A gas hob heat diffuser sits between a burner and a pan to moderate direct heat for gentler cooking. But compatibility with your exact hob matters more than a product’s “gas compatible” label: one Electrolux manual warns that placing a flame tamer between the pan and pan support may seriously damage the appliance. Check your hob manual before buying or using any diffuser.
What a gas hob heat diffuser does
Also called a heat tamer, flame tamer, simmer plate or simmer mat, a diffuser is a physical accessory intended to moderate heat between a burner and cookware. Nordic Ware describes its plate as a way to moderate direct gas heat and give more control when cooking delicate foods. That may make a diffuser worth considering for low simmering or tasks such as handling delicate sauces, chocolate or porridge; it does not guarantee even heating, prevent scorching or make every burner simmer reliably.
Check your hob manual before choosing a diffuser
A maker’s claim that an accessory works on gas does not establish that it is safe for every gas hob. An Electrolux manual for a particular gas hob model states: “Do not place anything, e.g. flame tamer, asbestos mat, between pan and pan support as serious damage to the appliance may result.” It also directs users to use only a wok support supplied or recommended by the appliance manufacturer. Follow the manual for your own hob; the Electrolux warning should not be treated as a universal rule for every model.
- Find the manual for the exact hob model, rather than relying on a general product listing.
- Look for directions or warnings about flame tamers, simmer plates, pan supports and accessories placed under cookware.
- If the manual prohibits an item or does not make compatibility clear, contact the hob manufacturer before use.

How to choose for your pan and cooking task
Start with permitted use, then check fit
Only consider a diffuser if your hob manual permits it. Then compare its dimensions with the burner and the cookware you intend to use. The cited sources do not establish a universal ideal diameter or burner-coverage ratio, so do not assume that a larger plate or a close fit is automatically safer or more effective.

Consider stability and placement
The pan must sit securely according to the accessory’s instructions and your hob’s design. Pay attention to the Avanti retailer’s orientation directions, which differ by cooking surface. Customer reports about a pot wobbling on the Cooks Innovations SimmerMat are a reason to assess stability with your own cookware, not proof that every pan will wobble.
Match the design to the intended use and care routine
For gentle simmering, look for product directions that explicitly describe simmering or moderating direct heat. Follow any heat limits, handling and cleaning instructions for the exact model. Nordic Ware, for example, advises moderate rather than high heat and requires full cooling before handling. Do not transfer instructions from one diffuser to another.

What product claims can—and cannot—tell you
Manufacturer descriptions explain intended use; retailer listings may provide placement instructions; customer reviews describe individual experiences. None of the cited evidence is an independent, controlled comparison of products. It therefore does not establish that one diffuser is best overall, quantify a reduction in heat, or prove that a diffuser will prevent burning. Treat “works on gas” as a product claim to check against your appliance manual, not as a safety approval for your particular hob.
