The useful fertilizer is the finished compost—not raw scraps placed beside a plant. Combine the scraps with dry materials, let them decompose, then use the finished compost to add organic matter and nutrients to garden soil.
Five food scraps to add to compost
1. Fruit and vegetable peels and trimmings
Peels, citrus rinds, and old vegetables are suitable ingredients for a typical home compost pile. Chop larger scraps into smaller pieces so they break down more quickly, and cover them with dry material to discourage odors and animals. Iowa State University Extension and Cornell Cooperative Extension include food scraps in home compost guidance.
2. Coffee grounds and paper filters
Spent coffee grounds and paper filters can go into compost. Grounds are not a dependable way to acidify garden soil: Penn State Extension reports that spent grounds are nearly neutral and recommends composting them. Use a soil test to guide pH changes rather than relying on grounds.
3. Eggshells
Eggshells are compostable. Crush them before adding them to make them easier to handle and help them break down. Do not count on a shell placed in a planting hole to prevent blossom-end rot; that outcome is not established by the cited guidance.

4. Tea leaves and tea bags
Loose tea leaves and tea bags can be composted. Check the bag first: remove staples, tags, or synthetic components that will not break down, and compost only the biodegradable material.
5. Citrus peels
Citrus rinds are acceptable in ordinary home compost guidance. The exception is a red-wiggler worm bin: NC State Extension advises against feeding citrus to that system. Follow the rules for your specific composting method rather than treating all bins alike.

What “fertilizing with scraps” really means
Food scraps are compost ingredients, not a reliable quick-feed fertilizer for an individual plant. As they decompose with other materials, they become compost. Finished compost adds organic matter and nutrients and can improve soil’s ability to hold water and nutrients, as well as its aeration. Texas A&M AgriLife Extension and Iowa State Extension describe compost as a soil amendment.
Put finished compost into garden soil according to your planting and soil needs. Avoid burying raw scraps in a planting hole or spreading them around a plant as though they deliver a measured, immediate dose of nutrients.

How to compost food scraps at home
- Collect suitable scraps. A countertop caddy or lidded bucket can hold kitchen scraps until you take them to the pile; either is optional.
- Mix greens with browns. Food scraps and coffee grounds are moist, nitrogen-rich “greens.” Pair them with dry, carbon-rich “browns,” such as fallen leaves, straw, or shredded paper. Iowa State Extension describes a carbon-to-nitrogen ratio near 30:1 as efficient, but exact proportions are not critical for a home pile.
- Chop and cover. Cut larger scraps into smaller pieces, then cover or bury them beneath dry browns to help limit odors and animal access.
- Maintain moisture and air. Keep the pile consistently moist but not saturated. Turning it with a garden fork adds air and can help decomposition; leaving it unturned is also possible, but the process will be slower.
- Wait for decomposition. Use the compost when it is finished rather than applying recognizable raw scraps to plants. Compost starter is unnecessary when soil or finished compost is available to introduce microorganisms.
What to keep out of a typical home pile
Meat, bones, grease, dairy, and pet waste are commonly excluded from backyard piles because they can attract pests or cause odor and management problems. Also leave out diseased plants and weeds that have gone to seed. Follow label-specific guidance for treated grass or garden material.
Not every home pile gets hot enough to destroy weed seeds or pathogens. Cold composting is slower, and NC State Extension notes that its lower temperatures do not destroy them. Properly managed hot compost can reach temperatures that reduce pathogens and seeds, but do not assume an ordinary pile has been sanitized.

Other scraps and system-specific rules
Some home-compost guidance also accepts corn cobs, plain cooked rice or pasta, and stale bread. What belongs in a pile depends on its method and management, so check local or system-specific accepted-material rules—especially for worm bins or community compost programs.
