An 18 L gas cooker, a 130 L stock vessel and a high-pressure steam cooker serve fundamentally different operations. Match usable batch size, pressure controls, utilities, safety documentation, cleanability and local approval before comparing brands or prices.
Choose the equipment class before the model
“Commercial pressure cooker” covers several equipment classes. The examples below are not direct substitutes; capacity, process, installation and intended duty differ substantially.

For a modest restaurant batch: Hattori OPCH-40
Hattori lists an 18 L gas-fired OPCH-40 with a maximum operating pressure of 82 kPa. The listing specifies 8.7 kW gas consumption and 15 W electrical consumption, plus Auto-Temp and timer modes. It also describes flame-out shutoff and overheat prevention, and identifies JIA certification.

Hattori calls it the “First commercial compact pressure cooker to earn JIA certification, ensuring it meets Japan’s strictest safety and performance standards.” That is the manufacturer’s wording; the superlative has not been independently verified, and JIA certification does not by itself establish approval in every country or installation.

This is a potential fit when an 18 L working batch is sufficient and the kitchen can provide the specified gas, electrical, ventilation and service arrangements. Confirm the current configuration and certification for your market before ordering.
For a flexible 8–35 L range: Buffalo cooker/canners
Buffalo lists six sizes from 8 L to 35 L and describes the largest as its commercial pressure cooker and canner. Its FAQ identifies a safety lock, safety gear, safety valve, vent filter and pressure-release hole as standard features.
These vessels are best evaluated as a range of cooker/canners rather than as one model. Check the manufacturer’s instructions for the foods and duty cycle you intend, verify burner compatibility, and confirm how gaskets, valves and other service parts are supplied.

For broth and stock production: Meiwa 50–130 L
Meiwa lists 50–130 L pressure stockpots for ramen and restaurant stock preparation. It also states that custom or OEM manufacturing is available and identifies Kitchen Techno for overseas inquiries. A large vessel of this type should be treated as capital equipment: obtain installation drawings, utility loads, pressure-vessel documentation, safe operating procedures, training and a maintenance plan before purchase.
For very large stock batches: Altam/P&V Planning
Altam/P&V Planning lists approximate capacities of 110, 170 and 200 L for large stock production. Its description includes a safety-cap assembly and an emergency pressure-relief valve. The company also makes ASME-related manufacturing or design claims; those claims are not a substitute for confirming the rules that apply to your jurisdiction, building and pressure system.
For multiple cooking processes: Hobart GTP
Hobart’s GTP high-pressure steam cooker is aimed at professional operations ranging from a 50-seat restaurant to a 600-bed hospital. The brochure describes programmable half-bar and one-bar settings and lists poaching, boiling, braising, steaming, sous-vide, reheating and volume cooking among its applications.

Choose this class when the value comes from process flexibility and repeatable institutional throughput, not simply from the largest pot. Compare steam supply, footprint, drainage, controls, staffing and service access with a pressure stockpot.
For aluminum batch cooking: Surya models
Surya lists aluminum commercial pressure cookers from 11 L to 200 L and publishes dimensions and estimated person counts for some sizes. Treat those counts as supplier guidance, not a standardized capacity measure. Request the exact model’s pressure rating, construction details, safe-fill limit and intended installation before relying on the published estimate.
Size the cooker from real demand
- Record the largest normal batch. Measure the actual liquid, solids and finished yield for stock, beans, braises or other recipes. Do not size from nominal vessel volume alone.
- Separate vessel volume from usable working volume. Pressure cookers require headspace and may have recipe-specific fill limits. If the supplier has not stated a safe-fill limit, ask for it in writing.
- Calculate service throughput. Determine how many batches are needed per service, how long loading and unloading take, and whether the cooker can recover pressure between batches.
- Allow for menu variation. A vessel sized for one stock recipe may be impractical for different foods, cleaning cycles or allergen separation. Compare the smallest useful batch as well as the maximum batch.
- Check the supplier’s measurement basis. Listings may use liters, bowls of stock or estimated servings. Those figures are not interchangeable without knowing recipe, fill level and serving size.
Confirm utilities and installation before buying
Utility mismatch can make an otherwise suitable cooker unusable. Hattori’s stated 8.7 kW gas and 15 W electrical figures apply to the OPCH-40 listing; larger vessels and powered steam units can require a different site design.

- Have the installer verify gas type, pressure, flow, shutoff location and combustion air.
- Confirm electrical voltage, phase, circuit protection and controls for the exact model.
- Design ventilation and heat rejection for the appliance and the room.
- Provide drainage and floor clearance for filling, decanting, cleaning and emergency discharge where applicable.
- Check floor loading, door widths, lifting equipment and delivery route for 50–200 L vessels.
- Ask the manufacturer and the local authority having jurisdiction which pressure-vessel, food-service, fuel, electrical and building approvals are required.
- Specify commissioning, operator training, inspection intervals and service response before the purchase order.
Evaluate safety by documented features, not marketing labels
The cited products describe different protective systems, including locking mechanisms, safety valves, vent filters, pressure-release devices, flame-out shutoff, overheat prevention, safety caps and emergency relief valves. A feature list is not an independent safety ranking.
Request the operating manual, pressure rating, relief-device specifications, inspection requirements, material information, replacement-part schedule and cleaning instructions. Confirm who is responsible for installation and periodic inspection. JIA, ASME-related or other certifications may be relevant, but none should be assumed to satisfy local requirements without confirmation.
Interpret cooking-time claims carefully

Use your own menu, batch size and labor pattern to estimate savings. Pressure rating alone does not predict total service throughput; loading, heat-up, depressurization, unloading and cleaning all consume time.
What to request in a commercial quotation
- Exact model number, usable capacity and safe-fill limit
- Maximum operating pressure and control range
- Fuel, electrical or steam requirements and connection drawings
- Materials, dimensions, weight and floor-loading data
- Safety devices, inspection documentation and applicable certifications
- Cleaning method, drain arrangement and removable service parts
- Warranty terms, spare-part availability and local service contacts
- Delivery, installation, commissioning and operator-training scope
- Lead time, current price and stock status, confirmed at quotation
Retail listings and prices change, so verify current availability and the exact configuration directly with the manufacturer or authorized distributor. No individual online listing should be treated as commercial-grade for your kitchen unless its intended duty, pressure rating and installation requirements are documented.
Bottom-line selection
Choose Hattori or a Buffalo-size cooker when your batches are modest and a compact gas or stovetop format fits the site. Choose Meiwa or Altam when stock production justifies a large, engineered pressure vessel and the building can support it. Choose Hobart when one installation must handle several high-volume cooking processes. Surya’s broad aluminum range may suit a specific batch requirement, but its supplier estimates require model-level verification. In every case, capacity, utilities, safety documentation and local approval matter more than a generic “best” label.
