Pantry and kitchen scraps can help build healthier garden soil, but most work best after composting—not scattered around plants as instant fertilizer. Fruit and vegetable scraps, coffee grounds, tea leaves, and crushed eggshells can go into a home compost pile when balanced with dry, carbon-rich materials such as leaves or shredded paper.
Which pantry scraps can go in garden compost?
Many everyday kitchen scraps are useful compost ingredients. Iowa State University Extension and the USDA list fruit and vegetable scraps, coffee grounds, tea bags without staples, and crushed eggshells among suitable materials. Add them as part of a balanced pile rather than treating any one scrap as a complete plant food.
- Fruit and vegetable scraps: Add peels, cores, and trimmings.
- Coffee grounds and tea: Include used grounds, loose tea leaves, and tea bags only if they do not contain staples or other non-compostable parts.
- Eggshells: Crush them to make them easier to mix through the pile.
These materials are nitrogen-rich “greens.” They need carbon-rich “browns”—for example, dry leaves, straw, shredded paper, or cardboard—to help the pile break down well. USDA recommends 2–3 parts brown material to 1 part green material by volume. Its guidance puts it this way: “Include 2-3 parts ‘brown material’ (fall leaves, twigs, shredded newspaper, straw, wood chips, and shredded wood) and 1 part ‘green material’ (vegetable and fruit scraps, coffee grounds, crushed eggshells, garden and grass clippings, tea bags without staples) by volume then add water to keep moist.” USDA composting guidance
Which plants like coffee grounds and which plants like eggshells?
No plant should be assumed to need a pantry scrap applied directly. Composting is the better-supported use: it incorporates scraps into a balanced soil amendment instead of relying on an unmeasured dose around a particular plant.

Coffee grounds are not a reliable soil acidifier
Used coffee grounds will not acidify the soil around blueberries, rhododendrons, or azaleas, according to Penn State Extension’s guidance updated September 24, 2026. They may raise soil pH above the optimal range for those plants. Do not use grounds as a substitute for a soil test or a recommended amendment. Penn State Extension: Coffee Grounds and Eggshells—Garden Myths vs. Facts
Eggshells belong in the compost pile, not as a quick fix
Eggshells are an acceptable compost ingredient, but that does not establish that they quickly correct a calcium deficiency or reliably deter pests when sprinkled around plants. Use them as one component of compost rather than a targeted treatment.

How to start a simple home compost pile
You do not need a large yard, a purchased tumbler, or specialized equipment to begin. A simple pile or container can work; choose based on available space, how much kitchen material and browns you have, likely pest exposure, and whether you are willing to turn and monitor the pile. Cornell Cooperative Extension notes that a fancy tumbler is unnecessary. Cornell Cooperative Extension: Compost
- Choose a spot or container. Use a suitable outdoor area or a basic container that accommodates your scraps and browns. A purchased bin is optional.
- Mix greens with browns. Add kitchen scraps alongside about 2–3 parts browns for each part greens by volume, following USDA’s guidance.
- Add water as needed. Keep the material moist, not saturated. A waterlogged pile lacks the conditions needed for good decomposition.
- Provide air. Turn or mix the pile periodically to let air in. Iowa State Extension and USDA both recommend moisture management and aeration as part of home composting.
- Wait until the material is finished. Use compost when it is decomposed and resembles a stable soil amendment, rather than adding fresh scraps directly to garden beds.
A thermometer can help someone who wants to monitor a pile, but it is not a prerequisite for basic composting. For practical guidance on ingredients and pile care, see Iowa State Extension’s guide to compost ingredients and the University of Wisconsin–Madison Division of Extension’s compost guide.

What should stay out of a typical backyard compost pile?
Some materials can attract pests, create odor problems, or carry unwanted contaminants in a typical home setup. The EPA and Iowa State Extension advise keeping these out:
- Meat, fish, and bones
- Dairy products
- Fats and oils
- Pet waste
- Diseased plant material
- Herbicide-treated plant material
These exclusions are for a typical backyard pile; do not assume a household compost setup can safely process everything that is biodegradable. See the EPA’s home composting guidance for its list of appropriate materials and exclusions.

How to use finished compost in the garden
Finished compost is a soil amendment or surface mulch, not necessarily a stand-alone growing medium. UConn Extension advises mixing a modest amount into the top several inches of garden soil or applying it as surface mulch rather than growing plants directly in pure compost. UConn Extension: How to Get Started with Composting at Home
Composting also keeps useful organic material in circulation. A 2014 Texas A&M AgriLife Extension publication estimated that composting kitchen scraps and yard debris could divert 20 to 30 percent of trash then going into landfills; that is the publication’s estimate, not a current national measurement.
