How to choose pellets for brisket
Start with the smoke intensity you prefer, then check the woods actually listed in the blend. A bag labeled with one flavor may also contain a base wood, so the front label alone may not tell you the full composition.
- For bolder smoke: Traeger describes hickory and mesquite as bold options.
- For milder, more balanced smoke: Traeger describes oak and cherry this way.
- For a blend: Check whether the product combines several woods; that can provide a different profile from a single named flavor.
Flavor preference is subjective, and the cited product information does not establish a universal winner. Traeger also says its mesquite pellets use a hardwood blend for a more even burn than whole mesquite wood while retaining bold flavor; that description applies to Traeger’s pellets, not every mesquite product. Brisket-suitable pellet blends compared
Kingsford identifies the following Craftsmoke blends as suitable for brisket and says they work with all pellet grills. Those are manufacturer specifications, not a guarantee of identical results in every cooker.

Check the blend and grill guidance
Traeger says its pellets use oak or alder as a base, combined with the named flavor wood. A “hickory” or “cherry” label therefore may describe the flavor wood rather than the entire composition. Kingsford likewise lists oak alongside the named wood in its Hickory and Mesquite products.

Traeger says other brands’ food-quality wood pellets can be used in Traeger grills without voiding the grill warranty, while cautioning that performance may differ. Follow the pellet grill manufacturer’s operating guidance, and choose pellets sold as food-quality barbecue fuel.
Store pellets dry and check their condition
Moisture or degraded pellets can interfere with ignition and temperature performance. Traeger recommends storing pellets in a dry, airtight container. Pellets do not determine the whole brisket cook
Pellet choice affects smoke flavor, but it does not guarantee bark, tenderness, a smoke ring, or a particular finished brisket. Traeger’s guide says time, temperature, and the final rest also matter.
