A diner-inspired meal at home can pair a griddle-cooked burger with breakfast-style sides, then add pie or a milkshake if you like. A broad griddle is useful for cooking several portions or following a smash-burger approach, but a heavy skillet can handle hash browns too; you do not need a restaurant-sized station to make diner night.
There is no single menu that defines every diner. Home-cooking collections and restaurant menus offer a range of familiar choices, including omelets, pancakes, hash browns, burgers, sandwiches, pies, and milkshakes. Choose a few dishes that fit your equipment and the number of people you are serving.
Build a diner-inspired menu
Think in combinations rather than trying to reproduce a whole restaurant menu. For example, serve burgers with hash browns, or make pancakes and eggs with a milkshake or pie for dessert. These are representative ideas, not a universal diner standard.
- Griddle main: Burgers are a natural fit for a broad, flat cooking surface.
- Breakfast plate: Omelets, pancakes, and hash browns offer familiar diner-style options.
- Sandwich night: Pair a sandwich with a crisp side and a simple salad.
- Dessert or shake: Pie and milkshakes can round out the meal, if desired.
Choose a cooking surface that fits the meal
A griddle is useful when a recipe calls for a broad, flat surface or when you want to cook multiple portions at once. A skillet remains a practical choice for a smaller meal or for hash browns. The sources establish these uses, but do not provide controlled tests that rank one type of equipment over another.

| Cooking surface | Useful for | Consider |
|---|---|---|
| Griddle | Burgers and hash browns; a broader area for cooking portions at once | Check that the griddle fits your stovetop or outdoor cooking area. A large griddle station is one recipe’s setup, not a requirement for home cooking. |
| Skillet | Hash browns and other skillet dishes | A skillet may be enough if your menu is small or you already own one. |
A reversible stovetop griddle is one possible upgrade for cooks who expect to make griddle dishes often, rather than a must-have purchase. A large metal griddle spatula is named in one smash-burger recipe and may be useful for that style of cooking, but it is not necessary for every diner-style meal.
Recipe methods: burgers and hash browns
Smash burgers on a griddle
Food Network Kitchen’s Blackstone Classic Smash Burgers recipe is designed for a 36-inch griddle station. It calls for 80/20 ground beef, American or Cheddar cheese, hamburger buns, a large metal spatula, and a 10-minute griddle preheat. That is the setup specified by that recipe, not a requirement for every home cook. A home griddle or heavy skillet may be a more accessible option, though it is not the same cooking setup.

Hash browns on a skillet or griddle
There is more than one way to make hash browns. Food Network’s version starts with frozen shredded potatoes packed into a patty on a griddle, cooking the first side for about five minutes and finishing the other side until golden and crisp. Lodge’s fresh-potato method uses shredded russet potato, a brief saltwater soak, and thorough squeezing in a clean towel before cooking on a heated skillet or griddle. Martha Stewart recommends combining butter and oil for flavor and crispness. These are source-specific approaches, not one tested, combined recipe.
- Choose the method that matches your potatoes and cooking surface: frozen shredded potatoes for Food Network’s griddle patty, or fresh russet potato for Lodge’s approach.
- For Lodge’s method, soak the freshly shredded potato briefly in saltwater and squeeze it thoroughly in a clean towel.
- Spread the potato on a heated skillet or griddle and flatten it for surface contact.
- Cook for 4–5 minutes without disturbing it, then flip and cook the other side for 4–5 minutes.
Lodge’s recipe, dated June 2, 2025, describes this as a way to “Bring a diner-style breakfast to your own kitchen.”

Make the equipment choice practical
Before buying anything, consider how many portions you want to cook at once, whether the equipment fits your existing stovetop or outdoor cooking area, and whether the dish needs a broad flat surface. If a skillet already handles the menu you plan to make, you may not need a separate griddle.
For cooks who make burgers or hash browns on a flat surface regularly, a reversible stovetop griddle may be worth considering. A cast-iron skillet is another option for skillet cooking and hash browns. These are use-case suggestions, not product rankings: the cited sources do not compare cookware in controlled tests.

FAQ
What are some classic American diner dishes to make at home?
Home-cooking collections and restaurant menu examples include burgers, omelets, pancakes, hash browns, sandwiches, pies, and milkshakes. Individual menus vary; no one list defines every diner.
Do I need a large griddle to make diner-style burgers?
No. The Food Network smash-burger recipe specifies a 36-inch griddle station, but the dossier does not establish that every home cook needs one. A home griddle or heavy skillet may be more accessible, though the cooking conditions are not identical.

Can I cook hash browns in a skillet instead of a griddle?
Yes. Lodge’s fresh-potato method explicitly allows a heated skillet or griddle. It advises squeezing the shredded potato dry, flattening it for surface contact, and cooking each side for 4–5 minutes.
Should I buy a griddle or use a skillet?
Choose based on the portions you plan to make, your available cooking area, and whether your menu benefits from a broad flat surface. The cited sources describe uses for both griddles and skillets, but do not provide a comparative product test.
