A wooden cutting board should be washed with hot, soapy water after every use, rinsed, and dried promptly; sanitizing is a separate food-safety step to use after cleaning when raw-food contamination is a concern.

Clean it after every use
Do not merely wipe the board with a towel. After preparing each food item, wash both sides, the edges, and any handle area with hot, soapy water. Rinse with clear water, then dry it.

Cleaning removes food residue and grease. That matters because sanitizer works on a clean surface; it is not a substitute for washing away visible food.

Prevent cross-contamination
Wood is not automatically off-limits for raw meat or poultry. The practical safeguard is separation: keep one board for raw meat, poultry, seafood, and eggs, and another for produce, bread, cheese, and other ready-to-eat foods.
If a board that held raw food will next hold food that will not be cooked, wash and sanitize it first. This is especially important when meal prep moves quickly from raw protein to salad ingredients, fruit, or bread.

When and how to sanitize
Sanitizing is an additional step after washing—not an everyday replacement for washing. Use it after preparing raw meat, poultry, seafood, or eggs when the board will be reused for ready-to-eat food, and whenever a careful food-safety reset is appropriate.
- Wash the board thoroughly with hot, soapy water and rinse it.
- Mix 1 tablespoon of unscented liquid chlorine bleach per gallon of water.
- Flood the cleaned board surface with the solution and let it stand for several minutes.
- Rinse with clear water, then air-dry or pat dry.
Alternatively, use a commercial sanitizer only if its label specifically says it is suitable for cutting boards, food-contact utensils, or food-contact surfaces, and follow that label exactly. A general household disinfectant is not necessarily safe for a surface that touches food.
Do not treat vinegar, lemon, salt, or a quick wipe-down as a substitute for this wash-then-sanitize process.

- Cutting Board Oil is a deep penetrating 100% Pure USP Food Grade Mineral Oil that is tasteless, odorless, colorless, and will never go rancid
- Cutting Board Oil rejuvenates dry wood, including: cutting boards, butcher blocks, countertops, wooden bowls and utensils
- Deeply penetrates into wood pores, bringing out the rich natural wood color and helps prevent drying and cracking
- Cutting Board Oil is perfect for the initial “oiling” or “seasoning” of cutting boards and butcher blocks
- Made in USA with strict quality controls – No contact with nuts, gluten or other potentially allergenic materials
Dry and store it correctly
After washing, towel-dry the board right away. Then stand it on its edge, or otherwise position it so air can reach both faces, until it is fully dry. Avoid leaving it flat in pooled water, in a wet sink, or submerged.
Good drying is board care as well as kitchen housekeeping: prolonged moisture can contribute to warping, cracking, and stress at glue lines. Follow the care instructions from the board maker if they differ for its construction.
Oil it when it looks dry
Condition a completely dry wood board periodically with food-grade mineral oil made for cutting boards or food-contact wood. The manufacturer’s instructions should set the schedule, because frequency varies with use, indoor humidity, climate, and the board’s construction. As a practical cue, oil the board when it begins to look pale, dry, or unevenly colored; some makers use monthly treatment as an example, not a universal rule.

- Confirm the board is clean and completely dry.
- Apply the mineral oil over the top, bottom, edges, and handle area.
- Allow it to penetrate for the time directed on the product or board-care instructions.
- Wipe away excess before putting the board back into service.
Use a product intended for food-contact wood. Do not substitute ordinary cooking oil, which some board makers specifically advise against, or a generic furniture finish. Product labels and the board maker’s instructions take priority.

Stains and odors are cosmetic-care issues, not proof that a board has been sanitized. For discoloration, John Boos suggests rubbing salt with a damp sponge or paper towel. For odors, it suggests rubbing with lemon or lime and salt. If you use either approach, follow with normal washing, rinsing, and drying.

Know when it is time to replace it
Normal knife marks alone do not mean a board is finished. Replace it when wear becomes excessive or when grooves, cracks, or damaged areas can no longer be cleaned effectively. A board that cannot be thoroughly washed and kept clean is no longer a good food-prep surface.
A simple long-term routine
| When | What to do |
|---|---|
| After every use | Wash with hot, soapy water; rinse; towel-dry; let both faces finish drying with airflow. |
| After raw-food prep before ready-to-eat prep | Wash first, then sanitize with a food-contact-safe method. |
| When the wood looks dry | Apply food-grade mineral oil according to the product and board-maker directions. |
| When damaged areas are hard to clean | Replace the board rather than relying on cosmetic treatments. |
Frequently Asked Questions
Can I use a wooden cutting board for raw meat?
No. USDA permits consumers to use wood or nonporous cutting surfaces for raw meat and poultry. Use a dedicated board for raw protein and a separate board for ready-to-eat foods, then wash and sanitize before switching from raw-food prep to ready-to-eat prep.
Can a wooden cutting board go in the dishwasher?
Not necessarily. Some solid-wood boards may be dishwasher-washed, but laminated boards may crack or split, and many manufacturers say not to dishwash their boards. Follow your board’s label; hand-washing and prompt drying are the prudent default unless it is expressly dishwasher-safe.
How often should I oil a wooden cutting board?
There is no universal interval. Follow the board maker’s instructions and oil the board with food-grade mineral oil when it looks dry, pale, or unevenly colored. How often that happens depends on use, climate, and construction.
Do lemon, salt, or vinegar sanitize a cutting board?
They can help with odors or surface discoloration, but they are not a validated replacement for washing and food-contact-safe sanitizing. Wash, rinse, and dry the board afterward.
The Bottom Line
Wash, rinse, and dry a wooden cutting board after every use; reserve sanitizing for cleaned boards when food-safety circumstances call for it, and use food-grade mineral oil only after the wood is fully dry.
