Can Pour Height Improve Pour-Over Coffee—and Let You Use Fewer Beans?

A higher, coherent pour can increase mixing and measured TDS in one V60 experiment. The study did not test smaller doses or show that higher TDS tastes better.

A higher pour can mix a coffee bed more forcefully—but only while the water falls in a continuous, coherent stream. A 2025 University of Pennsylvania study found that this could raise measured coffee concentration in its setup. It did not test a smaller coffee dose or establish that the result tastes better, so “fewer beans” remains a possibility to test at home, not a proven saving.

What the study found about pour height

In a 2025 paper in Physics of Fluids, University of Pennsylvania researchers Ernest Park, Margot Young, and Arnold J.T.M. Mathijssen investigated how a water jet mixes a bed of coffee grounds. A focused stream striking the bed can excavate a crater, push grounds outward, and set off repeated avalanche-like movement that recirculates grounds and water.

That effect depends on stream integrity. A stream that breaks into droplets before it hits the grounds loses the focused-jet mixing effect. Park’s practical recommendation, as reported by the American Institute of Physics (AIP), was to pour as high as possible while maintaining laminar flow—that is, while the stream remains intact at impact. Young likewise cautioned that a thin jet can break into droplets and mix grounds less effectively. AIP’s coverage of the study.

Does a higher pour mean you can use less coffee?

That has not been demonstrated. The study’s reported real-coffee trials used 10 g of grounds and 150 g of water at 95°C throughout. They did not compare different coffee doses, so the results cannot establish how much less coffee—if any—would produce an equivalent cup.

In those trials, researchers used a clear Hario V60 with a paper filter and compared thick and thin jets poured from 0, 25, and 50 cm. Approximate total dissolved solids (TDS) readings transcribed from the study’s figure show the thick jet rising from about 1.21% at 0 cm to 1.45% at 25 cm and 1.67% at 50 cm. For the thin jet, the readings were about 1.56%, 1.63%, and 1.63%, respectively. These are approximate results from that setup, not targets for every coffee or brewer.

The measurements suggest that height mattered more when the jet stayed thick and focused. They do not establish a 10% reduction in beans or any other specific saving. And TDS measures dissolved material in the beverage; it does not tell you whether people prefer the flavor. The study did not include a tasting panel or blinded sensory test.

How high should you pour into a V60?

The study does not establish one ideal height for a home V60, or a universal pour rate. Its 25 cm and 50 cm test heights describe experimental conditions, not instructions that every brewer should copy. In practice, use the highest height at which you can still direct an unbroken stream onto the bed. If your pour turns into scattered droplets, lower it.

More agitation is not automatically better. It may improve wetting and mixing, but it can also move fine particles and slow drainage. Grind size, flow rate, dose, and the particular kettle and coffee all affect what happens in the bed.

Test pour height and dose at home

A controlled comparison helps separate the effect of height from changes in recipe or technique. Keep the coffee, grind, brewer, filter, water temperature, and water amount constant while comparing pour heights. The following is a practical home protocol, not a published sensory result:

  1. Choose one coffee and grind it once for the test. Keep the dose, water amount, temperature, V60, and filter the same in each brew.
  2. Make one brew with a low pour, around 2–3 cm above the coffee bed.
  3. Make a second brew with a raised pour, around 10–15 cm, provided the stream remains intact when it hits the grounds.
  4. If you can maintain a coherent stream, try a higher pour as a third comparison. Do not treat 50 cm as a required target.
  5. For each brew, record the coffee dose, water amount, pour timing, total brew time, and final beverage weight. If you have a refractometer, record TDS as well.
  6. Taste the cups blind if you are comparing flavor. Only after comparing heights should you test a lower dose; change one variable at a time.

Separating the tests matters: if both height and dose change in the same brew, you will not know which change caused a difference in strength, drainage, or flavor.

Will a 50 cm pour make coffee bitter?

The study does not establish a flavor outcome at 50 cm, including whether the coffee becomes bitter. Its reported comparison measured TDS, not taste, and greater TDS does not by itself mean a cup tastes better or worse. A high pour is worth trying only if you can keep the stream coherent and the resulting cup suits your preference.
