Carbon monoxide can build up indoors and kill you; an open damper, open windows, or a carbon monoxide alarm does not make indoor charcoal grilling safe. Cooking directly over a wood-burning fireplace is a separate question: whether it is safe or allowed depends on the specific fireplace, its condition and instructions, and local and property rules.
Why charcoal grilling in a fireplace is unsafe
Charcoal produces carbon monoxide (CO), a poisonous gas that can accumulate indoors without a reliable warning. The U.S. Consumer Product Safety Commission says never to use charcoal to cook or provide heat inside enclosed areas such as homes and garages because CO can kill. Its warning applies even if the charcoal is placed in a fireplace: a flue does not make an indoor charcoal grill safe.
Opening doors or windows is not adequate protection. The German Federal Institute for Risk Assessment (BfR), reporting work with the German Federal Institute for Materials Research and Testing (BAM), advises against burning charcoal indoors for grilling, cooking, or heating. In an experiment described by BfR, 800 grams of glowing charcoal in a 19-cubic-metre chamber produced CO concentrations above 3,000 ppm after two hours. That is an experimental result, not a prediction for every room or fireplace, but it illustrates why ventilation should not be treated as a safeguard.
A CO alarm can warn of danger, but it does not make indoor charcoal use acceptable. BfR notes that CO alarms detected the gas in its experiments while smoke detectors did not sound. Do not use an alarm, open damper, or screen as a reason to bring charcoal indoors.

Can you cook over a wood-burning fireplace?
Cooking directly over a traditional wood fire is different from using a charcoal barbecue inside. The safety guidance cited here does not establish that every residential fireplace is suitable for cooking, nor does it give universal permission to do so. Fireplace design and condition vary, and local rules, manufacturer instructions, leases, and other property restrictions may apply.
Before cooking over a wood fire, check the fireplaceâs manual or ask its manufacturer, confirm applicable local and property rules, and have a qualified chimney professional assess the fireplace if suitability is uncertain. If it is confirmed as suitable, use only appropriate purpose-made equipment and follow the fireplace instructions. A cooking grate does not by itself establish that a fireplace is safe or approved for cooking.

Fireplace precautions that still matter
- Have the fireplace and chimney cleaned and inspected by a professional each year, as the U.S. Fire Administration advises in its Heating Fire Safety guidance.
- Keep anything that can burn at least three feet from the fireplace or other heat sources, following USFA guidance.
- Use a sturdy screen to help contain sparks, and keep children and combustible materials away.
- Keep the damper open while hot ashes remain in the fireplace, as advised by the Indiana Department of Homeland Security.
- Stay with the fire and extinguish it before leaving or going to sleep. Keep suitable fire-safety equipment accessible; these precautions do not remove the risks of an unsuitable fireplace.
What the fire statistics doâand do notâshow
The U.S. Fire Administration estimated 170,000 home cooking fires in the United States in 2021, resulting in 135 deaths, 3,000 injuries, and more than $494 million in property loss. Unattended equipment was the leading contributing factor in nonconfined home cooking fires, at 37% of those fires. These figures concern home cooking fires generally; they are not specific to fireplaces or fireplace cooking.

Do not grill with charcoal or charcoal fuel in a home fireplace. For cooking over a wood-burning fire, proceed only after confirming that your particular fireplace is suitable and that its instructions and applicable rules allow it. If you cannot verify that, use a cooking method designed for the purpose instead.
