That is a manufacturer claim—not an independently verified result for every food, cutting style, or cook. The company’s founder has described robot testing that included tomato cuts, but the reported findings also come from the company. The C-200 is an 8-inch rechargeable chef’s knife; its maker says it remains usable as a regular knife when the ultrasonic feature is off.
What the “half the effort” claim actually means
Seattle Ultrasonics’ product page says, “Switch on the ultrasonics and cut with up to 50% less force.” The phrase “up to” matters: it describes the company’s maximum claimed reduction, not a guaranteed result in every kitchen task. The product page presents the figure as the maker’s claim.
In a January 23, 2026 interview, founder Scott Heimendinger described company testing in which a robot tested 21 popular chef’s knives and collected more than 100,000 data points. He said the company measured more than 50% lower force for tomato cutting with ultrasonic action on than off. That is a founder’s account of the company’s tests, not independent verification. The available sources do not establish a peer-reviewed study, third-party replication, or one effect size that applies to other foods, cutting motions, and users.
The company’s Quantified Knife Project also publishes profiles and cutting results for conventional chef’s knives. Those company-published comparisons illustrate that standard knives can differ in cutting performance; they are not independent confirmation of the C-200’s headline claim.

What the C-200 is and how it works
The C-200 is Seattle Ultrasonics’ 8-inch chef’s knife for home cooks. The maker says piezoelectric PZT-8 ceramic crystals make the blade resonate at an ultrasonic frequency of more than 30,000 vibrations per second. This is not described as a conventional vibrating motor. Seattle Ultrasonics says the vibration reduces cutting force, improves food release, and makes the blade behave as though it is sharper than its physical edge alone. These are product claims, not guarantees that the knife will eliminate sticking or substitute for technique.
The listed blade material is Japanese AUS-10 stainless steel, hardened to 60 HRC. The maker says the knife can still be used as a regular chef’s knife when the ultrasonic action is off. It is rechargeable by USB-C; a wireless charging tile is offered separately, and the company also lists a knife-and-charger bundle. At the time the product listings were indexed for this article, Seattle Ultrasonics listed the C-200 at $399 and marked it sold out. Its homepage also showed a $499 knife-and-charger bundle, marked sold out. Those are time-sensitive listing details, not a promise of current price or stock; check the company homepage and product page before making a purchase decision. Care, sharpening, and what it is not designed to do
Seattle Ultrasonics says to hand-wash the knife and describes it as IP65-rated. Its edge can be sharpened like a conventional knife; the company also describes an assisted-sharpening experience using a built-in sensor. Ultrasonic action does not make the edge self-sharpening, so ordinary edge care still applies. Confirm current guidance on compatible sharpening tools and accessories with the manufacturer.

The maker advises keeping a cleaver handy for tasks such as splitting lobster shells or cutting frozen meat. The C-200 is a chef’s knife, not a replacement for a cleaver in those jobs.

- Task fit: A chef’s knife is not the right tool for frozen meat or shell splitting; the maker recommends a cleaver for those jobs.
New Atlas mentioned 369Sonic’s ultrasonic knife in September 2025 launch coverage, but that historical mention does not establish its current price, availability, or configuration. Treat it as a lead for further comparison, not a verified alternative. Conventional knives can also be compared through Seattle Ultrasonics’ company-published Quantified Knife Project, with the caveat that those results are the company’s own testing.
