Once you open it, refrigerate it. Heinz’s current U.S. product guidance says, “For best results, refrigerate after opening.” That makes refrigeration the best household default, especially for a bottle used over several weeks or months.
A bottle left out briefly, including overnight, is not automatically a food-safety emergency in the way that meat, milk, eggs, or leftovers can be. Commercial ketchup is acidic and shelf-stable before opening. But pantry storage after opening is not Heinz’s preferred practice, and there is no universal manufacturer-approved number of days that every opened bottle can safely remain at room temperature.
The practical answer: pantry before opening, refrigerator after opening
| Situation | Best guidance |
|---|---|
| Unopened commercial Heinz ketchup | Store in a cool, clean, dry pantry, away from heat. Follow the printed date and package instructions. |
| Opened U.S. Heinz ketchup | Refrigerate after opening. Heinz describes this as best for product quality. |
| Opened U.K. Heinz ketchup | The current U.K. product listing says to refrigerate after opening and eat within eight weeks. |
| Opened refrigerated ketchup in U.S. household guidance | Approximately six months is a commonly cited best-quality guideline, not a universal safety deadline or a global Heinz rule. |
| Homemade ketchup | Refrigerate it unless it was made and processed with a current, tested preservation procedure. |
The label on your particular bottle should take priority if it gives a shorter storage period or different instructions. Recipes, package sizes, and labeling can vary by country and product variant.

The famous Heinz statement was a social-media post from Heinz UK on June 27, 2023: “Ketchup. goes. in. the. fridge!!!” Heinz UK followed the debate with a poll in which reports put the result at roughly 63% of respondents choosing the fridge and 37% choosing the cupboard. That poll was a marketing poll, not a scientific or representative survey of ketchup users.
In other words, Heinz UK clarified the brand’s preferred storage habit. It did not create a new FDA or USDA rule, and it did not prove that every bottle of opened ketchup kept in a cupboard is immediately dangerous.

The wording on Heinz’s product pages is more measured than the viral post. The current U.S. Heinz regular-ketchup page says, “For best results, refrigerate after opening.” The U.K. Heinz product listing gives a more specific instruction: refrigerate after opening and eat within eight weeks.
Those statements are not necessarily contradictory. The U.S. wording emphasizes quality, while the U.K. listing gives consumers a market-specific consumption window. For a U.S. household, the safest simple rule is still to refrigerate the opened bottle.

Supermarket storage makes sense because the bottle is sealed. Ordinary commercially packaged Heinz ketchup is shelf-stable before opening, so it does not need to be sold in the refrigerated section. USDA guidance lists ketchup among shelf-stable foods and recommends keeping such products in a cool, clean, dry place away from extreme temperatures. Its guidance says temperatures below 85°F are best for shelf-stable canned products and warns against storing them above or beside a stove, under a sink, or in a damp garage or basement.
Several preservation hurdles work together:
- Tomato ingredients are naturally acidic.
- The U.S. Heinz ingredient list places distilled vinegar immediately after tomato concentrate.
- Salt and sugar contribute to the product’s preservation environment.
- Commercial processing and sealed packaging limit exposure to contamination while the bottle remains unopened.
Acidic does not mean indestructible. FDA’s regulatory framework for acidified foods uses a finished equilibrium pH of 4.6 or below as an important threshold, but that does not establish the exact pH of every Heinz product. A food can taste sweet or mild while still being chemically acidic, and acidity inhibits the growth of many microorganisms without making spoilage or contamination impossible.
Once the seal is broken, the situation changes. The nozzle and cap can contact hands, utensils, plates, crumbs, raw-food residue, air, and repeated temperature changes. Refrigeration slows quality deterioration and gives spoilage fewer favorable conditions while the bottle is being used.

Safety and quality are not the same question
This is the distinction that gets lost in the fridge-versus-cupboard debate.

Safety: A short period at room temperature is not automatically a crisis for commercial ketchup.
Quality: Refrigeration is better for preserving flavor, color, texture, and overall condition.
Household rule: Refrigerate opened Heinz ketchup, particularly when the bottle will be used slowly.
Heinz’s U.S. wording, “for best results,” is a quality recommendation rather than an explicit claim that every opened bottle left on a counter for a few hours is unsafe. Likewise, the fact that ketchup is acidic does not provide a blanket guarantee for a bottle left warm for weeks, repeatedly contaminated, or showing spoilage.
Do not apply the standard two-hour rule for perishable foods mechanically to ketchup. FDA’s time-and-temperature guidance is aimed at foods that require refrigeration. That does not mean the rule grants permission to keep any opened ketchup bottle indefinitely in a warm pantry. Storage time, temperature, formulation, container condition, and handling all matter.
How long does opened Heinz ketchup last?
There is no single worldwide answer because Heinz instructions differ by market.
- United States: USDA FoodKeeper-derived guidance commonly reproduced by university extension sources lists refrigerated opened ketchup at approximately six months for best quality. The FoodKeeper resource and an Iowa State University Extension summary are useful references.
- United Kingdom: The current Heinz U.K. listing says to refrigerate opened ketchup and eat it within eight weeks.
The six-month figure is not a precise expiration date. It is principally a best-quality guideline that assumes proper refrigeration, an intact bottle, ordinary handling, and no signs of spoilage. A bottle does not necessarily become unsafe on the next day, but it may lose quality over time.

Conversely, six months should not be treated as a universal Heinz instruction. It does not override the U.K. eight-week listing, a shorter instruction on your bottle, or a visible sign that the ketchup has spoiled.
What to do if you left ketchup out
Left out during a meal or overnight
Do not automatically throw out a commercially packaged Heinz bottle solely because it sat on the table during dinner or overnight. Return it to the refrigerator, close the cap, and inspect it before use. This is practical risk guidance based on commercial ketchup’s documented shelf-stable nature, not a manufacturer-issued guarantee for every room-temperature scenario.
If the bottle was open, dirty, used with contaminated utensils, or exposed to unusual heat, be more conservative. When in doubt, replacing a bottle of ketchup is preferable to taste-testing a questionable product.
Left in the pantry for weeks or months
There is no authoritative universal pantry deadline for every opened Heinz product and every household condition. A cool pantry, a tightly closed bottle, quick turnover, and clean handling are different from a warm kitchen where the bottle is used slowly and the nozzle is repeatedly touched.
Do these 3 things before closing this tab:
1Scan for outdated or missing drivers - takes under a minute2Repair Windows errors before they cause bigger problems3Fix the driver behind crashes, sound loss and screen glitchesIf an opened bottle has remained in the pantry for months, especially in warm conditions or with questionable handling, replacement is the conservative choice. Do not assume that a normal smell proves it is safe; some harmful organisms do not produce obvious sensory changes.
Left in a hot car, garage, windowsill, or beside the stove
Heat accelerates quality loss and can damage shelf-stable products. USDA recommends cool, dry storage, advises against extreme temperatures, and warns that temperatures above 100°F are harmful to canned goods. A vehicle, sunny windowsill, hot garage, or spot beside a stove is therefore unsuitable for long-term ketchup storage.
Discard the bottle without tasting it if it is swollen, leaking, cracked, spurting, or otherwise damaged. If it experienced prolonged, intense heat but looks normal, there is no universal Heinz guarantee that makes it safe to keep; replacing it is the prudent option.

When ketchup should be discarded
Do not taste-test ketchup that appears spoiled. Discard the entire bottle if you see or notice:
- Mold, including mold around the cap or nozzle;
- Unusual or persistent bubbles, foam, pressure, or spurting;
- A swollen, leaking, cracked, or damaged container;
- A fermented, foul, or otherwise off odor;
- An abnormal color or texture accompanied by other suspicious changes.
For a high-moisture condiment, scraping mold from the surface is not a safe recovery method. USDA guidance recommends discarding moldy condiments because mold can extend below the visible surface. See the USDA mold guidance and Penn State Extension’s spoilage-sign guidance.
An ordinary best-by or best-before date generally indicates quality rather than an automatic safety deadline for an intact shelf-stable product. But the date does not excuse poor storage, and any spoilage sign overrides the date question. Consult USDA’s food-product dating guidance for the distinction between quality dating and safety.
How to keep an opened bottle in the best condition
- Refrigerate it promptly after opening. Keep the refrigerator at 40°F or below, consistent with FDA food-storage guidance.
- Close the cap completely. This limits exposure to air and contamination.
- Keep the nozzle clean. Wipe the cap and dispensing opening when ketchup accumulates there.
- Use clean utensils. Never dip a used utensil into the bottle.
- Do not return contaminated ketchup. Ketchup that has touched raw meat, a dirty utensil, or a used plate should not go back into the bottle.
- Mark the opening date. This is especially helpful for large bottles used slowly.
- Follow the bottle’s own instruction. A product-specific label or shorter market-specific time limit takes priority over general guidance.
Refrigeration does not preserve ketchup forever, and it cannot repair a bottle that was already contaminated or visibly spoiled. It is a preventive storage step, not a rescue procedure.

Restaurant ketchup is not a perfect comparison with a household bottle. A busy restaurant may use and replace a bottle quickly, while a home bottle can remain open for months. Food-service operations may also clean dispensing bottles, replace low bottles, or follow procedures that are different from home handling.

Experts interviewed by Epicurious have identified rapid turnover as one reason ketchup commonly remains on restaurant tables. Some establishments may refill bottles, but combining old ketchup with new ketchup can create a sanitation and traceability problem unless the bottle is properly emptied and cleaned. Do not assume that every restaurant uses the same procedure, or that every table bottle is necessarily handled correctly.
Restaurant requirements also vary by location. The 2022 FDA Food Code is a model code, not automatically the law everywhere; states, local authorities, tribal authorities, and territories may adopt or modify it. A restaurant’s practice therefore does not override the storage instructions on a household bottle.

Do Heinz specialty ketchups need refrigeration?
Do not generalize from one Heinz bottle to every product. Formulations and label instructions can differ, including for imported products.
Current U.S. Heinz pages for regular ketchup, Simply Ketchup, No Sugar Added Ketchup, vegetable-blend ketchup, and pickle-flavored ketchup recommend refrigeration after opening. Examples include:
Recommended Free Tools
- Simply Tomato Ketchup, which uses a different sweetener formulation but retains the refrigeration recommendation;
- Heinz No Sugar Added Ketchup, which also says to refrigerate after opening;
- Heinz Pickle-Flavored Ketchup, where refrigeration helps preserve the pickle flavor.
Lower sugar, altered ingredients, vegetable blends, added flavors, and imported recipes do not automatically make a ketchup more or less shelf-stable. Check the exact label rather than assuming that all ketchup follows the same formula or consumption window.
Homemade ketchup is a different product
Homemade ketchup should not automatically be treated like commercially processed Heinz ketchup. A home recipe may have a different acidity level, more water or fresh ingredients, no validated thermal process, no commercial sterile packaging, and more opportunities for contamination from utensils and containers.
Oregon State University’s homemade-ketchup guidance recommends storing a homemade version in an airtight container in the refrigerator for three to four weeks. For a shelf-stable home-canned version, use an up-to-date, research-tested recipe and the correct processing procedure. The National Center for Home Food Preservation advises against improvising preservation procedures.
Unless you have followed a tested preservation method designed for that recipe, homemade ketchup belongs in the refrigerator and should be treated as a short-life refrigerated food.
What about single-serving ketchup packets?
An intact, commercially sealed packet is a different package format from an opened bottle. Follow the packet’s own storage instructions and printed date. Once opened, use it promptly rather than treating the contents like a sealed packet or a freshly refrigerated bottle.
The simplest rule to remember
Supermarket placement answers the unopened-bottle question; it does not settle what to do after the cap is broken. Commercial Heinz ketchup can sit unopened in a cool pantry because its formulation, processing, and sealed package make it shelf-stable. After opening, refrigeration is Heinz’s current preferred practice in the United States and an explicit instruction on the cited U.K. listing.
A short accidental period at room temperature does not automatically require panic. A bottle left warm for weeks or months, exposed to high heat, handled carelessly, or showing mold, gas, leaking, swelling, or an off odor should not be rescued by smell-testing or scraping the surface.
The Bottom Line
Bottom line: Keep unopened Heinz ketchup in a cool, dry pantry. Refrigerate it after opening, use the exact time limit on your market’s label, and discard the entire bottle if it shows mold, unusual gas or foam, leaking, swelling, damage, or an off odor.
