approximately 4 to 6 inches of above-ground stem attached to the underground structure.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Remove the cut foliage from the corm or tuberous roots. Healthy foliage can generally be composted, but discard material showing obvious disease rather than adding it to a compost pile that may be used around plants.

2. Dig carefully

Use a spade or garden fork several inches away from the plant’s base. Dig around the plant rather than plunging the tool directly beside the stem, where it is more likely to cut the underground structure.

Lift the plant gently and shake off loose soil. Avoid aggressive scrubbing, and do not wash the corm or tuberous roots before storage. Extra water trapped around cut surfaces can increase the chance of rot.

If the plant has produced offsets or several connected pieces, handle them carefully and keep sound pieces together until they have dried. Discard anything that is already soft, leaking, or badly damaged.

3. Dry the surface before packing

Place the dug material in a warm, dry location for several days. This short curing period allows the outer surface and cut neck to dry.

The goal is to dry the surface—not to shrivel the plant completely. Good air circulation is helpful, but do not leave the pieces outdoors where rain, dew, or freezing temperatures can reach them.

4. Pack it in a breathable container

After the surface has dried, place the elephant-ear structures in a ventilated box or another container that is not sealed airtight. Barely cover them with dry peat moss or dry potting medium. The packing material should protect the pieces and reduce light exposure without holding excess moisture against them.

A ventilated bulb-storage container is useful if you are storing several plants, but ventilation matters more than a particular brand or container style. A brown paper bag can also block light, especially for a container-grown plant, provided it is not being used as a damp, airtight enclosure.

If you are comparing supplies, a ventilated bulb storage container or breathable bulb storage bag can support this step. Neither is essential: a clean, dry, ventilated box can work as well.

Do not pack freshly dug, wet material tightly. Avoid sealing the container in plastic, since trapped condensation can encourage mold and rot. If using peat moss or potting medium, choose material that is dry or only minimally moist—not wet.

5. Label every variety

Label each cultivar before putting it away. This is especially important when storing multiple elephant ears, because dormant pieces may look very similar in winter.

Write the plant’s name, planting location, and—if useful—the flowerpot size or preferred planting position on a durable marker. Weatherproof plant labels are a simple way to keep cultivars organized through several months of storage.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

6. Store it in the right location

Keep the packed elephant ears in a dark, frost-free location. A basement, protected garage, utility room, or similar area may work if it does not freeze and does not remain damp.

Many tender summer bulbs are stored around 45–55°F, but elephant ears can prefer warmer conditions, potentially extending into the 70°F range. The exact ideal temperature varies with the type of elephant ear and storage conditions. The essential requirements are protection from freezing, avoidance of persistent moisture, and enough ventilation to limit condensation.

Do not choose a location beneath a leaking pipe, beside a frequently wet exterior door, or anywhere condensation regularly collects. A cold but damp area can be more damaging than a moderately warmer, dry one.

How to check stored elephant ears during winter

Inspect the stored plants periodically rather than putting them away and forgetting them until spring.

  • Soft or mushy: Separate and discard pieces that are clearly rotting.
  • Spreading mold: Remove affected material and check neighboring pieces. A small superficial issue should not be allowed to spread through the entire box.
  • Firm but slightly shriveled: The plant may simply be losing moisture. Avoid responding with heavy watering.
  • Very dry and severely shriveled: Apply only a small amount of moisture to the packing material, if needed, and improve the balance between drying and ventilation.

The correct balance is dry enough to prevent rot but not so dry that the storage structure desiccates. Excess moisture is generally the more dangerous mistake.

Method 2: Overwinter a container-grown elephant ear

Container-grown plants are often easiest to overwinter without removing them from their pots.

  1. Cut back the foliage, leaving a few inches of stem.
  2. Inspect the plant and pot for insects, mites, and signs of disease.
  3. Move the entire container to an indoor or protected location before a hard freeze.
  4. Keep it in a cool, dark, frost-free area if you want it to become dormant.
  5. During dormancy, water only when the potting medium is completely dry.

Do not keep a dormant elephant ear sitting in wet soil. The combination of low light, low growth, and frequent watering is a common cause of root and corm rot.

Keeping a container plant actively growing indoors

You can also bring the plant indoors and keep it actively growing. This requires considerably more space and care than dormant storage. Provide abundant light, adequate room for the large leaves, and more humidity than many homes naturally provide.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Before bringing it indoors, inspect both sides of the leaves, stems, soil surface, and drainage holes for insects or mites. Clean up dead foliage and isolate the plant from houseplants if you find pests. Move it indoors gradually when possible rather than transferring it abruptly from full outdoor sun, wind, and cool temperatures to a dim, dry room.

Starting elephant ears again in spring

To get an earlier start, pot stored pieces approximately four to six weeks before your local last frost date.

  1. Choose a clean container with drainage holes.
  2. Use a nutrient-rich, well-draining soilless mix.
  3. Plant the stored structure according to the cultivar’s size and planting instructions, positioning it so new growth can emerge without being buried excessively deeply.
  4. Place the pot in a warm, sunny location.
  5. Water carefully so the mix is evenly supported but not persistently saturated.

If natural light is weak, an LED grow light for seed starting can provide supplemental light while the plant reestablishes. A well-draining soilless potting mix is also useful for reducing the risk of waterlogged roots during indoor starting. Both are optional aids, not requirements for every home.

Once growth begins, allow the plant time to develop before moving it outdoors. Do not transfer actively growing elephant ears directly from a protected indoor location into harsh sun, wind, or cold nights. Gradually acclimate the plant by increasing outdoor exposure over several days.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

As a general guide, wait until nighttime temperatures remain above approximately 50°F, while also considering your local forecast and the requirements of the specific genus or cultivar. A late cold snap can damage tender new growth even after the calendar says spring has arrived.

FEED GARDEN 5 Gallon Grow Bags 4 Pack 300G Thickened Non-Woven Fabric Pots
  • 300G THICKENED FABRIC, BUILT FOR MULTIPLE SEASONS — 300 g/m² non-woven fabric (vs. 200 g/m² or thinner on entry-level bags), so the walls hold their shape when filled and resist tearing at the seams. Each empty bag weighs 4 oz — 16 oz for the 4-pack. Fold flat and store indoors over winter and they are built to be replanted season after season 3.
  • AIR-PRUNED ROOTS, NO ROOT ROT — Water drains through the whole fabric wall instead of pooling at one drainage hole, and air reaches the root ball from every side. Roots stop at the fabric edge and branch out instead of circling the pot, which is why plants in fabric bags build a denser feeder-root system than plants in plastic pots. Indoors, set the bags on a saucer or tray — the fabric drains from the base.
  • DOUBLE-STITCHED HANDLES THAT DON'T RIP — Two woven webbing straps are sewn to the bag wall with a double-stitched box-X reinforcement (not cut from the same fabric as the bag body), tested to carry 180 LB. A filled 5-gallon bag of damp soil runs roughly 40–50 lbs, so the handles are the part that decides whether you can chase the sun across a patio — or not.Equipped with strong reinforced handles, easy to move the plants around your garden, patio or balcony, even when the bag is filled with soil.
  • SIZED FOR HERBS, GREENS, STRAWBERRIES & FLOWERS — 12.2" across and 10.2" deep is the right root room for basil, mint, cilantro, rosemary, lettuce, spinach, strawberries, marigolds and compact peppers. Growing full-size tomatoes, potatoes or squash? Size up to our 7, 10 or 15 gallon bags instead — those crops need more depth than a 5-gallon bag can give.
  • FOLDS FLAT — STORE THE WHOLE SET IN A DRAWER — Empty the soil, fold each bag flat, and all 4 stack down to about 1.96inch — they slide into a cupboard gap or under a shelf instead of taking up a corner of the balcony all winter. Rigid plastic pots can't do this, which is what makes fabric bags practical for apartments and small patios.

Common mistakes that cause winter losses

Waiting for a hard freeze

Waiting until the plant has been exposed to a hard freeze can damage the underground structure beyond recovery. A light frost may be a useful signal to cut back and dig, but do not treat a hard freeze as the preparation deadline.

Storing the plant wet

Washing dug pieces, packing them before their cut surfaces have dried, or surrounding them with wet medium raises the risk of rot. Let the surface dry briefly and use only minimal moisture when necessary.

Using an airtight container

An airtight plastic box or tightly sealed bag can trap condensation. Storage containers should allow some ventilation. A paper bag may block light, but it should not become a damp, sealed environment.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Overwatering a dormant pot

A dormant container plant uses little water. Water only when the potting medium is completely dry, and make sure excess water can drain freely.

Failing to identify cultivars

Colocasia, Alocasia, and Xanthosoma do not necessarily have identical cold tolerance or storage behavior. If you know the cultivar, record it before the leaves disappear. If you do not know it, take a photograph and note the plant’s growing conditions for future reference.

Quick troubleshooting guide

The stored corm is soft or mushy

Remove it from the storage box immediately. Separate it from firm pieces and discard it if the softness is extensive or the tissue smells rotten. Check whether the box, packing material, or storage room is too damp. Do not add water to a rotting piece.

The stored piece is wrinkled but still firm

It may be drying out rather than rotting. Check the storage temperature and humidity, and add only a small amount of moisture to the surrounding packing medium if the structure is becoming excessively shriveled. Avoid soaking it.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Mold is appearing on the surface

Remove affected pieces and inspect the rest. Improve ventilation and reduce moisture. Mold accompanied by softness or decay is a stronger indication that the piece should be discarded.

The potted plant is losing leaves indoors

It may be entering dormancy, especially if light levels have fallen. Move it to a frost-free location, reduce watering, and avoid keeping the soil constantly damp. If you intend to keep it actively growing, provide much brighter light and inspect carefully for pests.

Nothing is growing after spring potting

Check that the stored structure is still firm, the pot drains properly, and the location is warm enough. Elephant ears may take time to restart. A cold, wet mix is more problematic than a short delay in leaf emergence.

Simple winter-preparation checklist

  • Identify the genus or cultivar if possible.
  • Check the local forecast and prepare before a hard freeze.
  • Cut back the foliage after a light frost or before an imminent damaging freeze.
  • Leave about 4–6 inches of stem on dug plants.
  • Dig well away from the base and lift carefully.
  • Shake off loose soil; do not wash the storage structure.
  • Dry the surface for several days in a warm, dry place.
  • Pack in a ventilated, non-airtight container with barely enough dry medium to cover.
  • Label different cultivars.
  • Store in darkness, protected from freezing and persistent dampness.
  • Inspect periodically and remove rotting pieces.
  • Pot stored pieces four to six weeks before the local last frost if an early start is wanted.
  • Harden actively growing plants gradually before returning them outdoors.

Frequently Asked Questions

Can elephant ears stay in the ground over winter?

Sometimes, but only where the plant and local conditions provide adequate protection from freezing. In regions with hard freezes, digging and storing the underground structure is the safer method. A protected site does not guarantee survival for every Colocasia, Alocasia, or Xanthosoma cultivar.

Should elephant-ear bulbs be washed before storage?

No. Shake off loose soil, but avoid washing the underground structure before storage. Excess surface moisture can increase the risk of rot, especially around cut areas.

How often should dormant elephant ears be watered?

Dug pieces should generally remain dry, with only minimal moisture added if they are becoming excessively shriveled. For a dormant plant left in its pot, water only when the potting medium is completely dry.

What temperature is best for storing elephant ears?

Keep them frost-free in a dark, dry, ventilated location. Many tender summer bulbs are stored around 45–55°F, but elephant ears may prefer warmer conditions, potentially into the 70s°F. Avoid freezing temperatures and persistently damp storage.

The Bottom Line

Prepare elephant ears before a hard freeze, not after it. Dig in-ground plants carefully, let them dry briefly, pack them in a ventilated container with minimal dry medium, and keep them dark, frost-free, and mostly dry. For container plants, move the entire pot to shelter and sharply reduce watering during dormancy. Because elephant-ear hardiness varies by genus, cultivar, and climate, use the plant’s identity and your local forecast to fine-tune the method.
