How to Create an Edible Garden With Edimental Plants

Combine edible plants and ornamentals for a garden that offers harvest and visual interest. Plan for sun, seasonal changes, support structures, containers and safe edible flowers.

An edible garden can be both productive and beautiful: combine vegetables, herbs, fruiting plants and edible flowers with ornamental plants, choosing each for its harvest as well as its color, form or fragrance. “Edimental” is a shorthand for edible plants selected partly for their ornamental qualities. Start with the conditions in your garden, then build a planting plan that suits the space and stays attractive as crops change through the season.

How do I plan an edible garden with edimental plants?

Begin by assessing the site rather than choosing plants from a picture. Note how much sun each area receives, how much room is available, where you can water, and how much ongoing care you want to take on. Vegetables generally need full sun for reliable production; too little sun can compromise yields, according to Iowa State University Extension.

  • Map the light: Identify the sunniest beds or containers for crops that need full sun. Match shadier spots only with plants suited to those conditions.
  • Plan for access: Leave enough room to water, weed, inspect plants and harvest without trampling neighboring crops.
  • Choose a manageable scale: A few containers or a small border can combine useful harvests and ornamental interest without requiring a large planting area.
  • Check local timing: Planting dates, suitable cultivars and growing seasons depend on your region. The examples in extension sources are not a universal planting calendar; consult your local extension service for local recommendations.

How can vegetables and flowers work together in the design?

Think about the garden as a composition of foliage, flowers, height and texture, not just rows of crops. UF/IFAS recommends combining edible plants with dependable, low-maintenance ornamentals and plants with different seasonal durations, so the garden can retain interest as individual crops finish. Its guide describes edible landscaping as an artful combination of edibles and traditional ornamentals: UF/IFAS Extension’s edible landscape guidance.

Use plants with different roles. Colorful foliage can anchor a bed; herbs can add fragrance and form; flowers and fruiting plants can provide seasonal highlights. Mix longer-lasting plants with shorter-season vegetables, and consider how each area will look after a crop is harvested.

Use color, texture and fragrance

Vegetables and herbs offer more visual variety than plain green foliage. Iowa State Extension names ‘Bright Lights’ Swiss chard, ‘Purple Ruffles’ basil, bronze fennel and colorful lettuces as ornamental vegetable-garden choices. Select varieties that suit your climate and taste as well as the look you want.

Herbs can serve as edging or container plants. Penn State Extension notes that lavender and rosemary are traditional edging choices, and that herbs allowed to flower can add further interest and use: Penn State Extension’s herb planting guidance.

Combine plants with different seasonal roles

Annual vegetables can bring abundant color and texture, but their appearance may change quickly as crops mature or finish. Balance them with longer-season plants, fruiting shrubs or trees, and ground-covering herbs where climate and space allow. Choose combinations that make sense for the garden’s light, water and maintenance needs rather than treating any example as suitable everywhere.

Which flowers can I safely eat?

Only eat flowers that you can positively identify as edible and that have been grown and treated appropriately for food use. An attractive flower—or one commonly sold as an ornamental—is not necessarily safe to eat. Alaska Cooperative Extension lists pansies, violas, signet marigolds, herbs and nasturtiums among possibilities for containers, but you should verify the exact species and its growing treatment before harvesting: Alaska Cooperative Extension’s edible flower guidance.

The same extension source warns that not all flowers are edible and that some are poisonous, including sweet pea, lupine, foxglove, nicotiana, larkspur and lily-of-the-valley. Ornamental flowers may also have been treated with pesticides not labeled for food plants. Growing flowers yourself is the source’s recommended way to obtain edible flowers; follow product labels and relevant local safety guidance.

What structures and containers help an edible garden?

Supports can make climbing plants easier to manage while contributing shape and height. Choose a structure that suits the plant’s growth habit, remains stable, allows access for care and harvest, and still looks appropriate when plants are absent. UF/IFAS lists tomato cages, trellises, arbors, pole supports, teepees and espaliers as options, advising gardeners to use supports for both aesthetic appeal and proper growing practices.

Containers can make a small garden possible and help keep spreading plants in bounds. UC Agriculture and Natural Resources describes mint as an aggressive spreader and suggests growing it in a container to manage it: UC ANR’s mint-growing guidance.

Choose containers for the plants, not just the look

Use nontoxic containers with drainage holes and enough room for mature roots. Group plants only when their light, water and nutrient needs are compatible. A container that looks attractive but is too small, lacks drainage or pairs mismatched plants can make care difficult. How do I keep the garden attractive through the season?

  1. Choose a visual anchor. Start with a plant or structure that gives the garden form, such as a trellis, a fruiting shrub or a group of colorful foliage plants.
  2. Layer in harvest crops. Place vegetables and herbs where they receive appropriate light and where harvesting will be convenient.
  3. Fill seasonal gaps. Combine crops with different growing durations and use dependable ornamentals to keep areas from looking bare when a vegetable crop ends.
  4. Review the plan as plants mature. Make sure supports remain stable, containers have adequate root space, and plants still receive compatible light and water.

Make choices plant by plant: match the site, growing habit and care requirements first, then use color, texture, fragrance and seasonal timing to shape the design.
