When to Use Your Oven’s Convection Setting—and When Not To

Convection can improve browning for roasts and suitable multi-rack cooking, but delicate bakes may do better on ordinary Bake. Check your oven’s manual for automatic temperature conversion before adjusting a recipe.

Use convection when you want better browning or crisping, especially for roasting and suitable multi-rack cooking. Choose ordinary Bake for delicate rising foods, or whenever the recipe, package directions, or your oven manual specifies it. Before lowering a recipe’s temperature, check whether your oven converts it automatically.

What the convection setting changes

A convection fan circulates hot air around the oven cavity. That moving air can transfer heat more effectively, help food cook more evenly, and dry or brown exposed surfaces. Whirlpool describes these effects as supporting consistent oven temperatures, crisp surfaces, and crustier bread.

Convection is not a guarantee of faster or more even results in every situation. Performance depends on the oven’s design and mode, how much food is inside, the pan, and whether air can circulate around the food.

When convection is a good choice

Roasting meat and vegetables

Choose a convection roast mode when you want a browned or crisp exterior. Bosch identifies roasting as a use for circulating air, and Gaggenau recommends convection for roasting. Follow your model’s manual for the correct mode and temperature; roasting instructions may differ from baking conversions.

Cooking on more than one rack

Convection can help distribute heat when cooking on multiple racks. Thermador identifies multi-rack cooking as an appropriate use, while emphasizing the importance of the model’s rack positions and space around pans. Leave room for airflow rather than filling every available inch of the oven.

Foods meant to brown or crisp

Pies, gratins, pastries, and some frozen foods may benefit when a browned surface is the goal. The best mode depends on the recipe and oven. For packaged food, follow its directions for modes such as speed convection rather than substituting another setting by assumption.

When ordinary Bake may be the better setting

Delicate rising bakes

For some soufflés and cakes, the fan’s air movement may interfere with a delicate rise. Bosch’s guidance for one covered oven recommends the conventional Bake setting for layer cakes. This is model-specific advice, not a rule that applies to every cake or oven; use the recipe and your manual to decide.

Custards and puddings

Moving air can dry a delicate surface, form a skin, or cause unwanted browning. Use the recipe’s specified mode, particularly when it calls for gentle baking or a water bath.

Tightly covered or enclosed dishes

A lid limits how much circulating air reaches the food, so convection may offer little advantage. Keep the recipe’s stated mode when one is given.

Recipes or packages that specify a mode

Follow a recipe or package instruction for Bake, convection, or another named mode unless your oven manual provides a conversion method for that exact situation. Modes that sound similar can behave differently between models.

How to handle temperature and cooking time

There is no single temperature adjustment that applies to every convection oven and dish. For many conventional recipes for baked goods, manufacturer guidance commonly suggests reducing the oven temperature by about 25°F (about 14°C). Thermador recommends that reduction for many cookies, cakes, and pies; Electrolux gives similar advice for most cases. A Bosch manual also advises lowering baking temperature by 25°F and using the minimum recipe cook time.

Some ovens perform that adjustment automatically. GE says its Auto Recipe Conversion may set the convection temperature 25°F below the conventional temperature entered. Samsung gives the example of entering 350°F and the oven switching to 325°F in convection mode. LG describes an automatic reduction of 25°F (14°C). Whirlpool notes that the displayed or converted temperature can vary by model.

  • Check for automatic conversion: Consult your oven manual to see whether the selected mode changes the set temperature.
  • Do not convert twice: If the oven has already lowered the temperature, do not lower it again manually.
  • Check early when adapting a recipe: Bosch’s cited baking guidance recommends using the recipe’s minimum cook time. Begin checking then, since results depend on the oven and food.
  • Separate baking from roasting advice: A Bosch manual says to use the recipe temperature for convection roasting and check earlier, while its baking guidance lowers the temperature. Follow the instructions for your exact model and mode.

Set up the oven for useful airflow

  • Use shallow, uncovered pans when the recipe allows.
  • Leave space between pans and around the oven cavity; crowded trays restrict airflow.
  • Use the rack positions specified in your model’s manual.
  • Preheat when the recipe or mode requires it. Thermador’s speed-convection guidance is an exception: it says to start in a cold oven and follow the package directions.
  • Avoid repeatedly opening the door during baking. Thermador recommends checking through the oven light to reduce heat loss.

Quick choice: Bake or convection?

How many racks are involved? Multiple racks, if the manual allows the arrangement and pans have space around them A recipe that specifies conventional Bake

What do the recipe and manual say? Use convection when they recommend or permit it Use Bake when they specify it or caution against airflow

Which instructions should take priority?

Use the oven manual for that model’s modes, rack positions, automatic conversion, and temperature guidance. Follow recipe or package directions for the food being prepared. Manufacturer recommendations are not interchangeable: the same oven may call for one approach to convection baking and another for convection roasting.
