Harvesting Vegetables: 6 Garden Vegetables That May Be Ready in May

Six vegetables may be ready to harvest in May, but local conditions and planting dates matter. Check crop-specific signs of maturity instead of relying on the calendar.

Radishes, leaf lettuce, spinach, peas, early-planted carrots and—where spring warms quickly—summer squash may be ready to harvest in May. The date is a regional possibility, not a guarantee: planting time, variety, soil temperature, frost risk and local weather all affect when vegetables are ready. Look for each crop’s maturity cues rather than relying on the calendar alone.

Six vegetables that may be ready to harvest in May

The timing below combines Iowa State University Extension’s crop guidance with regional schedules from Delaware, North Carolina and Florida. Days to maturity are practical estimates from Iowa State’s guide, not promises for every seed variety or garden.

Vegetable Timing or regional example How to tell it is ready Watch for
Spring radishes 25–40 days to maturity, Iowa State Extension; Delaware’s schedule includes early-spring harvests in May. Harvest when roots are about ½–2 inches in diameter. Roots larger than 2 inches are often pithy; warming weather can make radishes more fibrous and less pleasant in taste.
Leaf lettuce 45–60 days to maturity, Iowa State Extension; Delaware’s spring harvest windows extend into May and beyond. Pick outer leaves when they are about 4–6 inches long. Hot weather can make leaves bitter and encourage plants to bolt.
Spinach 45–60 days to maturity, Iowa State Extension; Delaware’s regional schedule includes spring harvests beginning in May. Harvest the crop when plants begin to bolt. Rising temperatures can shorten the useful harvest window.
Peas 55–85 days to maturity, Iowa State Extension; Delaware shows May harvests for its earliest sowing window. Snow peas: pick long, thin pods as seeds begin to develop. Snap peas: pick when seeds are nearly full size. Shell peas: pick when peas reach full size. Heat can reduce pea growth and production.
Carrots NC State Extension’s raised-bed schedule shows May harvests for carrots planted in February. Iowa State’s general maturity range is 60–80 days. Look for the orange shoulder pushing through the soil. The February planting is an early-planting example, not a May harvest forecast for every spring-sown garden.
Summer squash Iowa State lists 50–60 days to maturity. UF/IFAS Extension Duval County reported early-planted summer squash being harvested by early May in its May 2026 update. Harvest zucchini frequently; check local guidance for the variety you planted. This is more plausible in warm regions or after unusually early planting than in a typical cool spring.

Why May harvest timing varies

A May harvest depends on when a crop was planted and how it grew, not simply on the month. Variety, soil temperature, frost risk and local weather all matter. Iowa State University Extension and Outreach says, “Cool-season vegetables can be planted once soil temperatures reach 50°F.” That threshold is a useful regional planting cue, not a guarantee of a particular harvest date.

Delaware’s calendar demonstrates that early-planted radishes, peas, spinach and lettuce can have May harvest windows in that region, while its guidance notes that typical periods vary by variety and local weather. The calendar’s frost-date advice is specific to Delaware and should not be treated as a nationwide schedule. Likewise, NC State’s February-planted carrots and spinach are a raised-bed scheduling example, not a universal calendar.

Cool-season crops can lose quality as temperatures rise. In Iowa, lettuce, radishes and spinach may finish by early to mid-June; warmer conditions can make lettuce bolt, radishes fibrous and peas less productive. If plants are showing their maturity cues, harvest promptly rather than waiting for an exact number of days.

How to judge whether vegetables are ready

  • Check the edible part: Use root diameter for radishes, leaf length for lettuce and pod or seed development for peas.
  • Watch the plant: Spinach should be harvested as it begins to bolt, while carrot shoulders can indicate root development below the soil.
  • Use maturity days as a guide: Count from planting, but account for the variety and growing conditions; the listed ranges do not override visible cues.
  • Respond to heat: When cool-season crops approach maturity during warming weather, harvest before quality declines.
