Choose a pellet smoker if you want automated fuel feeding and temperature management and have access to electricity. Choose a charcoal smoker if you prefer cooking over a charcoal fire and are comfortable managing fuel and airflow according to the cooker and cooking method. Both can produce smoke flavor. The practical difference is how each makes and manages heat—not a proven universal flavor winner.
How the two smokers make heat
Pellet smokers feed a controlled fire
A pellet smoker uses hardwood pellets as fuel. In Traeger’s system, an auger carries pellets from a hopper to a fire pot, an igniter starts combustion, and a fan circulates heat and smoke while a controller manages temperature. The auger, igniter, fan, and controller require electricity, so pellet ownership means planning for both power and pellets. Traeger explains how its pellet grills work.
Charcoal smokers depend on the fire and airflow
A charcoal smoker burns charcoal; the cooker’s design, airflow, and arrangement of fuel shape the heat. Depending on the cooker and technique, a cook may add wood chunks or chips for smoke. Kettle, drum, cabinet, and kamado-style cookers are not interchangeable, and their fire-management demands differ. Traeger’s smoker overview describes several charcoal smoker designs.
Flavor: what can—and cannot—be concluded
Both approaches can add smoke flavor, but the available manufacturer guidance does not establish that one tastes better in a controlled pellet-versus-charcoal comparison. On Traeger grills, its support guidance says longer smoke exposure adds flavor and that lower-temperature cooking naturally creates more smoke on grills without its Super Smoke feature. Those statements describe Traeger products; they are not a direct comparison with charcoal. Traeger Support’s Smoke Science guidance explains its claims.

For a charcoal cooker, the result also depends on the charcoal, any added smoke wood, the cooker, and the way the fire is managed. Treat flavor as a preference to explore with the exact fuel and cooking method you expect to use, rather than assuming a category-wide winner.

Traeger’s pellet-versus-charcoal comparison discusses setup and fire management from the perspective of a pellet-grill manufacturer. Use it as product guidance, not independent proof that every charcoal cooker demands constant attention or that a pellet smoker needs none.

Compare the exact models, not just the fuel
Features vary even within a category. For example, Weber lists SmokeBoost, a digital controller, app-based remote monitoring and control, two food-probe ports with two probes included, and a five-year limited warranty for its Smoque pellet smoker. Those are specifications for that model, not features every pellet smoker includes. See Weber’s Smoque product specifications.
- Capacity: Check cooking area and whether the layout suits the amount and shape of food you cook.
- Temperature range and controls: Compare the listed range and control method with your intended cooking.
- Probes and monitoring: Verify how many probes are included and whether remote monitoring or control is available if you want it.
- Cleaning: Check how the specific model handles ash, grease, and access to its fire components.
- Footprint and warranty: Make sure the cooker fits your space and review the warranty terms for that model.
Choose by the cooking experience you want
- Lean toward pellets if automated fuel feeding and temperature management matter most, and you can supply electricity where you cook.
- Lean toward charcoal if you want a charcoal-fire setup and are willing to manage it in ways that depend on the cooker and technique.
- Compare both styles in person if flavor is your deciding factor; the cited sources do not provide a controlled taste test that settles the question.
Before buying, check the model’s capacity, temperature range, controls, included probes, cleaning method, footprint, and warranty. Also confirm that its fuel is easy for you to source and, for a pellet smoker, that you have suitable power access.
