The useful way to choose is to match the knife to the cheese: a thin, often perforated blade for soft cheese; a sturdier blade for firmer cheese; a pointed knife for breaking hard Parmesan; and a plane for shaving slices. A spreader is usually better for fresh, soft cheese.
Choose by cheese texture and task
Cheese knives are shaped for different jobs. A knife intended for creamy Brie may be too thin for a firm block; a pointed Parmesan tool is meant to break hard cheese, not slice every variety. Makers’ descriptions explain intended use, but they are not independent comparisons of performance.
Soft and bloomy-rind cheeses
A narrow, thin blade, often with holes, is designed to reduce sticking when cutting creamy or bloomy-rind cheeses. ZWILLING says the holes in its soft-cheese knife are intended to prevent sticking; Arcos likewise associates perforations with soft cheese. The WÜSTHOF Classic 5-inch Soft Cheese Knife is specifically described for soft cheeses, and WÜSTHOF says its extremely thin blade is not recommended for firmer or semi-hard cheeses.
Medium-hard cheese and serving
A general serving knife with a forked tip can lift or serve slices as well as cut them. ZWILLING assigns this role to the medium-hard knife in its three-piece set, citing Cheddar, Emmental, and Monterey Jack as examples.

Hard and cured cheese
For a firm, cured cheese, look for a sturdier, sharp blade suited to the task. Arcos describes its hard-cheese knife as having a long, straight, sharp-edged blade and recommends cutting from top to bottom. Its guidance says, “The knife for cutting hard cheese is characterized by having a sharp edge with a long and straight blade.”
Very hard cheese such as Parmesan
A pointed or triangular Parmesan knife is intended to pierce or break a dry, hard block. Arcos describes a triangular blade with a sharp point; ZWILLING describes its pointed knife as a tool for piercing hard cheese. These shapes serve a different purpose from a thin soft-cheese blade.

Thin slices and spreadable cheese
A cheese plane is for shaving thin slices of semi-hard or hard cheese, rather than serving every cheese-cutting task. That distinction comes from Castello’s guide excerpt; its full page was not available for review, so treat it as a supporting pointer. For fresh, spreadable cheese, Opinel recommends a blunt, broad spreader; a butter knife may also suit the job better than a sharp slicing knife.
When a set is worth it
A set makes sense if you regularly serve cheeses with different textures and will use each included tool. If you mostly buy one kind of cheese, a single knife matched to that task may be the more practical choice. Check the actual contents and the maker’s assigned uses rather than assuming that a larger set is automatically more versatile.

What to compare before buying
- Intended cheese and task: Check whether the maker specifies soft, medium-hard, hard, or very hard cheese, and whether the tool is for slicing, serving, breaking, shaving, or spreading.

- Serving details: A forked tip may help lift and serve cut pieces.
- Handle, grip, and balance: Consider whether the knife feels comfortable and controllable for the way you cut and serve.
- Materials and construction: Confirm the listed blade and handle materials and whether the knife is stamped or made by another construction method.

Opinel’s guide gives typical home-use size ranges of 4–6 inches for soft and semi-soft cheese, 5–7 inches for a hard-cheese knife, and 2–3 inches for a Parmesan spade. These are the manufacturer’s recommendations, not a universal sizing standard.

Care and use
Follow the care instructions for the specific knife you buy. Opinel’s guide recommends hand washing and prompt drying, mentions a fine whetstone for sharpening, and suggests food-safe oil for wooden handles. Those recommendations may not apply to every knife or handle material. Arcos recommends using a wooden cutting board for cheese knives.
What “tested and reviewed” can—and cannot—mean here
The available product information supports matching knife designs to intended tasks, but it does not establish a ten-product independent comparison or a ranked list of ten winners. TheTestedHub’s 2026-labeled page says its team tested five products and reports 50+ cuts per knife, five cheese types, and a top score of 9.2. Those are that publisher’s claims about its own process; they are not tests conducted for this article and do not substantiate ten tested picks. Its scores are therefore not presented as this article’s verdicts.
Best Value
- Unique drafted blade
- Heat resistant to 430 degrees
- Stain resistant
- Dishwasher safe
- Soft comfort grip
To make a genuine ten-knife test useful, an editor would need to compare products under the same conditions and disclose the cheeses, cutting and serving tasks, handling criteria, care requirements, and results. Until then, selecting by cheese texture and the maker’s stated use is more defensible than assigning unsupported rankings.
