What’s Coming to Southern Utah: New Businesses and Construction Projects

A location-by-location guide to 30 projects reported across southern Utah on October 3, 2026, distinguishing open businesses from construction and plans.

The Southern Utah Tribune’s October 3, 2026 roundup counts 30 projects across eight communities, from businesses already open to commercial buildings under construction and plans still awaiting approval. Here’s what the roundup reported, organized by location and labeled by status so a forecast is not mistaken for a completed project.

St. George: Commercial construction, new locations and civic projects

Commercial sites and food businesses

  • Under construction — Mojave Crossing: Retail and professional-office buildings are rising off Exit 2 along Pioneer Road.
  • Expected to start near year-end — Sun River Commons office and retail building: A building with ground-floor retail and two office floors is planned near year-end in front of the retail building that houses Cafe Rio.
  • In the works — Konala: The restaurant has signed for space in the new Sun River Commons retail building off Exit 2, in front of Terrible’s.
  • In the works — Accordia Bank: A new branch is planned next to the Hampton Inn off Exit 2, with construction reportedly targeted to start in spring.
  • Nearly complete — Panda Express: The Desert Color location is in front of Crush It Golf and was expected to open soon.
  • Under construction — The Break Sports Grill: The Desert Color restaurant is being built in front of Crush It Golf; the roundup reported a planned spring 2027 opening.
  • Under construction — Dutch Bros.: A location is being built on Desert Color Parkway, across from Mo’ Bettahs.
  • In the works — Taco Bell: A Desert Color location west of Dutch Bros. was expected to begin construction soon. The St. George development map also lists a Taco Bell Desert Color application; an application listing is not proof that construction has begun or that the restaurant has opened.
  • Planned — Sanchez Mexican Food: A location is planned for 1726 W. Sunset Blvd., with an opening expected by year-end.
  • Under construction — 7 Brew Coffee: The company’s second Washington County location is being built on Sunset Boulevard next to the new Mountain America Credit Union.
  • In the works — America First Credit Union retail and medical project: A project is planned next to Revere Health on Mall Drive, with dirt work expected soon.
  • Construction begun — Hyatt House: Work is reported to have started just west of the Best Western off Exit 13, in Washington.

Openings and completed build-outs

  • Reported open — Medusa’s Piercing Studio: The studio is at its new location next to Chubby’s, 176 N. Bluff St.
  • Planned replacement — Little Luxe Children’s Studio: The studio is slated to replace Medusa’s at 158 N. Main St.; the roundup reported an October 7 opening.
  • Grand opening reported for October 22 — The Plastics Clinic & Spa: The clinic is at 640 E. 700 South, Suite 302.
  • Reported open — White Elegance St. George: The storefront is at Red Rock Commons, 15 S. River Road, between Nothing Bundt Cakes and Cafe Rio. The roundup says its owners previously sold dresses from home for 2½ years as Red Cliffs White Dresses.
  • Build-out nearing completion — D1 Training: The gym was planning an October 24 grand opening at 1552 E. Gateway Drive.
  • Opening date reported as October 17 — Brooker’s Ice Cream: The address is 2654 E. Red Cliffs Drive, behind Texas Roadhouse.
  • Reopened under new ownership — The Hype: The fitness studio has made improvements and is at 1025 E. Tabernacle St.
  • Opening date reported as October 15 — Pickle Pad: The location is 245 Red Cliffs Drive in the Promenade at Red Cliffs.

Hospital and medical work

  • Planned — Intermountain Health St. George Regional Hospital: The roundup reports plans for a surgical tower and 34 additional beds.
  • Dirt work reported — Callahan Medical Center: Work is underway at the future building on 700 South, next to Irmita’s.

Santa Clara and Ivins: A renovation plan and new storefronts

  • Planning stage — Ivins Fire Station: A complete renovation is planned, with work expected to begin next spring.
  • Reported open — Eclectic Corner Holistic Gifts: The shop is at Chapel Street and Santa Clara Drive.
  • Grand opening reported October 2–3 — Davis Market: The company bought Digby’s Market and renamed it. The store is at 1955 Snow Canyon Parkway; the roundup describes it as Davis Market’s second Washington County location.

Hurricane: Bagel shop planned

Planned — Looped Bagels was aiming to open around mid-month at 1141 W. State St.

Leeds: Grocery and mixed-use development planned

Planned — Bee’s Marketplace Development: Signs point to a full-service grocery store at Main Street and 900 North, with Block & Tackle, fresh produce, a delicatessen and other grocery offerings. The development is also described as including Basic American Supply, Ten45 Wine Garden, a coffee shop, gas station, dog park, pharmacy and restaurant. These are reported plans, not evidence that every business is open or that every component is complete.

Toquerville: Boulder Ridge and a new headquarters

  • Underway — Boulder Ridge: The 100-acre project west of Exit 27 is underway. Maverik was expected to break ground in the next few months. Van America and Adventure Overland Gear plan a 25,000-square-foot headquarters and retail store; the project was going through the city’s final approval process, with construction expected to begin by year-end. Hospitality, retail and light industrial uses are also described as possibilities, not confirmed tenants or completed approvals.
  • Recently completed and moving in — IME Automation: The automation and robotics company completed a new 20,000-square-foot headquarters and is moving in.

Virgin: Cafe reported open

Reported open — Virgin Goods Cafe is at 2 E. State Route 9.

How to read the project statuses

The roundup covers several stages of development. “Open” or “reopened” describes a reported operating business; “under construction” or “construction begun” refers to work reported underway; and “planned,” “in the works,” or “expected” signals a proposal, target or forecast. Opening and construction dates in the roundup are forecasts as of its October 3, 2026 publication, not guarantees of current status.

For selected St. George projects, the city development map provides dated application entries, including Pioneer Office Building, Ace Hardware at Atkinville Interchange, Les Schwab Tire Center and Taco Bell Desert Color. Such entries corroborate that an application appears in the record; they do not establish construction completion or a business opening.

Washington County notices also list a construction RFP for flood-mitigation infrastructure at Legacy Park in Hurricane and a draft environmental assessment for the Central Reuse System. Those are separate public-infrastructure items, not part of the Tribune’s 30 named business projects.
