How to choose between them
Match reach to your widest loaf
Think about the loaf you cut most often, not just the longest blade available. A 10-inch-class blade is a practical comparison point for wide loaves. The 32 cm Sauer & Sohn blade is a niche alternative when ordinary long knives still feel short; it also makes for a substantially longer overall knife at 45 cm.
Consider serration and cutting technique
The candidates use wavy or serrated edges. Manufacturers describe serrations as helping engage crust and reduce tearing, but the pages cited here do not establish that one tooth pattern performs better than another. Why an extra-long blade can help—and when it may not
A longer edge can reach across a broad loaf with fewer repositionings, which may make sawing through a thick crust more convenient.
