A box grater can do far more than shred cheese: it can break up hardened brown sugar, grate aromatics, turn a tomato into pulp, and prepare ingredients for baking, salads, soups, and sauces. The techniques below are ideas Melissa Breyer collected in Treehugger on April 5, 2024; treat them as practical suggestions, not independently tested recipes.
How to choose the right side of the grater
Match the grater surface to the ingredient: medium holes suit cauliflower and chocolate, small holes are useful for citrus zest, and large holes work for nuts and tomato pulp. The slicing side can make chocolate curls. A four-sided box grater puts several of these options in one hand-operated tool.

Use a stable cutting board or bowl to catch ingredients, keep fingertips clear of the grating surface, and stop before the food becomes too small to hold safely. Wash and dry the grater promptly, especially after sticky or aromatic ingredients.
For baking and pastry
1. Make bread crumbs
Toast bread, then grate it into crumbs. For a seasoned version from stale bread, toss the crumbs with olive oil, salt, and garlic and toast them in a pan over low heat until golden, stirring so they brown evenly.
2. Break up hardened brown sugar
Grate hard lumps of brown sugar to loosen them into smaller pieces that are easier to measure and mix into a recipe.

3. Grate cold butter for pastry
Freeze butter, then grate it so the small pieces stay cold and can be worked into pastry more quickly. Follow the recipe’s temperature and mixing instructions; grating is a preparation shortcut, not a substitute for the recipe’s method.
4. Soften cold butter more quickly
When a recipe calls for softened butter, grate cold butter to expose more surface area and help it warm sooner. Use it only where the recipe allows grated butter to be incorporated.

6. Make chocolate garnish or curls
Run chocolate across the medium holes for small garnish pieces. For curls, use the slicing side instead.
7. Grate fresh ginger
Grate fresh ginger for sauces, marinades, or other recipes that call for it. Breyer suggests freezing ginger first and grating it while frozen, which can make it easier to handle.
8. Make homemade pasta by an alternative method
Breyer notes that a box grater can be part of a pasta-making method as an alternative to rolling dough out. Her article does not give a complete recipe or enough procedural detail to reproduce that method on its own, so use a recipe that specifies the technique before trying it.

Use the medium holes to grate cauliflower into small pieces for dishes such as risotto-style preparations, mashed potatoes, or soup. Cook it according to the recipe rather than treating it as a direct one-to-one replacement for rice.
10. Grate garlic, onion, or shallot
Grate garlic for a quick minced or paste-like texture. The same approach can be used for onion or shallot when a recipe calls for finely prepared aromatics.
11. Grate potatoes for mash or gnocchi
A grater can be used as an alternative tool for potato preparation, including potatoes intended for a mash or gnocchi puree. The source does not provide a complete potato or gnocchi recipe, so follow the recipe’s cooking and moisture instructions.

12. Add grated root vegetables to dishes
Grate carrots and other root vegetables to add texture to raw salads, incorporate vegetables into other dishes, or thicken soups and sauces as they cook.
13. Turn a tomato into pulp
Halve a tomato and rub the cut side over the large holes above a bowl. The pulp falls through while the skin remains in your hand. Use the pulp for a quick sauce, bruschetta, or cooked tomato sauce. Breyer suggests saving the skins for stock or soup, or drying them for tomato salt.

14. Zest citrus
Use the small holes to grate the colored outer peel of lemon, orange, lime, or grapefruit. Avoid grating deeply into the white pith, which can taste bitter.

Use the large holes to add nut flavor without as much of the conventional chopped-nut texture. Check the recipe’s texture needs before substituting grated nuts for chopped ones.
18. Make a smoky charcoal salt—only with care
Breyer attributes this suggestion to Adam Perry Lang: “Grating a tiny amount of charcoal into your finishing salt gives you that extra smoky burnt-wood accent.” This is a reported culinary tip, not safety guidance. The article specifies non-chemically-treated hardwood charcoal but does not establish how to verify a food-safe product or provide preparation precautions. Do not use briquettes, lighter-fluid-treated charcoal, or material not explicitly sold as suitable for culinary use; when in doubt, skip this idea.
Source and scope
The 18 suggestions and the charcoal quotation are from Melissa Breyer’s Treehugger article, published April 5, 2024: “18 Great Uses for the Glorious Box Grater.” They are idea prompts rather than a controlled comparison with a food processor or a set of independently validated recipes.
