Using and maintaining a water-seal bell
For Butter Bell’s water-seal design, follow the manufacturer’s instructions rather than treating it as an ordinary covered dish. Butter Bell says to use cold water deep enough to cover the bell, change it every two to three days, use the butter before adding fresh butter, and clean and fully dry the crock between fills. The Emile Henry French Butter Pot is a related option if you prefer a covered ceramic pot. Its official US page lists a 7 oz capacity, oven-, microwave-, and dishwasher-safe care, and a 10-year guarantee. The page describes a covered pot; it does not establish that it uses the inverted water-seal bell mechanism, so it is best considered separately from traditional water-seal crocks.
