Raw eggs in their shells keep for 3 to 5 weeks in a refrigerator set to 40°F (4°C) or below. Hard-cooked eggs keep for 1 week. These are recommended storage intervals—not a way to confirm whether an egg handled improperly is safe.
How long do eggs last in the fridge?
FoodSafety.gov’s Cold Food Storage Chart, last reviewed September 19, 2023, gives these home-storage intervals for a refrigerator at 40°F (4°C) or below:

| Raw egg whites or yolks, separated from the shell | 2 to 4 days |
The chart’s intervals are guidance for storage under the stated conditions, not a precise freshness test or a guarantee of safety after improper handling. It also notes that yolks do not freeze well. FoodSafety.gov’s Cold Food Storage Chart
How should you store eggs?
Keep eggs in their original carton in the refrigerator’s main compartment, rather than in the door. FoodSafety.gov gives this placement advice in its 4 Steps to Food Safety guidance. A refrigerator thermometer can help you check that the appliance is at or below 40°F (4°C); the storage intervals above assume that temperature.

How long can eggs sit out?
FoodSafety.gov advises refrigerating perishable foods within 2 hours, or within 1 hour when the air temperature is above 90°F (32°C). Its refrigerated-food chart says to discard fresh shell eggs, hard-cooked eggs, egg dishes, and egg products exposed to temperatures of 40°F (4°C) or above for more than 2 hours. 4 Steps to Food Safety and the Cold Food Storage Chart
What if a recipe calls for raw or undercooked eggs?
People at higher risk of food poisoning should use pasteurized eggs or egg products in recipes that call for raw or undercooked eggs. See FoodSafety.gov’s guidance for people at risk of food poisoning.
