Entrepreneurs in Bengaluru Built a Robot Chef. Could This Be the Future of Food?

Bengaluru’s robot-chef story began with a 2018 prototype that automated dispensing, heating and stirring—but still needed prepared ingredients. Current startups point toward narrower, commercial food automation.

Yes—but probably not in the way the headline suggests. Bengaluru’s 2018 Mechanical Chef was a recipe-bound cooking appliance, not a humanoid that could shop, chop, improvise and clean. It reportedly made about 30 vegetarian dishes after a person prepared and loaded the ingredients. By 2026, Bengaluru’s stronger evidence points to a narrower future: automated cooking appliances, beverage kiosks and limited-menu food outlets operating where ingredients, recipes and cleaning can be tightly controlled.

What the 2018 Bengaluru robot actually did

The original story, published on August 16, 2018, described Mechanical Chef as a wooden machine roughly the size of a large gas hob. It used a rotating drum of spice canisters, three induction plates, robotic spatulas and volumetric cups. The reported prototype could prepare around 30 vegetarian Indian dishes. Rice, dal and a vegetable dish could cook at the same time in about 40 minutes, according to Scroll’s report.

That automation began only after a person had washed, chopped and portioned ingredients, then loaded vegetables, rice, spices, oil and water. The machine automated dispensing, heating, stirring and recipe sequencing; it did not automate the whole kitchen.

The project reportedly received a ₹5 lakh Nidhi Prayas grant, also referenced in a Department of Science and Technology incubation report. Mechanical Chef planned a 16-unit field test and discussed a later prototype priced at about ₹25,000, but those were plans reported in 2018—not verified evidence that the test, mass production or that price was achieved.

Why Indian cooking is both promising and difficult to automate

The founders’ engineering insight was sound: many Indian recipes use repeatable sequences of adding ingredients, stirring and applying heat. That structure is easier to encode than an open-ended human cooking process.

Yet the ingredients are unusually variable for a machine. Powders differ in grain size, moisture and stickiness. They can clump, bridge inside a hopper or fail to flow consistently by gravity. Chopped vegetables vary in size and water content. Oil, water, heat and timing interact differently across dishes. An open pan can spill when a robot stirs, while “done” may depend on texture and moisture rather than temperature alone.

Cleaning is another engineering problem. A device moving from a nut-containing curry to a supposedly nut-free dish must prevent residue and verify that food-contact parts have been cleaned. A recipe can be technically repeatable yet still taste wrong to a household because texture, browning and seasoning are judged culturally and personally.

“Robot chef” covers four very different machines

Category What it automates What it generally still needs
Automated cooking appliance Dispensing, heating, stirring and recipe sequencing Shopping, washing, chopping, loading and broad cleanup
Food kiosk Ordering, preparation, packing and serving within a fixed menu Ingredient supply, maintenance, sanitation and site operations
Commercial cooking robot Repetitive cooking or assembly at scale Procurement, menu decisions and exception handling
Humanoid or general-purpose chef Potentially broad physical kitchen work Most of the required capability remains aspirational

Mechanical Chef belonged mainly in the first category. The current Nosh product also appears to be a countertop cooking appliance, not a free-moving domestic robot. There is no established evidence that the 2018 Mechanical Chef became Nosh.

What Bengaluru’s food-automation market looks like in 2026

Nosh: an automated home appliance

Nosh, marketed by Bengaluru-based Euphotic Labs/Nosh Robotics, currently lists a price of ₹89,999. Its website claims more than 500 chef-created recipes, programmable customization of salt, spice and oil, automated spice dispensing, app control, over-the-air updates, up to two years’ warranty and seven years of software support. Those are vendor claims, not independent performance results.

The public materials do not establish actual cooking speed, long-term reliability, offline operation, cleaning time or every unsupported ingredient. A buyer should confirm those points, along with service coverage, returns and cancellation terms, before paying.

Epicure Robotics: drinks before full meals

Epicure Robotics describes its PARK platform as a gantry system combining ingredient dispensers, blenders, frothers, heaters and software for recipes, inventory, maintenance and diagnostics. The company says its Smoothie Bar makes smoothies and protein shakes in under 99 seconds, while Zoe offers more than 40 drinks in under 60 seconds. It lists deployments in Bengaluru technology parks and corporate offices.

Drinks are a commercially sensible starting point: ingredients, volumes and cleaning routines are easier to standardize than a broad Indian kitchen menu. Epicure does not publish equipment pricing on the reviewed page; deployment is handled through a business contact route.

Xook: an autonomous kiosk

Xook describes an approximately 60-square-foot autonomous kiosk for hot and cold bowls, cafeteria service, restaurant extensions and delivery-oriented “dark cafe” locations. Its site lists computer vision, edge computing, recipe software and modular dispensing, cleaning and delivery hardware. Prior Bengaluru pilots listed by the company include CoinSwitch, BHIVE Premium and Springfields apartment complex.

Those are company-listed pilots, not proof of current profitability or continuous operation. Xook’s site also highlights commercial activity in the United States, while Bengaluru appears under prior pilots. A customer testimonial citing two dishes for ₹178 in October 2022 is a dated statement, not current menu pricing.

Freshot: a broader commercial ambition

Freshot, which says it was built in Bangalore, markets food bots for restaurants, corporate campuses and food entrepreneurs. Its featured Multi Food Bot is marked “Coming Soon.” The company claims future capacity for more than 100 dishes and beverages, automated cooking, packing, dispensing, UPI, card and contactless payments, remote monitoring, inventory alerts and fleet management in a stated 5-by-3.5-by-8-foot footprint.

Those capabilities should be read as product claims, not verified deployments or proven unit economics.

Why commercial kitchens may win before household robots

A campus or kiosk gives automation advantages that a home rarely can: a narrow menu, predictable ingredient deliveries, centralized sanitation, higher equipment utilization and staff nearby to reload or troubleshoot the machine. A household appliance may run once a day; a commercial kiosk can potentially spread its capital and service costs across many orders.

That does not mean a machine eliminates labor. Someone still has to prepare or replenish ingredients, clean food-contact parts, monitor food safety, handle failures, maintain equipment and serve customers. The likely near-term effect is task substitution in standardized environments, not the disappearance of chefs.

How to evaluate a food robot

For a household

  • Count total human time: shopping, washing, chopping, loading, unloading and cleaning—not just the programmed cooking time.
  • Check whether the recipes include the dishes your household actually eats and whether quantities fit your family.
  • Measure counter space, ventilation, power, water and storage requirements.
  • Ask which parts are removable or dishwasher-safe and how allergens are handled.
  • Compare the purchase price and service costs with domestic help, takeaway meals and the value of saved time.
  • Confirm warranty, software-support duration, connectivity requirements, returns and local repair access.

For a restaurant, campus or property owner

  • Throughput: meals or drinks per hour at peak demand, not the time for one demonstration item.
  • Menu breadth: genuinely available recipes rather than theoretical combinations.
  • Changeover: time and waste when switching recipes.
  • Uptime: availability during operating hours and the failure-recovery process.
  • Food safety: temperature records, allergen controls, sanitation and traceability.
  • Unit economics: equipment, lease or service fees, ingredients, labor, utilities, maintenance and waste.
  • Site fit: floor area, refrigeration, drainage, ventilation, power and replenishment access.
  • Customer acceptance: whether speed and consistency justify less human interaction.

For investors

The key question is not whether a robot can cook one dish. It is whether the company can deliver safe, repeatable food at a lower total cost—or at a quality and convenience level customers will pay for—than a human-staffed kitchen. Request paid-deployment data, repeat purchases, uptime and failure logs, gross margin per order, maintenance costs, customer-acquisition cost, machine payback and evidence that new recipes do not require expensive hardware redesign.

The unresolved risks

  • Ingredient handling: powders may bridge or clump, while fresh ingredients vary in size, density and moisture.
  • Cooking quality: stirring may distribute heat unevenly, and texture can require visual or tactile judgment.
  • Cleaning: oil, starch and dairy residue can accumulate; switching between allergen-containing and allergen-free food needs a verifiable process.
  • Software and connectivity: app control and updates create dependence on software support and potentially an internet connection.
  • Safety and liability: operators must address burns, hot surfaces, electrical and fire risks, child access, automatic shutdown, undercooking and allergen mistakes.
  • Labor: preparation, replenishment, sanitation, field service, recipe development, quality assurance and customer support remain necessary.

Marketing language such as “autonomous,” “hygienic” or “AI-powered” is not a substitute for published safety certifications, sanitation procedures, operating logs or independent testing.

Verdict: more food robots, fewer universal robot chefs

Bengaluru’s experiment was real, but the 2018 prototype should be understood as a historical engineering demonstration rather than a confirmed consumer-product launch. The current market shows a more practical path: recipe-bound home appliances, drinks and smoothies, limited-menu kiosks and larger commercial systems.

The future of food is therefore likely to contain more robots without producing a single machine that cooks like a human. The systems most likely to scale will automate specific, repetitive and measurable tasks in homes, offices, campuses, hospitals, airports and industrial kitchens—while people continue to supply ingredients, judgment, maintenance and accountability.
