The 3 Best Bread Knives, Tested & Reviewed

Bon Appétit favors the Mac Superior, Food Network Kitchen the Victorinox Fibrox, and both identify the Mercer Millennia as a value pick. Compare their trade-offs and fit.

For a long, curved knife suited to large, crusty loaves, Bon Appétit names the Mac Superior Series 10.5-inch its overall pick. Food Network Kitchen instead recommends the Victorinox Fibrox 10¼-inch after its own test. If price matters most, both publications point to the Mercer Culinary Millennia M23210. Those are separate reviews, not a shared head-to-head ranking: Bon Appétit reports testing 36 knives, while Food Network Kitchen reports testing 10. The right choice depends on your usual bread, preferred handle feel and the exact model listing.

Which one fits your bread and budget?

Choose the Mac Superior for large, crusty loaves

Bon Appétit’s September 8, 2026 review selects the Mac Superior Series 10.5-inch as its overall winner. Its long, curved blade is the clearest match here for wide loaves that benefit from a longer stroke. The publication also highlights its rounded teeth for cutting tomatoes. The trade-offs in that review are cost and a handle finish the reviewer felt did not match the price.

Pay close attention to the model name when shopping: Bon Appétit says the Superior is sometimes mislabeled as the Mac Professional in marketplace listings. The Professional has a metal bolster; the Superior does not. Do not assume those names refer to the same knife.

Choose the Mercer Millennia for a lower-cost option

The Mercer Culinary Millennia M23210 is the most affordable choice among the three in the cited review snapshots. Both Bon Appétit and Food Network Kitchen recommend it as a value option. Bon Appétit says its test-kitchen staff frequently uses it and describes it as dependable across several kitchen tasks, while noting that particularly crusty loaves can take more effort to cut. Its plastic/rubber handle and non-full-tang construction may also matter if handle feel or construction is a priority.

Bon Appétit food director Chris Morocco summed up the knife this way: “It won’t split atoms, but it is dependable, and for this price, you will love it all the more.”

Choose the Victorinox Fibrox if you favor Food Network Kitchen’s overall pick

Food Network Kitchen’s review, updated February 3, 2026, names a Victorinox Swiss Army 10¼-inch Serrated Bread Knife with Fibrox Handle as its overall pick. Stevie Stewart tested 10 knives and assessed ease, comfort, consistency, and whether foods tore or crushed. That review also lists the Mercer Millennia as its value choice, Kai Wasabi 9-inch as another favorite and Shun Classic 9-inch as its splurge pick.

Model naming needs care here, too. Victorinox’s current US Fibrox Bread & Pastry Knife page specifies model 5.2933.26 with a 10.2-inch blade. Compare the model number and listed blade length rather than treating every Fibrox serrated knife as the same variant.

What makes a bread knife cut cleanly?

Serrations catch and work through a firm crust while the blade moves across the loaf. A clean cut also depends on not forcing the edge down into the soft crumb. Victorinox’s guide recommends long, controlled strokes with light pressure; it says the serrations grip the crust before cutting into the soft center. That approach is useful whether you choose one of these knives or another serrated model.

  • Crust: A knife that engages the crust without requiring heavy downward pressure is helpful for crusty sourdough and similarly firm loaves.
  • Soft interiors: If your bread is easily squashed or torn, use a gentle sawing motion and avoid pressing hard before the teeth have started to cut.
  • Reach: A longer blade can span a wide loaf with fewer strokes, but more length is not automatically more comfortable or controlled for every user.
  • Grip and control: Consider whether the handle feels secure and comfortable to you. The available review notes describe the Mercer handle material and Bon Appétit’s Mac handle-finish concern, but they do not establish one universally best grip.

Food Network Kitchen favored blades of at least 9 inches for the tasks in its own tests. Victorinox’s manufacturer guide recommends an everyday bread-knife blade around 21–26 cm as a balance of versatility and control. These are attributed recommendations, not a universal sizing rule.

Is a 9-inch bread knife long enough?

It can be: Food Network Kitchen’s own testing guidance says it favored blades at least 9 inches long, and its Shun Classic splurge pick is 9 inches. If you regularly cut broad or tall loaves, a longer blade may give you more reach; the Mac Superior in this comparison is 10.5 inches. For smaller loaves or cooks who prefer a shorter, easier-to-manage stroke, the length difference may be less important. Match blade reach to your usual loaf and comfort rather than choosing by length alone.

Other foods a serrated bread knife can handle

A serrated blade can also help with foods that have a firm outside and soft interior, including tomatoes, pastries, citrus and cakes. Food Network Kitchen’s test included tomatoes, cantaloupe and watermelon, and Bon Appétit discusses tomatoes and other kitchen uses for the Mercer. These are useful secondary jobs, not a reason to expect one bread knife to replace every other kitchen knife.

How to care for and sharpen a serrated bread knife

Use light pressure and clean it according to its model

Victorinox’s guidance is to use long strokes and light pressure while cutting. Care instructions can differ by product: Victorinox labels Fibrox Bread & Pastry Knife model 5.2933.26 dishwasher-safe and gives that product a lifetime warranty. Those claims apply to that specific model page, not automatically to every Victorinox knife or other brand. WÜSTHOF’s Classic Ikon product page instead advises hand washing and immediate towel drying.

Expect sharpening to need specialized attention

Victorinox says serrated edges require specialized sharpening because each serration must be sharpened individually, and it generally recommends professional sharpening. A serrated edge can dull; the manufacturer does not present it as maintenance-free. Bon Appétit reports adding a serrated-knife sharpening rod to its testing, but that does not establish that every home cook needs to buy one. If you use a home tool, make sure it is designed for serrated edges and suits the knife’s instructions.
