One preventable way to ruin a cooked turkey is to keep it hot for too long: USDA says holding it at 140 °F or above for more than a couple of hours can dry it out and damage its quality. That is a specific quality warning, not the only way a turkey can turn out badly—and it is separate from the temperature checks needed to make sure the bird is safe to eat.
Why holding a finished turkey too long can dry it out
If your turkey finishes well before dinner, keeping it hot indefinitely is not a quality-preserving solution. USDA FSIS advises that holding a properly cooked turkey at an internal temperature of 140 °F or above for more than a couple of hours will dry it out and ruin its quality. See the agency’s guidance for a turkey that is done too soon.

How to tell when turkey is done
Use a food thermometer rather than relying on cooking time, color, or appearance. USDA’s safe minimum is 165 °F, measured at the innermost part of the thigh and wing and the thickest part of the breast. Check the readings with a food thermometer before serving; USDA’s instructions are in Turkey Basics: Safe Cooking.

Roasting times are estimates, not proof of doneness. USDA’s approximate chart assumes a 325 °F oven and a fresh or thawed turkey, and timing can vary with the bird’s condition, stuffing, oven accuracy, pan material and size, foil, oven bag, and rack position. Use the thermometer readings—not the estimated schedule—as the decision point.
Stuffed or unstuffed: the safer approach
USDA prefers cooking stuffing separately for optimum safety. If you do stuff the turkey, loosely fill the cavity, cook the bird immediately after stuffing it, and check that the center of the stuffing reaches 165 °F as well as confirming the turkey’s required temperature readings. The instructions are in Turkey Basics: Stuffing.
