Breville Control Freak Home Review: Is the BMC800 Worth It?

The Breville Control Freak Home BMC800 adds pan-temperature control, probe cooking, and reusable presets to a single portable induction zone. Here’s who benefits—and what to check before buying.

The Breville Control Freak Home (BMC800) is a single-zone countertop induction cooker built for cooks who want more than simple power settings: it can control pan temperature, use a probe to manage ingredient temperature, and save multi-step cooking presets. That precision and flexibility are its strongest reasons to buy; the high cost, one cooking zone, and need for induction-compatible cookware make it a specialized purchase rather than an obvious replacement for a regular cooktop. This review covers the Home BMC800, not the original commercial Control °Freak (CMC850).

What the Control Freak Home does—and which model this review covers

Breville sells two products with closely related names. The BMC800 is the home-oriented Control Freak Home reviewed here. The CMC850 is the original commercial Control °Freak, with different construction and specifications. Check the model number before comparing listings or reading specifications: CMC850 figures should not be assumed to apply to the BMC800.

The BMC800 is a portable, single-zone induction cooker with touchscreen controls and four workflows: Manual, Ingredients, Techniques, and custom presets. Breville says its through-glass sensor measures the cooking surface 20 times per second and that the Home model can set and hold temperatures from 77°F to 482°F (25°C to 250°C). ChefSteps publishes additional BMC800 specifications of 1800W, a 10-inch induction field, and ±1°C/1.8°F temperature stability. How its temperature control works

Pan-temperature control

Unlike a burner that offers only numbered power levels, the BMC800 is designed to set and maintain a target cooking-surface temperature. That is useful when a recipe depends on a steady pan temperature—for example, to manage delicate melting or moderate-heat cooking. The set temperature describes the cooker’s control target; it is not a guarantee that every ingredient or liquid will reach that exact temperature instantly or behave as if it were at that temperature throughout.

Probe control and food monitoring

The included probe gives the cooker another way to work: Breville describes probe control for ingredient temperature, probe oil control for deep frying, and thermometer mode for monitoring food’s core temperature. Those are distinct jobs. Pan sensing controls the cooking surface; probe control can regulate a cooking process around an ingredient or liquid; thermometer mode provides a reading to inform the cook. A temperature reading does not itself guarantee that food is safely cooked, so use appropriate food-safety guidance and your judgment.

Guided modes and saved processes

The manual describes four workflows: Manual, Ingredients, Techniques, and My Presets. The guided modes organize cooking around an ingredient or technique, while My Presets lets you save multi-step processes for repeat use. This can reduce repeated setup for a familiar method, but it does not remove the need to monitor food or adapt to its size, starting temperature, and cookware.

What it is like to cook with

Breville presents the Home model for tasks including searing, braising, steaming, frying, poaching, confit, and sous vide, as well as temperature-sensitive work such as hollandaise, citrus curd, and chocolate tempering. These are intended uses, not guarantees of a particular result. The manual’s reference settings include 140°F for melting, 180°F for warming, 200°F for poaching, 205°F for simmering, 220°F for boiling, 375°F for shallow frying or sautéing, 450°F for searing, and 482°F for stir-frying. In hands-on coverage, a Tom’s Guide tester reported quick heat-up and responsive temperature maintenance, and described using guided settings for eggs and steak. The tester also used the probe to monitor steak’s internal temperature. These are one reviewer’s experiences, not controlled comparisons or a promise that every recipe will behave the same way. Cookware fit is a practical constraint

The BMC800 requires induction-compatible cookware. The manual covers compatible cookware, but compatibility alone may not settle whether a particular small or light pan will register consistently. Tom’s Guide’s tester reported that a small pan sometimes did not press the center contact sensor enough to register and had to be repositioned. That is a reported issue with one tester’s use, not evidence that all small pans fail.

  • Confirm that the pan is induction-ready; a non-compatible base will not work as intended.
  • Consider the pan’s base size, weight, and how it sits on the cooker, especially if you regularly use small pans.
  • If possible, check your own cookware on the unit before relying on it for a recipe or workflow.

Can the Control Freak boil water?

It can heat water, but Tom’s Guide found no dedicated boiling-water preset. In that reviewer’s use, a setting around 230–240°F was needed to produce a rolling boil, rather than setting the cooker to 212°F. This is a single tester’s observation, not a universal setting recommendation: pan, water volume, starting temperature, and conditions can affect the result. Control Freak Home BMC800 vs. commercial CMC850

The commercial model is not simply another name for the Home unit. Breville describes the original CMC850 as having a thicker shell, powerful cooling, and IPX3-rated water protection. Williams-Sonoma lists its range as 86°F–482°F, its probe range as 32°F–572°F, and 397 temperature settings. Those figures apply to the CMC850 listing, not to the BMC800. Is the Breville Control Freak worth it?

It is easiest to justify if you will regularly use controlled pan temperatures, probe-based cooking, or reusable guided and multi-step workflows. The advantage is not simply that it heats a pan: it offers several ways to manage temperature and repeat a process on one portable cooking zone.

The counterargument is substantial: it is a premium-priced appliance for a single burner. Tom’s Guide praised its quick heating, range of settings, and useful probe, while also calling out the expense and small-pan registration issue.   • It may suit you if: temperature-sensitive cooking is a frequent part of your routine, you expect to use the probe or saved processes, and your cookware fits the induction surface.
  • It may not suit you if: you mainly need an inexpensive extra burner, want multiple cooking zones, or rarely need tighter temperature control than ordinary heat settings provide.

What to compare before buying

  • Control: Decide whether pan-temperature targets, probe control, core-temperature monitoring, and presets solve recurring problems for you, or whether simpler power settings are enough.
  • Cookware: Check induction compatibility and consider whether your smallest or lightest pans will sit securely and register.
  • Space and cooking capacity: The BMC800 provides one cooking zone; compare that with your need for a portable auxiliary burner or a fixed cooktop.
  • Model identity: Verify BMC800 for the Home unit. Do not rely on CMC850 specifications to describe it.
  • Price and availability: Compare live retailer listings rather than relying on older review prices or a stock status that can change.
