Start by estimating peak racks per hour, then compare machine format, sanitizing method, exact-model efficiency and total operating costs. No single model is best for every restaurant, and the available evidence does not support a tested model ranking.
How to choose a commercial dishwasher for your restaurant
- Measure peak demand. Estimate how many racks of dishes return during the busiest service period. Use actual dish-return patterns and the loads you wash—not seats alone.
- Choose a format that fits the workflow. Match expected throughput to available floor space, rack handling and the path from scraping and loading through unloading and storage.
- Decide how dishes will be sanitized. Compare high-temperature and chemical-sanitizing options against the machine specifications, site utilities and applicable health-code requirements.
- Compare exact-model operating data. Check final-rinse water use, washing energy and idle energy within the appropriate machine-type and sanitation category.
- Confirm the installation before ordering. Review the manufacturer’s installation documents with the equipment dealer or installer and confirm applicable requirements with local authorities.
- Estimate lifecycle cost. Use your expected rack volume, operating hours, local water and sewer and energy rates, hot-water source, and chemical costs.
The U.S. Department of Energy (DOE) gives undercounter machines at around 20 racks per hour and conveyor systems at 200 or more racks per hour as examples for small and larger food-service operations, respectively. These are general reference points, not guaranteed capacities or thresholds. Actual throughput depends on the model, load mix, machine speed and how efficiently staff scrape, sort and load racks. What type of commercial dishwasher do I need?
Restaurants generally choose among machines that process dishes in a stationary chamber and systems that carry racks or wares through a wash line. Pot, pan and utensil machines serve a different job from general dishwashers. The figures in the table are DOE examples where stated; they are not model-specific guarantees.

ENERGY STAR recognizes these machine categories, but certification eligibility depends on category, sanitation method and product details. Its Version 3.0 specification includes high-temperature criteria for flight-type and PPU machines; flight-type products rated only for low temperature are excluded from that specification. Should I choose a high-temperature or low-temperature dishwasher?
DOE describes low-temperature machines as using 140°F water plus chemical sanitizing and drying agents, while high-temperature machines use 180°F water. Those are general descriptions, not a substitute for the exact machine’s specifications or the requirements that apply to your location. DOE FEMP buyer guidance
High-temperature sanitizing
Check the unit’s stated water and electrical requirements, including whether a booster heater is included or required. Account for the energy needed to heat water and consider how heat and steam will affect the dishroom and ventilation plan.
Chemical or low-temperature sanitizing
Include sanitizer and drying-agent costs in the operating budget. Confirm chemical supply and handling requirements for the specific machine, and check whether its water and installation specifications suit the site.

Neither method is a universal winner. The right comparison depends on the exact machine, utility costs, chemicals and site conditions; confirm sanitation requirements with the relevant local authority before purchasing.
How to compare efficiency and ENERGY STAR criteria
Compare like with like. ENERGY STAR’s commercial dishwasher criteria vary by machine type and sanitizing method, and the test basis is not interchangeable across categories. For example, a rack-conveyor water-use figure should not be treated as directly comparable to a stationary door-type figure without accounting for the distinct category and test basis.
The Version 3.0 specification, effective July 27, 2021, sets limits for final-rinse water consumption, idle energy and washing energy, with criteria varying by category. The examples below are maximum limits for the listed high-temperature categories in that specification—not measured performance for a particular model. ENERGY STAR says certified commercial dishwashers must meet applicable maximum final-rinse water and idle-energy requirements. Its public page reports that certified products are about 12% more energy efficient and 50% more water efficient than standard models. Those are program-level comparisons, not a promise that every certified model will produce the same savings at your site. The Version 3.0 specification also includes washing-energy limits, so review that measure along with final-rinse water and idle energy.
ENERGY STAR lists estimated average savings of $360 annually and more than $3,290 in utility bills over a product’s lifetime versus standard models. It also reports approximately 2,400 kWh and more than 5,647 gallons of annual savings; the water figure depends on product type. A purchase quote is only one part of the cost. Estimate the costs that recur under your actual operating pattern and compare them with the installed price and expected service needs.

- Utilities: Use local energy, water and sewer rates, your expected racks per day, operating days and hours, and the machine’s category-specific efficiency data.
- Hot water: Establish how the machine’s water-heating needs interact with the building’s hot-water supply and any booster heater.
- Chemicals and drying agents: Include them when comparing chemical-sanitizing machines.
- Service: Compare the installation quote, warranty, local service response, parts availability and maintenance plan.
- Incentives: Check whether a local utility rebate is available for the exact product at the time of purchase; availability varies by location.
DOE’s 2023 FEMP guidance gives an illustrative federal purchasing scenario: a high-temperature stationary single-tank door washer processing 280 racks daily, 365 days per year, using specified federal utility prices and an assumed 15-year commercial-dishwasher life. Under those assumptions, it estimates $17,214 in lifetime combined utility savings for an ENERGY STAR model versus a less-efficient model, with figures reported in 2022 dollars. The same scenario estimates annual water use of 90,958 gallons for its ENERGY STAR case and 131,838 gallons for the less-efficient case. What to confirm before ordering and installing
A machine can meet throughput needs on paper and still be a poor fit for the dishroom. Before committing, compare the exact unit’s installation documents with the site and the proposed workflow.
- Available floor area, door clearance and the path for moving the machine into position.
- Rack or flight dimensions and the route from scraping and loading to unloading and clean storage.
- Electrical service and hot-water supply, including any required booster heater.
- Drainage and ventilation or heat-management needs listed by the manufacturer.
- Local health, building and other applicable requirements, confirmed with the relevant authority.
- Installation scope, warranty, service coverage, parts availability and planned maintenance.
- The exact model’s NSF/ANSI 3 certification and current ENERGY STAR eligibility, checked against official listings and manufacturer documents.
ENERGY STAR Version 3.0 requires covered machines to be certified to NSF/ANSI 3-2019 or a more recent published NSF/ANSI 3 standard. The specification became effective July 27, 2021; confirm the current status of the exact model rather than relying on a category claim or an older product page. The available federal and ENERGY STAR guidance does not establish a universal installation checklist or determine code compliance for a particular restaurant.

A practical comparison checklist
Use the same assumptions when reviewing quotes so the comparison reflects your kitchen rather than a generic capacity or savings claim.
- Peak racks per hour and the model’s documented throughput for your load mix.
- Machine format, footprint, rack dimensions and loading and unloading ergonomics.
- Sanitizing method, water-heating needs, chemicals, drying aids and heat or steam management.
- Category-appropriate final-rinse water use, washing energy and idle energy.
- Site utility, drainage, ventilation and jurisdictional fit.
- Installed quote, warranty, service response, parts availability and maintenance plan.
- Lifecycle estimate using local tariffs, realistic operating hours and rack volume.
- Official certification and current eligibility for the exact model.
