What is carob?
Carob refers both to the tree and to its edible pods. The evergreen species Ceratonia siliqua is adapted to Mediterranean climates. Inside its pods, the pulp and seeds have different food uses: the pulp can be milled into powder, while the seed endosperm provides material for locust bean gum. The USAID-hosted monograph describes those distinct uses, and the FAO identifies the seed endosperm’s galactomannan as locust bean gum.
What is carob powder used for?
Carob powder is made from pod pulp and is used in baked goods, candies, beverages, and other products. USDA’s Agricultural Research Service describes it as an alternative ingredient to cocoa powder, not a flavor-identical replacement. It has natural sweetness and a distinct, somewhat nutty taste. A recipe may need adjustment to suit its flavor; the available sources do not establish one universal substitution ratio.

Carob powder is not locust bean gum
Carob powder comes from the pod’s pulp. Locust bean gum comes from the seed endosperm and is a galactomannan used as a food additive. They are separate ingredients with different sources and roles. The FDA database lists “CAROB BEAN, EXTRACT (CERATONIA SILIQUA L.)” with the technical effect “FLAVORING AGENT OR ADJUVANT.” That listing concerns the named extract; it does not establish identical regulatory status for carob powder or locust bean gum.
Nutrition and health claims
Carob’s nutritional composition can differ by product and processing, so a single nutrition profile should not be assumed to represent every powder. In a 2009 study, the commercial flour sample had 40% less total protein than the home-prepared sample studied; the finding reflects those two samples and does not show that commercial products are generally lower in protein. The study also reported sucrose as the main sugar in both samples.

A 2018 pilot study reported that 60% of the sampled carob products stated nutritional values on their labels, and that most of those labels were consistent with the study’s findings. That limited sample is not a current audit of all products or markets. When choosing a product, check its ingredient list, serving size, and nutrition label rather than relying on a universal figure.
A review indexed in PubMed discusses proposed nutritional, biochemical, and clinical applications of carob, but the available record does not establish therapeutic benefits from ordinary consumption. Do not rely on carob to treat reflux, diabetes, diarrhea, high cholesterol, cancer, or another medical condition.

How to choose carob powder
- Match it to the recipe: Look for powder intended for baking, beverages, or the particular use you have in mind.
- Read the ingredient list: Check whether sweeteners or other ingredients have been added.
- Check the nutrition panel: Compare serving sizes and product-specific values rather than assuming all carob powders are alike.
- Consider flavor: Expect a naturally sweet, nutty taste that differs from cocoa.
- Look for processing details: If the seller specifies roasting or another process, consider whether that description suits your intended recipe.
Where the carob tree grows
Carob is a small-to-medium broadleaf evergreen adapted to Mediterranean climates. The USDA Forest Service describes deep roots and drought-adapted leaves as ways the tree manages dry seasons. It reports typical heights of 8–15 metres, with heights up to 20 metres under ideal conditions. These characteristics make climate an important consideration for anyone thinking about growing a carob tree; they do not mean it is suitable for every location.
