“Diced” and “chopped” are not interchangeable: dicing aims for evenly sized pieces, while chopping can leave irregular ones. Mincing means cutting food very finely. This guide covers six useful cuts—chop, mince, dice, julienne, batonnet and chiffonade—and separates those finished shapes from knife motions such as slicing and drawing.
There is no single universal list of six basic cuts. The six here are a practical teaching set, not a canonical ranking; recipes and culinary guides may use other names or size standards.
Six cuts: what shape you are making
Cut names describe the result on the board. The dimensions below follow Utah State University Extension’s guide; other culinary standards may differ, so follow the recipe when it specifies a size.

USU Extension also defines chiffonade, a cut for leafy vegetables and herbs: stack or roll the leaves, then cut them into fine strips. Its handout does not give a standard width for those strips. Chiffonade is included here as a useful leafy-green cut, although it is a seventh term rather than one of the six in the table. Choosing between chop, mince and dice
- Chop when the recipe accepts irregular pieces.
- Mince when it calls for pieces small enough to be very fine; the term describes the result, not a separate blade path.
- Dice when pieces should be cube-shaped and consistent. Use the size named in the recipe, since “diced” alone does not specify a cube dimension.
Knife cuts are shapes; knife motions are actions
A slice or draw describes how the blade moves, not the finished size or shape. The same motion may be used while preparing ingredients for different cuts. Utah State University Extension’s knife guide describes three basic motions:
Draw cut
Use the tip and pull the blade through the food. USU notes that this motion is especially useful for cutting strips.

Slice
Keep the tip on the board and push the blade down and away through the food.
Chop
Use the full blade in a controlled motion while keeping the tip on the board. Here “chop” names a motion; when a recipe says to chop an ingredient, it usually describes an irregular result. Context tells you which meaning is intended.

How to practice safely
- Set up a stable board. Choose wood or plastic rather than glass, ceramic or tile, which can be hard on a knife edge. If the board shifts, stabilize it before cutting.
- Use a sharp knife and controlled strokes. A general-purpose chef’s knife is a versatile option for practicing chopping, slicing and dicing; it is useful, not a required purchase. Avoid forceful hacking.
- Make round produce stable. Trim a thin slice from one side so it rests flat instead of rolling.
- Guide with a claw. Curl the fingertips of your guiding hand inward and keep them behind your knuckles as the blade moves. This helps keep fingertips out of the blade’s path, but no grip eliminates injury risk.
- Practice one target shape at a time. For dice, first cut even slabs or sticks, then cross-cut them into cubes. For strips, aim for the stated width and length; prioritize a controlled blade path over speed.

Wash produce and keep raw meat prep separate
Rinse fruits and vegetables under running water before cutting. Use separate cutting boards for produce and raw meat, poultry or seafood, and wash work surfaces and utensils with hot, soapy water after use. FoodSafety.gov’s four steps to food safety provides this guidance.
