The best gourmet ice maker depends first on the ice you want: choose a countertop nugget machine for soft, chewable ice, or an undercounter clear-ice maker for cocktails and spirits. These are different kinds of appliances with different space, water, drainage, and installation requirements. The models below are documented options, not independently tested winners; use their manufacturer-published ratings as starting points and confirm current specifications for the exact unit.
Choose the ice style before comparing machines
Countertop nugget ice
Nugget, or pellet, ice is soft and chewable. A reservoir-fed countertop machine is generally the more accessible choice when you want this texture without plumbing a built-in appliance. GE says its Opal machines use a reservoir and do not require a water line; select models offer an optional side tank. You will still need counter space and a routine for refilling and cleaning.
Undercounter clear gourmet ice
Clear gourmet cubes are aimed at drinks such as spirits and cocktails. These machines are installed beneath a counter, so the purchase involves more than choosing an ice style: check the exact unit’s dimensions, water and drain requirements, cabinetry fit, and service arrangements before planning the installation.

Do not treat broad product-family figures as specifications for every model. GE’s general countertop category page lists up to 24 lb per day and 48 oz holding capacity, while its current Opal listings give different model-specific production ratings. Check fit, water, and installation before committing
Countertop footprint and clearance
Countertop does not necessarily mean compact. GE lists the Opal Mini at 14.56 inches high, 8.6 inches wide, and 15.6 inches deep. GE lists Mini Pro versions with side tanks at 11.6 inches wide. Measure the available counter area, allow for access to the reservoir and bin, and check the height beneath cabinets. Use the dimensions for the exact model and bundle you are considering.
Water and drainage
GE says Opal machines use a reservoir rather than requiring a water line. That avoids a plumbing connection, but means water must be supplied to the machine; an optional side tank is available on select models. Built-in machines have different site requirements. GE notes that a drain kit may be needed when there is no floor drain, and that a custom panel or separate door kit may be needed to integrate some units with cabinetry. Confirm these requirements in the exact model’s documentation before setting cabinet dimensions or arranging a hookup. GE also suggests considering inline water filtration for built-in machines.

Production is not the same as ice on hand
Daily production is a manufacturer-published maximum, not a promise about output in every home. It also does not tell you how much ready-to-use ice the bin holds. Check both production and bin capacity in the exact model’s specifications, along with the replenishment routine that fits how you serve drinks. GE says the Opal can begin producing ice in as little as 10 minutes under normal conditions; its FAQ says the Mini produces its first batch in about 5 minutes. Those are manufacturer claims, not guaranteed times in all environments.
Plan for cleaning and water quality
GE recommends washing the removable Opal bin with warm, soapy water and wiping interior surfaces with a soft, damp cloth. Its FAQ advises against harsh chemicals and solvents. GE gives a typical Opal descaling interval of every 2–4 months, with more frequent descaling potentially needed in hard-water conditions; it also recommends multiple rinse cycles after descaling.
