How to Grow Ginger From Ginger: A Practical Guide

A fresh piece of ginger with a swelling bud can grow into a plant. Learn how to prepare and plant rhizomes, care for ginger, and harvest it.

Yes—you can grow a ginger plant from a piece of culinary ginger. Ginger grows from an underground stem called a rhizome, so start with a fresh piece that has a visible or swelling growth bud. Grocery-store ginger can work, but its treatment history is uncertain; a nursery or seed supplier is a more reliable source of rhizomes for planting.

Choose ginger with a viable growth bud

Look for a plump, firm rhizome with clearly developed or swelling buds, often called eyes. A slightly shriveled piece may still grow if its buds are swelling. Grocery-store ginger is convenient, but some rhizomes may have been treated to prevent sprouting, and you generally cannot tell from the outside. If you want more predictable planting stock, buy ginger rhizomes intended for planting.

Prepare and plant the rhizome

  1. Cut it into sections. Make pieces about 1 to 1½ inches long, with at least one growth bud on each.
  2. Let the cut surfaces dry. Leave the pieces in a dry place for a few days so the cut surfaces callus. This helps reduce the chance of rot while they sprout.
  3. Plant in warm conditions. Plant outdoors after frost risk has passed and the soil is warming, or start the pieces indoors before the growing season. Set the buds upward in loose, fertile, well-drained soil or potting medium.
  4. Use spacing suited to your method. Virginia Cooperative Extension recommends planting pieces 4–6 inches deep and 6–8 inches apart in a bed. UF/IFAS recommends planting about an inch below the soil and spacing pieces about 15 inches apart. These are source-specific approaches, not interchangeable universal rules; follow the guidance suited to your planting setup.

For propagation before planting, Virginia Cooperative Extension says rhizomes can sprout in darkness without water at 60–86 °F, with 70–78 °F described as optimal. Sprouting may take 50 days or more. The Royal Horticultural Society recommends 25–28 °C (77–82 °F) for planting rhizome pieces in compost; that is a different recommendation and does not guarantee a particular sprouting time.

Choose a garden bed or movable container

Garden bed

Ginger is tropical and frost-sensitive. Plant it outdoors only when frost risk has passed, in a warm spot with partial or filtered light and well-drained soil. In a short-season region, you may need to start it indoors so it has enough time to grow before cold weather.

Container

A container makes it easier to bring ginger indoors before freezing weather. Virginia Cooperative Extension advises a pot at least 12 inches wide for one rhizome piece; Illinois Extension recommends a container at least 15 inches in diameter for its approach. Leave room above the soil to add more as the rhizomes grow upward. Illinois Extension says ginger will not survive outdoors below 30 °F; Virginia Cooperative Extension advises keeping a dormant container above 55 °F.

Care for ginger as it grows

  • Light: Provide warmth and partial or filtered light. Intense sun can brown leaf tips.
  • Water: Keep soil moist during active growth, but do not saturate it. In a container, let the medium dry slightly before watering again. Poor drainage and excess water can cause rhizome rot.
  • Soil and feeding: Use loose, fertile, well-drained soil or container medium. Compost or slow-release fertilizer at planting can support growth.
  • Cover exposed rhizomes: Ginger rhizomes grow upward. If they become visible, add soil around the plant or into the container.

Harvest young or mature ginger

You can harvest ginger young for baby ginger, which has thin skin and does not need peeling. In the method described by Illinois Extension, baby ginger can be harvested after four months of growth; UF/IFAS notes that young ginger can be harvested before flower spikes appear. Mature ginger generally needs a longer season: Virginia Cooperative Extension and Texas A&M AgriLife Extension give a typical range of eight to ten months. Harvest as the tops die back, or before freezing temperatures threaten the plant.

Dig carefully because the rhizomes grow shallowly and are easy to damage. Keep sound pieces for replanting and discard a rotten original “mother” rhizome. Mature ginger develops tougher skin than young ginger.

Store ginger and save planting pieces

Virginia Cooperative Extension and Texas A&M AgriLife Extension state that unpeeled fresh ginger can keep in the refrigerator for up to three weeks or in the freezer for up to six months. For planting stock, Virginia Cooperative Extension also describes storing clean rhizomes in a cool, relatively dry place.
