Hong Kong’s Farm66 has tested growing Japanese wasabi indoors, first at a Tai Po site and later through container-farm activity reported in Dongguan. The evidence describes a developing agritech project, not a proven large-scale Hong Kong harvest or a wasabi product confirmed to be routinely available to local shoppers.
What is the project growing?
The crop is Japanese wasabi, Eutrema japonicum, a plant traditionally cultivated for its pungent rhizome. It is often called Japanese horseradish, but it is botanically distinct from ordinary horseradish. Many inexpensive green “wasabi” pastes instead rely on horseradish and mustard, sometimes with coloring or flavorings; green color alone does not establish that a condiment contains genuine wasabi.

The rhizome is the familiar ingredient grated for sushi and sashimi, but the leaves, stems and flowers can also be used in food. A plant grown in Hong Kong can be Japanese wasabi by species or cultivar without being Japanese-grown: the crop’s identity and the place where it was cultivated are separate facts.

Why try to grow wasabi indoors?
Japan’s wasabi supply faces pressure from climate and labor challenges. The South China Morning Post reported that Japan’s harvest fell by roughly three-fifths over 15 years, to 1,885.5 tonnes in 2021, citing official data. That is a historical benchmark, not a current 2026 production figure. The same report described warming as a threat to the cool growing conditions wasabi needs and noted the challenge of an aging farming workforce.

- More Than Just the Rhizome: Enjoy the attractive heart-shaped foliage while growing a unique culinary plant. The leaves and stems are also commonly used in Japanese cuisine.
Hong Kong has limited agricultural land, high land costs and substantial food-import dependence. Growing close to urban buyers could reduce exposure to weather and shorten the route to market. A controlled farm could also tune temperature, humidity, light and irrigation rather than relying on a suitable outdoor site. Those are potential resilience and location advantages; they do not establish that indoor production is cheaper, lower-carbon or capable of replacing traditional supply.
Why wasabi is a demanding vertical-farm crop
Traditional wasabi grows in cool, shaded conditions, often in gravel beds supplied by clear-running mountain water. Indoors, a grower has to reproduce key parts of that environment consistently. The plant’s slow rhizome development makes the challenge more consequential than simply keeping leaves alive: a viable plant is not necessarily a marketable root.
- Stable climate: Temperature, humidity and airflow need close management; abrupt changes can stress a sensitive crop.
- Water and root health: Water quality and oxygenation matter. Poor circulation, sanitation or temperature control can increase disease and root-rot risks.
- Crop-specific light and nutrients: The useful recipe depends on which plant part is being optimized, as well as the cultivar and growth stage.
- Time and reliability: A long cycle ties up growing space, while a pump, cooling or filtration failure can jeopardize months of growth.
What Farm66’s reported system looked like
In 2023, Farm66 founder Gordon Tam Chi-ho described experiments with wasabi roots imported from Japan at a roughly 20,000-square-foot Tai Po test site. The company was assessing water, light, temperature, humidity and nutrients. Its reported design used customized 44-foot containers fitted with vertical racks, lighting, irrigation and ventilation, with remote monitoring and control through a phone, IoT sensors and robotic systems.

Farm66’s reported capacity target was up to 2,800 roots per container. The company estimated an indoor harvest cycle of about nine months, compared with a reported 15–24 months for traditional cultivation. These are design and timing claims from the project’s early development, not independently audited yields or proof that each container completed a commercial harvest.
The company also reported preliminary lighting observations: white light produced larger leaves, while a red-and-blue combination produced longer stems. Those observations illustrate why a generic grow-light recipe may not suit every crop objective. The 2023 account did not provide the light intensity, photoperiod, energy use, rhizome-weight comparisons, controlled-trial design or flavor and pungency results needed to treat the observations as a validated production formula.
From Tai Po experiments to container farms in Dongguan
The project’s geography matters. The initial wasabi experiments were reported at Farm66’s Tai Po site in Hong Kong. A later China Daily report published May 16, 2025 said Farm66 had shifted its production-line activity to Dongguan, where it used modified shipping containers to grow wasabi and chili peppers facing weather-related supply pressures in Japan and Malaysia.
Rank #3
This indicates that Farm66’s container-farming effort continued and acquired a regional manufacturing or deployment dimension. It does not establish that every container—or any specific wasabi crop—was located in Hong Kong. Nor does the report by itself verify mass production, repeatable yields, profitability or retail sales. “A Hong Kong agritech company developing container farms” is therefore more precise than saying Hong Kong has become self-sufficient in wasabi.

Was the 2023 plan already a commercial farm?
No: the reporting described experimental growing and planned commercialization, not a demonstrated mature farm supplying a steady volume of marketable roots. Farm66 had imported roots for trials and was testing conditions. A planned partnership with an unnamed Japanese company was reported at HK$10.1 million; the company was also reported to have been asked to design ten custom farming containers at about US$130,000 apiece, with a prototype expected to be shipped to Wakayama in July 2023.
Those figures describe reported plans at the time, not current container prices or confirmed payments and deliveries. The available reporting does not establish whether the partnership was completed, whether all ten containers were delivered, or whether the Wakayama prototype achieved commercial yields. The company’s description of its farming systems covers vertical planting, hydroponics, aquaponics, LED controls, cloud monitoring and robotics, but company descriptions of capability are not independent performance validation.

What would prove the system works commercially?
A convincing case requires more than a container’s capacity or a faster estimated cycle. Operators, buyers and investors would need evidence that the system repeatedly produces saleable rhizomes of acceptable quality at a viable cost.
- Harvest performance: Marketable rhizome weight, survival to harvest and consistency across repeated crop cycles.
- Product quality: Flavor, texture and pungency assessments, alongside clear information on cultivar and planting material.
- Operating economics: Electricity and labor per kilogram or root, total production costs, maintenance needs and sale price.
- Production resilience: Failure rates, disease controls and the ability to manage disruptions to cooling, pumping and filtration.
- Market and provenance: Reliable distribution, customer acceptance, food-safety controls and accurate labeling of where the wasabi was grown.
Vertical farming offers controllability, but its trade-offs are crop-specific. Cooling, lighting, pumps and ventilation consume electricity, and a slow crop occupies space far longer than leafy greens. The reported container price is only a dated design estimate; it does not cover the full cost of installation, logistics, labor, maintenance and operation. The available reporting provides no life-cycle comparison, energy-per-kilogram figure, mortality rate or profit margin for Farm66’s wasabi.

Can Hong Kong shoppers buy Farm66-grown wasabi?
The Farm66 product catalog reviewed for this article listed produce and farming-related goods such as salad greens, herbs, tomatoes, mushrooms, fish, seeds and equipment; it did not show fresh wasabi as a regular retail item. That catalog snapshot is not proof that no limited or restaurant supply exists, but it does not support telling shoppers that Hong Kong-grown Farm66 wasabi is routinely on sale. Check with the company or a named seller for current availability and origin before buying.

What the project says about vertical farming
Wasabi is a useful test of whether controlled-environment agriculture can handle more than fast-growing greens. Its climate sensitivity and premium reputation could make precise control valuable, but the long crop cycle raises the bar for yield, energy efficiency and reliability. A successful demonstration would need to show both a good plant and a repeatable, marketable rhizome.
For now, Farm66’s story is best understood as agritech development responding to supply risk: experiments began in Hong Kong, and later reporting placed container-farm activity in Dongguan. The reported plans and equipment are not a substitute for evidence of dependable harvests, sound economics and verified consumer availability.
