There is no single best commercial dishwasher for every food-service operation. The right choice depends on peak rack volume, the size and soil of the wares, available floor space and utilities, sanitation requirements, and the time you have to turn dishes around. Start by matching the machine class to your workflow, then compare the exact configuration, installation requirements, and ownership costs with a dealer and your local authority.
Choose a machine class that matches your volume and workflow
Commercial dishwashers range from compact undercounter units to continuous-flow conveyor systems. A machine’s advertised maximum capacity is not enough to determine fit: account for the return rush, the mix of wares, loading and unloading time, and how quickly clean items must be ready. Hobart’s school buying guide identifies number served, ware type, total volume, and cleaning speed as selection factors; this is manufacturer guidance, not an independent study (Hobart’s school dishroom buying guide).

Size the dishwasher around peak demand
Use the busiest realistic service period, not the daily average. Estimate how many racks or loads return during that period and the longest acceptable delay before clean wares are available. Include the time staff need to scrape, sort, load, unload, and move items back into service; the machine’s cycle or headline capacity does not measure that entire workflow.
- List the wares and their dimensions: plates, glasses, utensils, trays, sheet pans, pots, and other prepware.
- Identify heavy, baked-on, or otherwise difficult soils and where those items enter the dishroom flow.
- Check whether racks can accommodate the actual wares and whether loading and unloading can keep pace with the washer.
- Discuss peak volume, ware mix, and turnaround targets with a qualified dealer so the proposed configuration reflects the operation.
Compare high-temperature and chemical sanitation for the site
High-temperature and chemical or low-temperature sanitation are distinct approaches, and ENERGY STAR publishes separate criteria for multiple machine classes and sanitation methods. The criteria include maximum idle-energy rates and water-use limits; the applicable values vary by class and method. Compare the entry for the exact proposed machine rather than assuming every certified model has the same limits (ENERGY STAR commercial dishwasher eligibility criteria).

The available criteria do not establish which method will cost less at a particular site or whether a specific installation meets local food-code requirements. Before choosing, ask the dealer and relevant local authority to confirm the machine’s sanitation method, chemical or hot-water needs, booster configuration, ventilation, and applicable rules. Also verify that the operation can support the required chemical handling and routine practices.
Use ENERGY STAR figures as a comparison, not a savings promise
ENERGY STAR says certified commercial dishwashers are about 12% more energy efficient and 50% more water efficient than standard models. The program also reports average business energy-bill savings of $360 annually and more than $3,290 over a product’s lifetime, plus approximately 2,400 kWh in annual energy savings and more than 5,647 gallons of annual water savings depending on product type. The page does not state a year for these program-level figures; they are comparisons, not a forecast for an individual site or configuration (ENERGY STAR commercial dishwashers).

ENERGY STAR’s commercial dishwasher specification effective date is September 2021, and its criteria page refers to Version 3.0 requirements effective July 27, 2021. Confirm the current certification and the exact model configuration in the product finder or product documentation before purchase; qualified models and local incentives can change.
Check the building and installation conditions before ordering
Commercial dishwashers are configured capital equipment. A suitable machine on paper can still be a poor fit if the dishroom, electrical service, water supply, drainage, or ventilation cannot support it. Measure the site and have the proposed configuration reviewed by a qualified installer before committing.

Build a comparable dealer quote and ownership-cost picture
Ask dealers to quote the same scope so the initial price does not hide material differences. Include the machine and selected options, freight, installation, startup, racks, water treatment, chemicals, maintenance plan, warranty, and service response. Obtain site-specific estimates for utility use and routine service rather than applying program averages as a guaranteed payback.
