Cold Stratification for Seeds: How to Chill Seeds Before Sowing

Cold stratification is moist chilling for seeds with particular dormancy requirements. Learn how to check a species’ needs, chill seeds in a refrigerator, and choose outdoor winter sowing.

Cold stratification is moist chilling: keeping certain seeds cool and damp long enough to meet a dormancy requirement. It is not needed for every seed, and the right temperature and duration depend on the species. Check the seed packet or a species-specific growing guide before starting; once chilling is complete, sow the seeds under their recommended germination conditions.

What cold stratification does

Some seeds have internal, or physiological, dormancy that prevents them from germinating until they experience a period of moisture and cool temperatures. Winter can provide those conditions outdoors; controlled cold stratification recreates them for seed starting. As a joint UF/IFAS educational resource puts it, “Successful stratification requires seeds to be stored in a moist, aerated medium at chilling temperatures for a certain period of time.” UF/IFAS: Seed Dormancy, Stratification

Chilling addresses only certain dormancy types. A hard seed coat may instead need scarification, and some seeds have double dormancy requiring more than one treatment in the appropriate order. Stratification also cannot make a nonviable seed germinate or compensate for unsuitable water, oxygen, light, temperature, or sowing depth. North Carolina State Extension: Propagation

Do your seeds need cold stratification?

Look up the exact species rather than relying on a general rule or common name alone: a common name may refer to different species, and seed lots can vary. Follow the seed packet or a reliable species-specific reference for whether chilling is needed, how long to chill, and when and how to sow afterward.

Examples Illinois Extension identifies as commonly needing stratification include many milkweeds, purple coneflower, false indigo, black-eyed Susan, flowering dogwood, and redbud. Maryland Extension lists 60–90 days of cold-moist stratification for examples including New York ironweed, black-eyed Susan, lyre-leaf sage, white wood aster, golden groundsel, wild columbine, and blue vervain. These examples are not a substitute for checking the exact species. Maryland also notes that seashore mallow and cardinal flower do not require stratification, and most native grasses do not require it, although chilling may improve germination for some. How long should you cold-stratify seeds?

There is no single duration for all seeds. Illinois Extension gives one to three months as a typical range. UNH Extension says many herbaceous and woody species need 60–90 days at 32–50°F, while noting that some have more specific needs. Maryland Extension says most flowering perennials can germinate after 60–90 days of winter cold-moist stratification. Treat these as broad guidance, not a guarantee for an individual species or seed lot.

Use the exact species’ recommendation when available. Do not extend or shorten a treatment just because another plant has a similar common name. Illinois Extension · UNH Extension: Winter Seeding · Maryland Extension

How to cold-stratify seeds in a refrigerator

  1. Confirm the treatment. Check the seed packet or species-specific guidance for the required chilling duration and conditions.
  2. Prepare a moist medium. Use damp paper towel, sand, peat, or vermiculite. The medium should be moist, not waterlogged. North Carolina State Extension describes mixing seeds with an equal volume of moist medium. North Carolina State Extension
  3. Pack and label. Place seeds and medium in a closed bag or covered container. Label it with the species and start date so you can track the treatment.
  4. Chill and check periodically. Illinois Extension gives 33–40°F as its general refrigerator range. That is not a universal prescription: UNH discusses 32–50°F for many species in natural or managed chilling contexts. Follow the exact species’ instructions where provided, and check that the medium has not dried out, become excessively wet, or developed mold. Illinois Extension · UNH Extension
  5. Sow when treatment is complete. Follow the species’ recommended sowing depth, light, warmth, and moisture conditions. If a seed has already sprouted in the container, handle it gently and sow it promptly.

Refrigerator treatment or outdoor winter sowing?

Fall sowing or winter sowing can let suitable seeds receive natural cold and moisture. A refrigerator gives you more control over handling and timing, particularly when it is no longer practical to sow outdoors at the right time. The better method depends on the seed’s requirements and the conditions available.

Temperature and moisture Container and medium make it easier to monitor moisture and keep seeds together; follow species-specific temperature guidance. Seeds experience local outdoor conditions, which may or may not provide the needed duration and moisture.
Timing and space Useful when outdoor sowing at the right time is no longer practical; requires room for a labeled container in the refrigerator. Can provide natural chilling without using refrigerator space, if timed and sited appropriately.
Seed loss or movement Seeds remain contained while chilling. Seeds may be eaten by birds or moved by runoff, especially on slopes.
What determines success The species’ exact dormancy and sowing requirements determine whether either approach is suitable. UNH Extension · UF/IFAS

Frost or snow seeding is also used in some forage and turf contexts; it is not automatically a substitute for a treatment specifically needed to break seed dormancy. UNH Extension

After chilling: sowing and troubleshooting

Cold treatment prepares a seed for germination; it does not complete germination by itself. After the required period, use the species’ directions for sowing depth, light exposure, warmth, and moisture. If seeds do not germinate, consider whether they were viable and whether the species needs a different dormancy treatment or different germination conditions. Do not assume that more chilling will solve every problem.

Some hard-coated seeds need scarification rather than cold stratification, and some require both treatments in a specified order.
