For the classic hens and chicks succulent, Sempervivum, the essentials are bright sun, sharply draining soil, and watering only after the soil dries. The common name is also used for other succulents, including some Echeveria and Sedum, so identify your plant before relying on Sempervivum hardiness guidance.
Identify which “hens and chicks” you have
“Hens and chicks” most often refers to Sempervivum, also called houseleek, but it is not a botanical name. Other succulents may be sold under the same common name. Check the plant label or ask the nursery for its botanical name before choosing a site or assuming it will survive your winters. The UF/IFAS guide to succulents notes this broader use of the name.
The care below focuses on Sempervivum, including S. tectorum. Its compact rosettes and offsets make it well suited to rock gardens and shallow containers, provided excess water can drain away.
Choose a sunny spot with sharp drainage
Light and placement
NC State Extension recommends full sun to part sun for Sempervivum. Its plant guidance defines full sun as six or more hours of direct sunlight a day. In hot locations, some afternoon shade can help, and heat tolerance varies among varieties. A rock garden or shallow container can work well if it gets suitable light and does not collect water. Soil and containers
Use a gritty, well-drained growing medium rather than dense soil that stays wet. NC State describes well-drained compost amended with up to 50% sand or other gritty material. Choose a container with drainage holes, and empty any saucer that holds water; the roots should not sit in standing water. A shallow pot is appropriate only if it still drains freely.
Water when the soil has dried
Water thoroughly, then let the soil dry before watering again. There is no single reliable calendar for every plant: the interval changes with weather, season, pot size, and soil. Check the growing medium rather than watering automatically on a fixed weekly schedule.

Persistently soggy soil can cause root rot, and overwatering can cause crown rot. NC State Extension advises: “Overwatering can lead to crown rot, allow plants to dry out between watering.” UF/IFAS also warns that wet conditions can lead to root rot in succulents. If water is lingering, improve drainage and reduce watering rather than trying to compensate with more frequent small amounts.
Understand cold and heat limits
Many Sempervivum are cold hardy, but published ranges depend on the plant identified. NC State Extension lists USDA hardiness zones 3a–8b for S. tectorum and 4a–8b for its broader Sempervivum entry. These are reference ranges, not guarantees for every cultivar, container, or local microclimate. The same extension guidance cautions that some varieties tolerate heat less well, particularly in zone 8 and above. Confirm the identity of your plant and consider both winter lows and summer exposure at your specific site.

Propagate new plants from the chicks
The “hen” is the larger parent rosette; “chicks” are the smaller offsets it produces, often attached by short stems called stolons. To make more plants, separate a healthy offset and replant it in draining soil. Iowa State University Extension includes Sempervivum among succulents that can be propagated from pups or runners that root readily. Division and seed are also listed as propagation options by NC State.
- Choose a healthy, established offset attached to the parent rosette.
- Separate it carefully from the parent, keeping any roots intact when possible.
- Set the offset in gritty, well-drained soil in a pot or garden spot with suitable light.
- Water sparingly and allow the medium to dry between waterings while the plant establishes.

What to do when a rosette flowers
Sempervivum is monocarpic: an individual rosette dies after flowering. That does not necessarily mean the whole planting is dying. The parent may have produced offsets that continue growing; remove the spent rosette if you wish, taking care not to disturb healthy chicks.
