How to Build a Root Cellar for Fresh Food Storage: A Step-by-Step Guide

A root cellar can be a dedicated underground space or an insulated room in an existing building. Plan around drainage, access, ventilation and crop-specific storage conditions.

Build a root cellar around the crops you plan to store and the conditions your site can support. It does not have to be a separate underground building: an insulated room in a basement or garage may be the simpler option. Before digging or framing, plan for drainage, seasonal temperatures, ventilation, winter access and local building requirements.

1. Decide what you will store

List the crops and approximate quantities you expect to store. Root vegetables, apples, onions and winter squash do not all need the same humidity or handling, so the crop mix should shape the space and its storage zones.

The University of Alaska Fairbanks Cooperative Extension Service gives 32–40°F as the optimum storage range for most vegetables, and says many vegetables benefit from high humidity—commonly 80–95%—to limit drying. Those are broad ranges, not one setting for every crop. Onions and squash prefer drier conditions. See UAF Cooperative Extension’s root-cellar guidance.

2. Choose a cellar type and location

A root cellar is a cool, suitable storage space, not a single blueprint. An insulated room within a basement or garage may be enough; a separate cellar gives you a dedicated space but involves more construction. Neither is universally better. Compare the options against your site’s drainage, temperature stability, usable capacity, ventilation route and winter access.

Water and drainage Assess how water reaches the room and whether the area stays dry. Plan surface-water drainage carefully and assess soil and groundwater before excavation.
Temperature control Insulate exposed walls and assess seasonal conditions in the surrounding building. Insulation and below-grade conditions must suit local frost and seasonal conditions.
Ventilation and pests Plan a workable route for ventilation and screen openings. Plan ventilation routes and screened openings as part of the structure.
Access and capacity Convenience depends on where the room sits and how much space is available. Can provide a dedicated storage area, but winter access and the route from the house need consideration.
Structural and permit requirements Check applicable local requirements before altering the building. Check local requirements and get qualified local advice before below-grade structural work.

University of Maine Cooperative Extension discusses different root-cellar options and emphasizes choosing a location that remains accessible in winter. An underground build is not mandatory for every useful cold-storage setup. See Maine Extension’s root-cellar publication.

3. Assess the site before construction

For any proposed location, check where surface water flows, how the soil behaves and whether groundwater or seasonal frost could affect the space. Consider the route you can provide for ventilation and whether you can reach the cellar safely during winter.

  • Look for a location where surface water can be directed away from the storage area.
  • Assess soil and groundwater conditions before planning excavation.
  • Account for local frost and seasonal temperature changes when deciding how to insulate.
  • Check local building requirements. Extension guidance is general planning advice, not an engineered design or approval for your site.

Below-grade construction has site-specific structural and water-management implications. Verify local requirements and seek qualified local advice before excavation; the general guidance in UAF Extension’s publication does not provide engineering calculations or a universal construction plan.

4. Select suitable materials and insulation

Extension guidance describes durable masonry and wood designed for direct burial as possible construction approaches. Do not assume ordinary lumber is appropriate below grade. UAF Extension advises confirming that any treated wood is suitable for its intended application; the publication does not endorse a particular treatment or material specification.

Insulate exposed walls and plan for the site’s local winter and summer conditions. The right construction and insulation details depend on the design, soil, water exposure and applicable requirements, so use qualified local advice for decisions that affect structural safety or below-grade performance.

5. Plan ventilation and pest exclusion

Ventilation helps manage temperature and humidity and can remove excess moisture. As the University of Alaska Fairbanks Cooperative Extension Service puts it, “Ventilation is used to help control the temperature and humidity.” Screen ventilation openings to deter rodents.

Outdoor air conditions change, so ventilation is not a set-and-forget substitute for monitoring. Use cellar readings and the needs of the stored crops to guide adjustments rather than assuming that more airflow is always better.

6. Fit out the space and monitor conditions

Arrange storage so crops remain organized, accessible and easy to inspect. A thermometer-hygrometer measures both air temperature and relative humidity; Maine Extension recommends an easy-to-read thermometer with a hygrometer.

Check readings over time and at more than one location or height. UAF Extension notes that air is warmer higher in the cellar and describes placing thermometers throughout the space. This helps reveal whether conditions vary across the area rather than relying on a single reading.

7. Store crops according to their needs

Use crop-specific conditions as a guide, then account for the actual readings in your cellar. The figures below come from University of Missouri Extension’s crop-storage guidance, reviewed in January 2023. They are targets, not guarantees of a fixed storage life.

8. Inspect produce and adjust conditions

Check the stored crops and cellar readings regularly. Remove moldy, damaged or decaying produce; Maine Extension specifically recommends discarding such items. If conditions drift from the needs of your crops, adjust ventilation or moisture management and continue monitoring the readings.

There is no universal cellar setting that suits every harvest. Use your crop list, measured conditions and site constraints to decide what belongs in the space and what needs a different storage arrangement.
