Best Infrared Thermometer for a Pizza Oven: How to Choose and Use One

An infrared thermometer can check a pizza-oven floor or stone, but it does not measure oven air or food doneness. Compare range, optics, emissivity and target indication before choosing.

The best infrared thermometer for your pizza oven is one that can measure the oven floor’s expected temperature, read a small enough area at your working distance, and handle the surface material’s emissivity. ThermoWorks’ IRK-2 is one manufacturer-documented option: its current product listing specifies a 1022°F (550°C) upper range, 12:1 distance-to-target ratio, adjustable emissivity, and circle laser. Those are specifications, not the result of an independent comparison.

Just as important, the reading is the temperature of the surface you aim at—not oven air or the inside of the pizza. Use it to assess the floor or stone, then interpret the number for your particular oven and baking setup.

What to look for in an infrared thermometer

Choose by the oven surface you need to check and the distance from which you can safely take a reading. A model’s maximum range, optics, emissivity settings, and target indicator each affect whether its reading is useful. The specifications below are manufacturer-stated; no independent head-to-head test is available here.

Temperature range

The thermometer’s upper limit must exceed the surface temperature you intend to measure. ThermoWorks lists a maximum of 1022°F (550°C) for both the IRK-2 and IR-GUN-S. Check the current model instructions and product listing before buying, since specifications can change.

Distance-to-target ratio and spot size

The distance-to-target ratio (DTR) indicates how large a surface area the instrument averages. ThermoWorks explains that a 12:1 instrument measures a one-inch-diameter spot from 12 inches away. Move farther away and the measured spot grows, so it may include more than the patch of floor you meant to check. Get close enough for the spot to fit on the target, while respecting the thermometer’s safety and operating guidance.

The laser helps you aim; it is not the temperature sensor and does not, by itself, show the full measured area. ThermoWorks’ IRK-2 listing specifies 12:1 optics and a circle laser. Its pizza-oven article describes the IR-IND as a 30:1 instrument, which can sample a smaller area at the same distance than a 12:1 instrument. The figures are manufacturer specifications, not comparative performance tests.

Emissivity and surface material

Emissivity is a property of a surface that affects how infrared energy is emitted and therefore how a thermometer interprets it. ThermoWorks says brick and concrete have emissivity near 1 and offers adjustable emissivity on the IRK-2 and IR-GUN-S. Follow the device instructions for the material you are measuring rather than assuming one setting suits every oven surface. Shiny surfaces can complicate interpretation.

Target indication and response

A visible target indicator can make it easier to aim at the intended patch, but it does not replace understanding the instrument’s spot size. ThermoWorks lists a circle laser and an approximately one-second response for the IRK-2; these are product-page claims, not independently verified results.

How to measure a pizza-oven floor or stone

  1. Check the instrument’s limits and instructions. Confirm the surface is within its temperature range, find the recommended emissivity setting, and follow its safe operating distance guidance.
  2. Aim at the surface you want to assess. Point at the oven floor or stone, not into the open oven to estimate air temperature. A thermometer measures the surface it sees.
  3. Keep the sampled spot on the target. Use the DTR and your working distance to judge the spot size. Move closer if needed and safe; a laser dot is only an aiming guide.
  4. Take readings at relevant places on the floor. The aim is to understand the surface area where the pizza will bake, rather than infer a single temperature from an unrelated spot.
  5. Interpret the number for your oven. ThermoWorks gives 700–900°F (370–482°C) as an illustrative range around oven carbon burn-off and notes that the appropriate temperature varies with the oven. This is manufacturer guidance, not a universal baking-readiness rule; use your oven maker’s directions and your recipe or cooking method to decide when to bake.

What the reading can—and cannot—tell you

  • It can tell you the temperature of the surface in its field of view. That is useful for checking a floor or stone before baking.
  • It cannot tell you oven-air temperature or the pizza’s internal temperature. For internal doneness or food-safety checks, use an appropriate probe thermometer.
  • It may be affected by what the instrument sees. ThermoWorks notes that a reading aimed through a grate can include surfaces visible through its openings; a shiny or porous target may also complicate interpretation.

Keep the sensor and target clear

Dust, dirt, moisture, fog, smoke, or debris can interfere with a reading. Keep the sensor lens clean and dry, and follow the care instructions for your specific thermometer. If the target area is obstructed or the instrument cannot be used at a safe distance while keeping the spot on the floor, do not treat the result as a precise floor reading.
