Organize a refrigerator around three priorities: keep it at or below 40°F (4°C), contain raw meat so juices cannot reach other foods, and leave space for cold air to circulate. There is no single required shelf for raw meat if the entire refrigerator stays at a safe temperature; containment and separation are the key safeguards.
Start by checking the refrigerator temperature
Set the refrigerator to maintain 40°F (4°C) or below, then verify the actual temperature with an appliance thermometer rather than relying only on the control dial. USDA guidance says the temperature should be 40°F or below throughout the unit. The USDA’s refrigeration guidance explains safe refrigerator storage, and the FDA’s food-storage guidance advises keeping cold air able to circulate.
Where should raw meat go?
Keep raw meat, poultry, and seafood in their original packaging if it is intact, or place them in a leak-resistant, covered container. Arrange them so that any drips cannot reach ready-to-eat food or produce. USDA answers that any location in the refrigerator is suitable for temperature if the whole unit is at or below 40°F; it does not prescribe one universal shelf for raw meat. A lower shelf can be a practical choice when it helps prevent leaks from reaching other food, but containment is essential wherever the package sits. Group food by use while protecting airflow
Use shelves, door bins, drawers, and any meat or cheese compartment to group foods you reach for together. These features help with access and storage conditions, but they do not replace temperature control or safe separation. Keep shelves from becoming so tightly packed that air cannot move around the food. Covered containers and sealed storage bags also help contain food and odors.

- Keep raw animal foods contained and apart from ready-to-eat foods.
- Keep produce that will be eaten raw separate from raw meat, poultry, and seafood.
- Put frequently used items where they are easy to see and reach, without blocking vents or cramming shelves.
- Use organizer bins only if they leave room for airflow and make spills easy to spot and clean.
Use crisper drawers for produce
Refrigerate perishable produce at 40°F or below, and refrigerate cut or packaged produce. Keep raw-eaten produce separate from raw meat, poultry, and seafood. The FDA’s produce-safety guidance covers safe selection, storage, and handling.
Crisper drawers can provide different humidity conditions: vegetables generally need higher humidity, while fruits need lower humidity. If a drawer has an adjustable control, use it to suit what is stored there. Some refrigerators also have a temperature-adjustable meat drawer designed to keep meat and cheese very cold without freezing; not every model has one.

Store leftovers so they cool safely
Refrigerate leftovers within two hours of cooking or removal from hot holding. If the surrounding temperature is above 90°F (32°C), refrigerate them within one hour. Divide large amounts into shallow containers so they cool more rapidly. A date label can help household members keep track, but it does not extend the recommended storage time. USDA provides more detail in its leftovers and food safety guidance.
Recommended refrigerator storage times differ by food. Use the item-specific FoodSafety.gov Cold Food Storage Chart rather than applying one duration to every leftover or ingredient. FoodSafety.gov also points to FoodKeeper, which offers storage tips for more than 650 foods and beverages.

Keep the refrigerator safe between cleanouts
- Check the temperature with an appliance thermometer and adjust the controls if the refrigerator is above 40°F.
- Clean spills promptly, especially leaks from raw animal foods.
- Keep food covered or sealed, and avoid packing shelves tightly.
- Follow food-specific cold-storage recommendations instead of relying on appearance or smell alone.
USDA says food held above 40°F for more than two hours should not be consumed. Its food-safety guidance describes 40°F to 140°F as the “Danger Zone,” where bacteria grow rapidly. If a refrigerator loses power or its temperature rises, use a thermometer and the applicable food-safety guidance to determine what can be kept.
