Refrigerate most tender produce, including berries, grapes, leafy greens, broccoli, carrots, and cut fruits and vegetables. Some fruit—such as avocados, pears, peaches, and kiwifruit—should ripen on the counter first, then go into the refrigerator. Bananas, potatoes, dry onions, garlic, and whole tomatoes generally stay at room temperature. The right choice depends on the produce, its ripeness, and when you plan to eat it.
Which fruits and vegetables belong in the refrigerator?
Use this as a practical guide to storage location, not a guarantee of a particular shelf life. Variety, maturity, refrigerator conditions, and planned storage time all affect how long produce keeps. UC Davis Postharvest Technology provides an item-by-item guide in Storing Fresh Fruits and Vegetables for Better Taste.
| Storage approach | Examples | How to apply it |
|---|---|---|
| Refrigerate | Apricots, Asian pears, blackberries, blueberries, cherries, figs, grapes, raspberries, strawberries, and cut fruit. Vegetables include artichokes, asparagus, green beans, lima beans, beets, Belgian endive, broccoli, Brussels sprouts, cabbage, carrots, cauliflower, celery, cut vegetables, green onions, herbs other than basil, leafy vegetables, leeks, lettuce, mushrooms, peas, radishes, spinach, sprouts, summer squash, and sweet corn. | Chill fragile produce and cut produce promptly. Apples can stay at room temperature for less than seven days; refrigerate them for longer storage. |
| Ripen on the counter, then refrigerate | Avocados, kiwifruit, nectarines, peaches, pears, plums, and plumcots. | Let firm fruit ripen at room temperature. Once ripe, refrigerate it if you will not use it promptly. |
| Generally keep at room temperature | Bananas, grapefruit, lemons, limes, mandarins, mangoes, muskmelons, oranges, papayas, persimmons, pineapple, plantain, pomegranates, watermelon, cucumbers, dry onions, eggplant, garlic, ginger, jicama, peppers, potatoes, pumpkins, sweet potatoes, tomatoes, and winter squash. Keep basil in water. | Store garlic, dry onions, potatoes, and sweet potatoes in a well-ventilated pantry area. Keep potatoes out of light. Cucumbers, eggplant, and peppers may be refrigerated for one to three days if they will be used soon after removal. |
Why do recommendations differ?
Some produce is sensitive to cold
Tropical and subtropical produce can be more vulnerable to very low temperatures, which may damage quality. That is one reason bananas, mangoes, papayas, and several other items are generally kept at room temperature. UC Davis Postharvest Technology describes chilling sensitivity as one of the two main reasons storage recommendations vary in Why are some fruits and vegetables best stored at room temperature?
Some fruit needs time to ripen
Avocados, peaches, pears, plums, and kiwifruit are often bought firm. Counter time allows them to ripen; chilling before they are ready may interfere with that process. Move them to the refrigerator once ripe if you need to hold them longer.

Ethylene can affect nearby produce
Many fruits release ethylene, a natural ripening gas. It can speed ripening and may cause some vegetables or sensitive fruit to deteriorate sooner or develop unwanted characteristics. USDA’s Storing Fresh Produce recommends keeping ethylene-producing fruit as far as practical from ethylene-sensitive produce. Refrigerator zones differ, so use the available space to separate them where possible.

A quick way to decide where produce goes
- Check whether it is cut. Refrigerate cut fruits and vegetables promptly.
- Check whether it needs to ripen. Give firm avocados, pears, peaches, plums, nectarines, and kiwifruit counter time, then chill once ripe if needed.
- Use the item’s category. Refrigerate berries, leafy vegetables, and many temperate crops; keep bananas, potatoes, dry onions, garlic, and whole tomatoes at room temperature.
- Consider how soon you will eat it. Apples are listed at room temperature for less than seven days and refrigerated for longer storage; some items, including cucumbers, eggplant, and peppers, tolerate only short optional chilling.
- Separate ethylene producers from sensitive produce where practical. This can help preserve quality.
