A rigid stainless-steel bench scraper—also called a bench knife or dough scraper—is a useful choice for dividing dough, lifting chopped ingredients, and clearing a work surface. The eight models below are compared by documented features, not ranked as winners: the available information does not establish hands-on performance, comfort, or durability. If you mainly need to scrape the inside of a bowl, choose a flexible bowl scraper instead; it is a different tool form.
Rigid bench scraper or flexible dough scraper?
A rigid bench scraper has a broad working face suited to cutting and portioning dough, moving chopped food, and clearing flour or crumbs from a counter. Flexible bowl or dough scrapers bend to follow a bowl’s curve. Epicurious treated these as distinct forms in its September 13, 2017 review; its recommendations and prices are historical, not current. These are feature comparisons, not a tested ranking. The maker’s stated features are identified separately from details reported by a secondary 2026 comparison. Dimensions may refer to the working face or the whole product; those measurements are not interchangeable.

How to choose for your kitchen
For dividing dough
Compare the working-face dimensions and whether the scraper has useful guides. Norpro gives a 6 × 4-inch size for model 577 and documents a measuring guide; model 583 has inch and centimeter markings. Tovolo specifies a ruler at the edge, and the secondary comparison reports quarter-inch marks on the OXO. A ruler or guide can help portion dough, but the listed dimensions alone do not establish how a scraper performs on a particular dough.

For gathering chopped ingredients
A broad face can help move chopped herbs or vegetables from board to bowl. Norpro describes ingredient transfer for both models, while Tovolo describes scraping and serving. Misen’s product page description also presents its wide stainless blade for scooping chopped ingredients, herbs, or portioned dough, but it is not included among the eight compared models here. Misen. Handle shape affects how low the tool can sit against the work surface, but the documented designs do not establish a comfort winner.
For grip and hand clearance
The listed designs include soft Santoprene, canted, walnut, wood, and textured polypropylene handles, as well as other handle forms. Treat these as construction differences, not proof that one is more comfortable. If possible, hold a scraper before buying and check whether your knuckles clear the counter as you gather food.

For cleanup
Use the maker’s care instructions for the exact model. Tovolo explicitly says dishwasher safe. The secondary comparison reports the same care for OXO and hand washing and sanitizing for Dexter-Russell; confirm those directions with the makers. Do not assume that a wood-handled or otherwise unlisted scraper is dishwasher safe.
