Barbecue: What It Means, How It Differs From Grilling, and How to Cook Safely

Barbecue can mean a cooking method, food, equipment, flavor, or gathering. Learn how it differs from grilling, what temperatures to use, and how to cook safely.

Barbecue can mean a cooking method, the food it produces, the cooker, a smoky flavor, or an outdoor gathering. In common U.S. culinary usage, it often means cooking food slowly with indirect heat and smoke; grilling usually means cooking quickly over direct, high heat. Whatever method you use, check food with a thermometer rather than judging by color or grill marks.

What does “barbecue” mean?

There is no single definition that everyone uses. The word can describe a way of cooking, a meal or dish, the equipment used, a flavor, or a social event. In U.S. cooking, people often distinguish barbecue—slow, indirect cooking, commonly with smoke—from grilling over direct heat. But usage varies by region and speaker. Janeal Yancey, an extension animal science instructor at the University of Arkansas Division of Agriculture, put it this way in a May 20, 2026 article: “It means different things to different people.” Her own Texas upbringing led her to use “barbecuing” for “a low and slow smoking process,” rather than grilling.

Those are useful common distinctions, not rules that settle every regional or personal use of the word.

What is the difference between barbecue and grilling?

A covered grill can be arranged for indirect cooking, so the distinction is about the cooking method rather than simply whether the appliance is called a grill or smoker. High-heat grilling browns food through reactions including the Maillard reaction, as the University of Arkansas Division of Agriculture explains. With large cuts, lower cooking heat can help prevent the exterior from overcooking before the interior reaches its target.

There is no dependable universal cook time for a large cut: size, shape, heat, distance from the fire, and weather all affect how long it takes. Use a cooker thermometer to track the cooking environment and a food thermometer to check the food itself.

What is the best smoker temperature for barbecue?

There is no one best temperature for every smoker, recipe, or cut. The smoker’s air temperature is not the same as the meat’s safe internal temperature. USDA FSIS gives 225–300°F as the smoker or grill air range for smoking meat and poultry. Texas A&M discusses 200–250°F as a practical low-and-slow range for barbecue. These are source-specific cooking ranges, not competing food-safety temperatures or guarantees of a particular result.

Follow your recipe and equipment guidance, monitor the smoker air, and use a separate food thermometer to verify doneness. Cooking time can vary even when the cooker is set to the same temperature.

What are the four commonly identified styles of American barbecue?

The U.S. Census Bureau’s July 2021 feature describes four familiar regional shorthand styles. Each contains local and personal variation, and they are not the only barbecue traditions in the country.

Style Common associations
Carolinas Pork is central; vinegar-based sauces with herbs and spices are one familiar approach. Practices vary across the region.
Memphis Pork ribs and pulled pork, including “wet” ribs covered with sauce and “dry” ribs seasoned with a spice rub.
Kansas City A range of meats, dry rubs, and tomato-based sauce often served alongside.
Texas Beef, smoke, and simple salt-and-pepper seasoning are common shorthand associations, alongside many local and cultural traditions.

These labels are starting points rather than fixed recipes. The Library of Congress and Texas Historical Commission accounts reflect barbecue’s broader cultural and historical reach; claims about a single origin, inventor, “first,” or “best” should not be treated as settled history.

How do you choose barbecue equipment?

There is no universally best cooker. Pits, kettle grills, water smokers, and barrel smokers can serve different needs. Choose based on the cooking method you want and the conditions in which you will cook.

  • Method: Decide whether you mainly want direct grilling, indirect smoking, or equipment that can do both.
  • Capacity: Match the cooking area to the amount and size of food you usually prepare.
  • Temperature control: Consider how well the cooker can hold a steady temperature and how you will monitor it.
  • Fuel: Check what fuel is available to you and its cost. Wood preferences often reflect local availability; Texas A&M lists hickory, oak, pecan, and mesquite among Texas woods. USDA FSIS also mentions chips or flakes such as hickory, apple, and maple. Smoke intensity is a matter of preference, not proof that one wood is objectively best.
  • Practicalities: Weigh portability, cleanup, and maintenance against the flavor and cooking style you want.

What temperature should barbecue be cooked to?

For food safety, check the food’s internal temperature with a thermometer. USDA FSIS warns that food can brown quickly on the outside while remaining below a safe internal temperature. Color and grill marks are not reliable doneness checks.

Whole cuts of beef, pork, veal, and lamb 145°F Rest for at least three minutes after reaching the temperature.
Ground meats 160°F Use a thermometer to check the center.
Poultry, including ground poultry 165°F Check the thickest part without touching bone.

These are internal food temperatures, not smoker settings. Insert the thermometer into the thickest part of the food and follow the thermometer’s instructions for an accurate reading.

How do you handle barbecue safely?

  • Keep raw food cold: Buy meat and poultry last, keep them cold during transport, and refrigerate perishables promptly.
  • Prevent cross-contamination: Keep raw meat and poultry apart from ready-to-eat food. Use separate clean platters and utensils for raw and cooked food; do not put cooked food on a platter that held raw meat unless it has been washed.
  • Cook it through in one go: Do not partially grill meat or poultry and finish cooking it later.
  • Keep cooked food hot: USDA FSIS advises holding hot food at 140°F or warmer.
  • Refrigerate leftovers promptly: Put them in shallow containers and refrigerate within two hours of cooking, or within one hour when outdoor temperatures exceed 90°F. Discard perishable food left out longer than those limits.

A food thermometer is useful for both direct grilling and low-and-slow barbecue: the cooker thermometer tracks the heat around the food, while the food thermometer checks whether the food has reached a safe internal temperature.

How common is backyard barbecue?

In a July 2021 feature, the U.S. Census Bureau attributed to the Hearth, Patio & Barbecue Association a historical estimate that 80% of 80.1 million owner-occupied U.S. households and 70% of 126.8 million total U.S. households owned a grill or smoker in 2021. These are figures for that year, not a current ownership estimate.
