Food safety: Keep Warm is not a cooking setting
USDA Food Safety and Inspection Service guidance says food remains safe while a slow cooker is operating. For hot holding after cooking, FSIS says food should remain at 140 °F or above and recommends checking with a food thermometer. Its guidance also says Keep Warm is for holding food after it has reached safe internal temperatures, not for cooking it.
Automatic shutoff is not a food-safety guarantee. If a cooker stops operating, safety depends on how long the food has been outside safe temperature conditions; the presence of a shutoff feature does not make food safe indefinitely. Follow USDA guidance and the appliance manual, and use a thermometer to verify food temperature.
