Put the heaviest pieces low, fill gaps with smaller produce, and keep anything treated with craft materials or used as a candle holder out of food service.
Six fall produce choices for Thanksgiving decor
1. Pumpkins
Use one pumpkin as the centerpiece’s anchor, or combine several mini pumpkins with larger produce. Choose pumpkins with a couple of inches of stem and no blemishes; bruising or rot can shorten their display life. The University of Illinois Extension’s selection guidance covers pumpkins used as fall decorations.
2. Decorative gourds
Gourds add varied shapes, colors, and texture. Keep ornamental gourds clearly separate from food intended for a meal: they are primarily decorative, and some common ornamental types are not edible, according to UGA Cooperative Extension.
3. Hard-rind winter squash
Acorn or butternut squash gives a display a substantial, grounded shape. If you want to use it later at the table, leave it untreated and keep it in suitable condition. Illinois Extension identifies hard-rind squash such as acorn and butternut as options for displays and later table use.

4. Corn
Dried or ornamental corn makes a harvest-style accent. Baby corn and larger cobs can also be arranged among heavier items in a cornucopia. For corn you plan to eat, remove and discard the husks before washing.
5. Apples
Apples bring compact shapes and color to a bowl or cornucopia. Scatter them around larger squash or use them to fill openings between heavier pieces. The Chicago Botanic Garden’s cornucopia guide includes green apples among its ingredient ideas.

6. Pears
Pears work alongside apples in a fruit bowl or harvest arrangement. Illinois Extension includes pears in its regional fall produce list; availability depends on where you live and what is fresh locally.
How to arrange a produce centerpiece
Build a cornucopia

Set a horn-shaped basket on a stable surface. Floral foam and picks are optional supplies in the Chicago Botanic Garden’s full method; a bowl or platter can hold a simpler arrangement.

The Chicago Botanic Garden recommends dry foam for fruit and vegetables and notes that the ingredients can vary. You do not need identical produce to make the arrangement work.
Use a bowl or platter
For a quicker centerpiece, arrange the produce in a shallow bowl or on a platter. Put the largest pieces in first and use small gourds, apples, or pears to fill the remaining spaces. A low fruit-and-nut bowl or a flat harvest arrangement can also draw on historical Thanksgiving decor ideas described in a 1931 pamphlet on Thanksgiving preparations; treat that as historical inspiration, not current food-safety advice.

Keep decoration separate from food

Do not assume a decorative gourd is edible. If you cannot confirm that a gourd is intended for eating, keep it out of food service.

Keep produce that has touched glue, glitter, or other craft materials away from food. A carved pumpkin used as a candle holder is decor-only; the University of Nevada, Reno Extension’s pumpkin project uses a battery-operated tea light.

Wash hands before and after handling produce. Wash fruits and vegetables under cool running water before preparing or eating them. Scrub apples and squash with a clean produce brush; do not use soap, detergent, or bleach. These steps follow the University of Minnesota Extension’s produce-washing guidance, reviewed in 2026.
Choose what is fresh nearby
Fall produce lists reflect regional seasons, not a guarantee that every item will be available everywhere. Illinois Extension’s list is specific to Illinois. Check local market listings and substitute produce that is fresh in your area.
