How to Grow and Care for Stevia (Stevia rebaudiana)

Stevia grows best in sunny, well-drained conditions. Learn when to bring a potted plant inside, how to harvest its leaves, and how to dry them for storage.

Grow stevia in a sunny spot with fertile, well-drained soil, and keep the soil evenly moist without waterlogging it. Stevia rebaudiana is a tender perennial: gardeners in places with freezing winters can grow it in a pot and bring it indoors before frost, or treat it as an annual and replant the following season. Indoors, it may continue growing, but lower light and excess moisture can make winter care challenging.

What stevia needs to grow well

Stevia, also called sweetleaf, is Stevia rebaudiana, a leafy plant grown for its sweet-tasting foliage. It is available as a garden plant and can be grown in a home landscape, according to University of Florida IFAS.

  • Light: Choose full sun where possible. Stevia tolerates partial shade, though a bright location is preferable.
  • Soil: Use fertile, organically rich soil that drains freely. Sandy, well-drained soil is also suitable.
  • Water: Keep the soil moist, but do not let the pot sit in water or keep the roots waterlogged. Poor drainage and overwatering can lead to root problems.

For container growing, use a pot with drainage holes and empty any water that collects in its saucer. That makes it easier to control moisture and move the plant when cold weather approaches.

How to keep a potted stevia through winter

If your winters bring frost, bring the container indoors before the first frost rather than relying on the plant to survive outdoors. UF IFAS lists stevia for USDA hardiness zones 10–11 and recommends moving container plants inside in freezing areas. North Carolina State Extension similarly describes growing it as an annual in North Carolina or bringing it indoors before frost. These are regional recommendations, not a guarantee that every plant will survive winter in every location.

Indoor light and watering

Place the pot in the brightest available window; a south-to-southwest-facing window may provide suitable light. Maryland Extension notes that supplemental grow lighting may be needed if the window does not provide enough. Reduce the risk of overwatering by checking the soil before watering and making sure excess water can drain away. As Maryland Extension’s Home and Garden Information Center put it in a 2023 response, “Stevia tends to like well draining soil and it won’t dry out as much inside.”

What to expect from outdoor overwintering

Stevia can behave differently across climates. Tennessee Gardens reports that it rarely survives Tennessee winters and gives a local estimate of hardiness only to about 15°F. That is a regional observation, not a universal temperature threshold. If you want to keep a particular plant, a movable pot offers more control than leaving it outside.

How to start new plants

North Carolina State Extension lists both seeds and stem cuttings as propagation options. However, an Ask Extension response notes that seed germination can be difficult and recommends starting with seedlings instead. For a home gardener, buying a seedling or taking a cutting from a healthy plant may be more straightforward than depending on seed germination.

To encourage a bushier plant, pinch the growing tips every two to three weeks. If your priority is foliage, pinch off flower buds as they appear; UF IFAS recommends this to support leaf quality.

When and how to harvest stevia leaves

Harvest timing depends partly on the season and the plant’s stage. UF IFAS recommends fall harvest and notes that leaves are sweetest before flowering. North Carolina State Extension places harvest as flowering begins and says stems can be cut about six inches above the ground. A practical approach is to gather mature foliage late in the growing season, before frost, and adjust the timing to your plant’s flowering and local weather rather than treating one calendar date as universal.

  1. Choose healthy stems with mature leaves.
  2. Cut stems for a larger harvest, leaving about six inches above the ground if following North Carolina State Extension’s guidance, or pick individual leaves for smaller amounts.
  3. Use fresh leaves for tea, or dry the harvest for storage.

How to dry and store the leaves

Dry leaves or stems for later use, then store the dried leaves in an airtight container. Illinois Extension describes air drying as an option and also notes that a food dehydrator can be used; a dehydrator is helpful for a larger harvest but is not essential. Keep the storage container sealed and dry so the leaves are ready to crush when needed.

What to expect when using homegrown stevia

Dried, crushed leaves can be used to sweeten tea, and fresh leaves can also be used in drinks. Homegrown stevia is less potent than refined white stevia extract, according to Illinois Extension, so leaf powder should not be treated as a measured, one-for-one substitute for commercial extract. Start with a small amount and adjust to taste.
