The best pellets for brisket depend on how bold you want the smoke: Traeger describes hickory and mesquite as bolder choices, while oak and cherry are milder and more balanced. For a balanced blend, Kingsford’s Chef’s Blend combines hickory, cherry, and oak; its Hickory and Mesquite blends offer more focused flavor profiles. These are manufacturers’ descriptions, not results from independent taste tests.

How to choose pellets for brisket

Start with the smoke intensity you prefer, then check the woods actually listed in the blend. A bag labeled with one flavor may also contain a base wood, so the front label alone may not tell you the full composition.

  • For bolder smoke: Traeger describes hickory and mesquite as bold options.
  • For milder, more balanced smoke: Traeger describes oak and cherry this way.
  • For a blend: Check whether the product combines several woods; that can provide a different profile from a single named flavor.

Flavor preference is subjective, and the cited product information does not establish a universal winner. Traeger also says its mesquite pellets use a hardwood blend for a more even burn than whole mesquite wood while retaining bold flavor; that description applies to Traeger’s pellets, not every mesquite product. Traeger’s brisket pellet guide explains that pellet type changes the brisket’s final flavor.

Brisket-suitable pellet blends compared

Kingsford identifies the following Craftsmoke blends as suitable for brisket and says they work with all pellet grills. Those are manufacturer specifications, not a guarantee of identical results in every cooker.

  • Maple, Hickory, and Cherry Blend: Competition blend is the Jack of All Trades. It's great with poultry, pork, baking, veggies, beef, and seafood. HARDWOODS: Camp Chef Hardwood bbq pellets are not a byproduct. They are 100% pure virgin hardwoods.
  • No Oils, Chemicals, or Binders Added: No oils, chemicals or binders added mean better flavor and a more efficient burn.

Check the blend and grill guidance

Traeger says its pellets use oak or alder as a base, combined with the named flavor wood. A “hickory” or “cherry” label therefore may describe the flavor wood rather than the entire composition. Kingsford likewise lists oak alongside the named wood in its Hickory and Mesquite products.

Store pellets dry and check their condition

Moisture or degraded pellets can interfere with ignition and temperature performance. Traeger recommends storing pellets in a dry, airtight container. It identifies widespread sawdust, crumbling, and signs of moisture as indicators that pellets may be compromised. See Traeger’s pellet storage guidance.

Pellets do not determine the whole brisket cook

Pellet choice affects smoke flavor, but it does not guarantee bark, tenderness, a smoke ring, or a particular finished brisket. Traeger’s guide says time, temperature, and the final rest also matter. It notes that most pros aim for 225°F for consistent, slow cooking; that is Traeger’s published guidance, not a universal requirement for every brisket or cooker.
