Radishes, leaf lettuce, spinach, peas, early-planted carrots and—where spring warms quickly—summer squash may be ready to harvest in May. The date is a regional possibility, not a guarantee: planting time, variety, soil temperature, frost risk and local weather all affect when vegetables are ready. Look for each crop’s maturity cues rather than relying on the calendar alone.
Six vegetables that may be ready to harvest in May
The timing below combines Iowa State University Extension’s crop guidance with regional schedules from Delaware, North Carolina and Florida. Days to maturity are practical estimates from Iowa State’s guide, not promises for every seed variety or garden.

Why May harvest timing varies
A May harvest depends on when a crop was planted and how it grew, not simply on the month. Variety, soil temperature, frost risk and local weather all matter. Iowa State University Extension and Outreach says, “Cool-season vegetables can be planted once soil temperatures reach 50°F.” That threshold is a useful regional planting cue, not a guarantee of a particular harvest date.
Delaware’s calendar demonstrates that early-planted radishes, peas, spinach and lettuce can have May harvest windows in that region, while its guidance notes that typical periods vary by variety and local weather. The calendar’s frost-date advice is specific to Delaware and should not be treated as a nationwide schedule. Likewise, NC State’s February-planted carrots and spinach are a raised-bed scheduling example, not a universal calendar.

Cool-season crops can lose quality as temperatures rise. In Iowa, lettuce, radishes and spinach may finish by early to mid-June; warmer conditions can make lettuce bolt, radishes fibrous and peas less productive. If plants are showing their maturity cues, harvest promptly rather than waiting for an exact number of days.

How to judge whether vegetables are ready
- Check the edible part: Use root diameter for radishes, leaf length for lettuce and pod or seed development for peas.
- Watch the plant: Spinach should be harvested as it begins to bolt, while carrot shoulders can indicate root development below the soil.
- Use maturity days as a guide: Count from planting, but account for the variety and growing conditions; the listed ranges do not override visible cues.
- Respond to heat: When cool-season crops approach maturity during warming weather, harvest before quality declines.
