Harvest tomatoes when their color and firmness match the stage you want: fully ripe fruit for immediate use, or fruit that has started to color if weather or convenience makes indoor ripening preferable. Pick gently, and store tomatoes according to their ripeness—there is no single temperature that suits every stage.
1. Check color and firmness before picking
For ordinary harvest, Illinois Extension recommends tomatoes that are firm and fully colored. Because ripe color varies among varieties, compare the fruit with the expected mature color for the cultivar rather than assuming every tomato should turn red. A tomato can also be harvested earlier if you plan to ripen it indoors.

Oregon State University Extension describes a mature-green tomato as one whose cavity is filled with gel. That stage matters if you need to bring fruit in before a freeze or want to ripen it off the vine. 2. Pick more often during hot weather
When air temperatures reach 90°F or higher, Illinois Extension says tomatoes soften faster while color development slows. Once fruit begins to color, check plants every day or two and pick what is ready or at risk of becoming too soft. The extension recommends finishing ripening indoors at 70 to 75°F in these hot-weather conditions. Illinois Extension: Tomato | Home Vegetable Gardening; Illinois Extension: Tomato.

3. Bring fruit in ahead of cold—but distinguish the cues
Two different cold-weather recommendations apply to different situations. If a killing freeze is forecast, Illinois Extension advises harvesting the mature-green tomatoes you want to save the day before the freeze. Separately, OSU quick tips advise bringing indoors tomatoes that have begun to color when outdoor temperatures fall below 50°F. The below-50°F cue is not the same as a forecast killing freeze. 4. Twist or snip the stem to protect the plant
Twist the tomato gently off the vine, or use clean clippers or scissors to cut its stem. Either approach can avoid pulling or damaging the plant. Choose the method that lets you release the fruit without tugging on nearby stems; no special branded tool is required. OSU Extension: Tomato growing tips.

That simple handling reduces pressure and bruising as you carry the harvest inside. OSU Extension: Grow your own tomatoes and tomatillos.
6. Match indoor temperature to the tomato’s stage
Extension recommendations vary with ripeness and circumstance; use the range intended for the fruit you picked rather than treating one temperature as universal.

For everyday ripe tomatoes, OSU Food Hero recommends room-temperature storage in a single layer, in an open container, away from direct sunlight, and use within five days. Refrigeration can delay softening, but it may reduce flavor; it is not accurate to say that refrigeration always ruins tomatoes. For cut tomatoes, Food Hero recommends covering and refrigerating them and using them within two days. OSU Food Hero: Tomatoes.

Which harvest choice makes sense?
| Choice | Useful when | Trade-off |
|---|---|---|
| Pick fully ripe on the vine | You can harvest promptly and the weather is not putting fruit at risk. | It is convenient for immediate use, but ripe fruit left on the plant can soften, especially in high heat. |
| Pick once color begins and ripen indoors | Hot weather, approaching cold, or your schedule makes outdoor ripening less dependable. | You need to monitor indoor temperature and ripeness; the recommended range depends on the fruit’s stage and conditions. |
| Twist fruit off | The tomato releases easily with a gentle twist. | Pulling too hard can disturb or damage the plant. |
| Snip the stem | The stem is firm or the fruit is awkward to release by twisting. | You need scissors or clippers, and should cut without nicking nearby growth. |
| Keep whole ripe tomatoes at room temperature | You expect to use them within a few days and want to avoid extended chilling. | They continue to soften; Food Hero advises use within five days. |
| Refrigerate | You need to slow softening, or are storing cut tomato. | Refrigeration may reduce flavor; Food Hero recommends using cut tomatoes within two days. |
