A laser meat thermometer measures the surface temperature of food, not its internal temperature. The laser only helps you aim. For checking whether meat is cooked safely or to your preferred doneness, use a probe food thermometer; an infrared thermometer is useful for surface checks such as a grill, pan, or pizza stone.
What a laser meat thermometer actually measures
“Laser thermometer” usually means an infrared thermometer with a laser aiming guide. The instrument detects infrared energy from a surface area; the laser pointer is not the sensor and does not measure the temperature at its dot. Infrared readings therefore cannot tell you the temperature in the center of a steak, roast, or piece of poultry. ThermoWorks explains how infrared thermometers work and notes that the laser is a guide for aiming.
ThermoWorks’ technical FAQ likewise recommends a traditional probe thermometer for checking food doneness because infrared devices measure only surfaces.
Choose the thermometer for the job
For internal doneness: use a probe
A probe food thermometer measures inside the food and is the appropriate tool for checking doneness and safe minimum internal temperatures. The USDA says using a food thermometer can help prevent illness from undercooked food and verify that it has reached a safe minimum internal temperature. See its kitchen thermometer guidance.

For a typical thick cut, insert the probe into the thickest part without touching bone, fat, or gristle. For thin foods, insert it from the side toward the center. Follow the thermometer manufacturer’s instructions for use and cleaning.
For surface temperatures: use infrared
An infrared thermometer can quickly check the surface of a grill top, pan, pizza stone, or food being held or received. It can help answer questions such as whether a cooking surface is hot enough, but it cannot establish internal meat doneness. ThermoWorks describes its IRFS food-safety infrared model as having a food-oriented preset emissivity and use on frozen food and grill tops.

How to choose each type
What to compare in a probe thermometer
- Response time and readability: Choose a display and response speed that work for your cooking routine.
- Probe design and insertion: Check that the probe suits the thickness and kinds of food you cook.
- Range and accuracy: Review the specific model’s published specifications.
- Use during cooking: Some probes are designed to remain in food while it cooks; others are for brief spot checks. Follow the product instructions.
What to compare in an infrared thermometer
- Distance-to-spot ratio: This indicates how the measured area grows as the device moves farther from the target. Aim close enough that the target fills the measurement area.
- Emissivity: This describes how a surface emits infrared energy. Shiny or reflective metal can lead to inaccurate readings on a device with a fixed emissivity setting.
- Range, accuracy, and operating conditions: Compare the specific model’s stated limits with the surfaces and temperatures you plan to check.
- Target surface: Infrared devices read the surface they encounter; they do not see through glass or liquids.
Specifications are model-specific, not universal guarantees. For example, ThermoWorks lists the IRFS at 12:1 optics with preset emissivity 0.97. Those figures describe that model’s surface-measurement setup; they do not make it an internal food thermometer.

- Choose an appropriate probe food thermometer for the food and cooking method.
- Insert the probe into the thickest area, avoiding bone, fat, and gristle. For thin cuts, insert from the side toward the center.
- Use the USDA temperature guidance for the food category, and allow any required rest time.
- Clean and store the thermometer according to its instructions.
USDA’s current U.S. consumer guidance lists these temperatures: 145°F with at least a three-minute rest for beef, pork, veal, and lamb steaks, chops, and roasts; 160°F for ground meats; and 165°F for poultry. Use the official guidance for the specific food category rather than treating one temperature as appropriate for every meat.

Inaccurate readings will result from measuring shiny or polished metal surfaces. To compensate, cover the target surface with masking tape or flat black paint. Measure the tape or painted surface when the tape or painted reach the same temperature as the material underneath.
Why infrared readings can mislead
- The reading is surface-only: A browned exterior can be hot while the center is cooler, or the surface can cool before the interior does.
- Reflective surfaces affect results: Shiny metal may not read reliably with a fixed-emissivity device.
- Glass and liquids are not transparent to the measurement: The thermometer reads the surface in its path, not what is behind glass or within a liquid. Stirring or sampling a liquid may help approximate its temperature, but it does not make infrared a dependable way to measure meat internally.
- The measurement covers an area: The laser is an aiming aid, not a pinpoint temperature sensor. Distance and the thermometer’s optics determine the surface area being read.
