Keep the mix moist but not waterlogged, and use dying foliage as the main cue to harvest full-size potatoes. Planting dates and suitable varieties depend on your region.
Choose a grow bag and a sunny spot
Potatoes grow in containers, sacks and purpose-made potato grow bags. Choose a bag with enough usable volume for the number of seed potatoes you plan to plant, drainage holes, and a stable base when full. Some potato bags have a low access flap for harvesting; it is optional, not a way to increase the crop.
The Royal Horticultural Society (RHS) recommends a container at least 30 cm (12 in) wide and deep, with one seed potato per 30 cm (12 in) of pot diameter in its UK guidance. For example, a pot 60 cm across would accommodate two seed potatoes by that rule. A bag’s shape and volume differ from a round pot, so use the dimensions as a guide rather than assuming every bag holds the same number. If you reuse a compost or other bag, make drainage holes in the base. Set the filled bag in a sunny position.
Container recommendations vary: Penn State Extension describes a 10–15 gallon opaque, food-safe container with drainage, while RHS gives dimensions and planting density rather than a standard bag capacity. Compare the actual bag’s usable space, drainage, and stability; leave room to add compost as plants grow.

Choose seed potatoes and planting time
Use seed potatoes sold for planting, not potatoes bought to eat. Choose a variety suited to containers and your local growing season. RHS recommends early varieties for containers in its UK advice, but planting dates are regional: follow local extension guidance or the seed supplier’s directions rather than applying a calendar date from another climate.
Chitting—letting seed potatoes develop short shoots before planting—is one option. RHS school-gardening guidance suggests planting when shoots are 2–5 cm long. Keep chitted potatoes in a cool, light place until planting.

Plant the potatoes
- Add the first layer. Put container compost or potting mix in the bottom of the bag. Penn State Extension’s container method starts with four inches of potting mix.
- Position the seed potatoes. Place them with shoots or eyes facing upward and space them to suit the bag’s dimensions and the chosen method. Penn State’s example uses three to five seed tubers in a 10–15 gallon container; that is a specific method, not a universal count for every grow bag.
- Cover them. Penn State’s method covers the tubers with a further three inches of mix. For other bag sizes, follow the bag or local growing instructions, ensuring the potatoes are covered.
Top up compost as stems grow
When shoots emerge, gradually add compost around the stems, leaving the upper leaves exposed. This process is called earthing up. Continue topping up as the plants grow until the compost is near the rim, as the RHS advises. Do not bury the whole plant at each top-up; the foliage needs to remain above the compost.
Water to keep the compost moist
Check the compost and water when it is drying out. Keep it adequately moist during active growth, but not soaking wet; ensure excess water can drain away. Do not rely on a fixed daily schedule: warmth, rain, bag material and size all affect how quickly the mix dries. The RHS notes that outdoor containers can still need watering in rainy weather because foliage may deflect rain away from the compost.

Know when and how to harvest
For full-size potatoes, dying foliage is the main harvest cue. The RHS advises stopping watering when the foliage dies back. Small early potatoes can be lifted before the tops die back; Oregon State University Extension distinguishes these early potatoes from full-size crops, which are harvested after the tops die.
Handle the crop carefully and discard any potatoes that have turned green. The RHS warns that green potatoes may be poisonous if eaten. If you are keeping potatoes for later, store them in a cool, dark place; RHS school guidance recommends paper sacks.
