For conventional oven and grill cooking, aluminum foil can line pans, wrap food, and hold ingredients in grill packets; follow the package and appliance instructions. In a microwave, do not use fully foil-wrapped food or a covered metal pan. For ordinary foil, either side can face the food.
Use foil in an oven for lining, wrapping, and cooking
Ordinary aluminum foil is useful for lining a pan or wrapping food in a conventional oven. The right method depends on the recipe, foil product, and oven, so check their instructions for placement and use. Do not position foil where it could block an oven vent or touch a heating element; consult the oven manual if you are unsure where it can go.
Foil and parchment paper can produce different baking results. Reynolds says foil can give cookies browner, crispier bottoms, while parchment can produce softer bottoms. Choose based on the texture you want, rather than treating one as a universal substitute for the other. Reynolds’ foil cooking guidance covers its product recommendations.
Use foil on the grill according to its product directions
Foil can hold small foods that might otherwise fall through the grates and can be folded into packets. Check both the foil package and grill manual before cooking. Reynolds recommends preheating the grill and using medium to medium-high heat for its Grill Foil; those instructions apply to that product, not every foil or grill. Reynolds lists an operating range of −40°F to 650°F for its Grill Foil only.

Do not microwave fully wrapped food or covered metal pans
Do not put fully foil-wrapped food or a covered metal pan in a microwave. The FDA generally advises against metal pans and foil because microwaves reflect off metal, which can cause uneven cooking and potentially damage the oven. The FDA’s microwave guidance explains this general caution.
USDA describes a narrow exception: small, smooth pieces of foil may be used to shield limited portions of food, such as poultry wing tips, but only if the microwave’s owner’s manual permits it and its instructions are followed. USDA’s precautions are to use new, smooth foil; cover no more than one-quarter of the food; keep foil at least one inch from the oven walls; and remove it immediately if sparking occurs. Some manuals may prohibit foil entirely, so do not assume this exception makes foil broadly microwave-safe. USDA’s microwave instructions emphasize checking the manual first.

Either side of ordinary foil can face the food
The shiny and dull appearances result from the manufacturing process: one side contacts polished rollers. For ordinary foil, USDA says, “It does not make any difference which side of the foil contacts the food.” USDA’s packaging guidance explains why the sides look different.
Check the package if you are using a specialty product. Reynolds notes that its non-stick foil may have directions about which side should face the food; follow those product-specific instructions rather than assuming ordinary foil guidance applies.

Small holes or blue marks usually do not mean food is unsafe
Foil can pit or discolor when it contacts salt, vinegar, or highly acidic or spicy foods. USDA says the resulting aluminum salt is harmless if consumed, and food remains safe to eat; you can trim residue or affected areas if you prefer for appearance.
